Quick, cheap, tasty and nutritious! Mom used to serve this all the time to our busy family. I replace the 2 lightly beaten eggs with Egg beaters or egg whites and substitute crushed popcorn, or GF cracker/breadcrumbs so that I can continue to enjoy this dish.

14 3/4 ounces canned tuna, drained and flaked
1/2 cup breadcrumbs
1/2 cup egg substitute
1/2 cup diced green bell pepper
1/2 cup onion, finely chopped
1/4 cup milk
1/2 teaspoon Worcestershire sauce
salt and pepper
1 dash Tabasco sauce (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, stir together tuna, breadcrumbs, egg, bell pepper, and onion. Then add milk, Worcestershire sauce and Tobasco, and salt and pepper, mixing with your hands.
  • Pack ingredients into a large, greased loaf pan.
  • Bake about 45-50 minutes, until top is golden brown and center is thoroughly cooked. Allow to cool about 10 minutes before slicing and serving. Enjoy!

2 (5 ounce) cans solid white tuna packed in water, drained
1 (10.75 ounce) can condensed cream of chicken soup
½ (10.75 ounce) can milk
1 (4 ounce) packet saltine crackers, crushed
3 slices white bread, crumbled into fine crumbs
½ onion, finely chopped
1 large egg
ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a large loaf pan.
  • Mix tuna, cream of chicken soup, milk, cracker crumbs, bread crumbs, onion, egg, and black pepper until thoroughly combined and spoon the mixture into the prepared bread pan. Smooth top.
  • Bake in the preheated oven until a toothpick inserted into the loaf comes out clean, 25 to 30 minutes.

2 eggs, lightly beaten
3 tablespoons mayonnaise
1 teaspoon prepared horseradish
1 teaspoon dried parsley
½ teaspoon paprika
¼ teaspoon cayenne pepper
¼ teaspoon ground black pepper
1 (5 ounce) can tuna packed in water
1 cup soft bread crumbs
½ cup chopped onion

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a glass loaf pan with cooking spray.
  • Beat eggs, mayonnaise, horseradish, parsley, paprika, cayenne pepper, and black pepper together in a large bowl until smooth. Add tuna in water, bread crumbs, and onion; mix until evenly moistened. Pack tuna mixture into prepared loaf pan.
  • Bake in preheated oven until hot and fully cooked in the center, about 30 minutes.

A great quick lunch to throw together when you have unexpected company. I usually add some of the salsa in the tuna mix and then top with salsa & some cheese for the last few minutes of baking.

425 g canned tuna in water, drained
4 spring onions, trimmed and sliced
1 cup soft breadcrumbs
300 g canned creamed corn
1 teaspoon chili powder
1/4 cup parsley, chopped
3 eggs
300 g salsa
grated cheese (optional)

Steps:

  • Mix all ingredients except salsa together until well combined.
  • Line the bottom of a 20 x 10xm loaf pan with baking paper and pack the mixture inches.
  • Cover with foil and bake at 180 c for 30 minutes.
  • Remove foil and continue to cook for a further 15 mins or until set.
  • Remove from oven and let stand for 10 mins to firm before turning onto a serving dish.
  • Serve with tomato salsa.

An easy recipe, perfect for both dinners and everyday meals! Present the slices over a bed of lettuce on a platter, decorating it as you wish with tomatoes, olives, artichokes hearts, and so on. The loaf can be served with a mix of olive oil and lemon, or with mayonnaise.

8 slices bread
2 cups milk
1 teaspoon anchovy paste, or more to taste
2 eggs, beaten
18 ounces Italian, oil-packed tuna
1 bunch parsley, chopped
1 tablespoon capers
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Arrange bread in a large baking dish. Pour milk over bread; allow to soak until bread is soggy. Remove bread and squeeze excess moisture from the bread. Discard milk.
  • Whisk anchovy paste with eggs in a bowl until dissolved.
  • Crumble tuna and moistened bread together in a large bowl. Add the egg mixture, parsley, capers, and Parmesan cheese; knead together until evenly blended and reasonably firm. Wrap the mixture in a clean cotton dishtowel and roll it up tightly, securing the two ends with string or elastic bands.
  • Bring a large pot of lightly salted water to a boil. Cook the bundled tuna loaf in boiling water for 40 minutes; drain. Chill in refrigerator until cold before unwrapping and slicing to serve.

This recipe is from Favorite Recipes of Assemblies of God Woman Meats. Found in Alvera Wise's (my mother-in law) kitchen. I really like this recipe and so easy. I have doubled this and poured it into a standard loaf pan, so I can slice it for sandwiches etc.

2 (6 1/2 ounce) cans chunk tuna, water packed
2 eggs
1 small onion, chopped
1 large celery, stalk, chopped
1 1/2 cups crackers, coarsely crushed saltine
1/4 teaspoon celery seed
1 tablespoon parsley, chopped
2/3 cup water or 2/3 cup milk
1/8 teaspoon pepper

Steps:

  • Break apart tuna with a fork in a mixing bowl; add remaining ingredients.
  • Mix well; pour into well greased 1-quart casserole.
  • Cover.
  • Bake in 350 degree oven for 40 minutes.
  • Uncover; bake for about 20 minutes more or until golden.
  • Serve with lemon, mushroom sauce,or a tarter sauce.
