1 pound lean ground beef
2 cups salsa
1 (16 ounce) can chili beans, drained
3 cups tortilla chips, crushed
2 cups sour cream
1 (2 ounce) can sliced black olives, drained
½ cup chopped green onion
½ cup chopped fresh tomato
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.
  • Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.
  • Bake in preheated oven for 30 minutes, or until hot and bubbly.

1 lb. ground beef (I use 80% lean)
1 small yellow onion (diced)
1 oz. taco seasoning (equivalent to 2 Tablespoons)
16 oz. refried beans
¾ cup sour cream (*see notes)
2 cups shredded cheddar cheese
¼ cup black olives (sliced)
¾ cup crunchy toppings such as tortilla chips (Doritos, and/or Fritos)
Green onions ((optional))
1/3 cup lettuce (shredded)
1/3 cup tomatoes (diced)

Steps:

  • Let the sour cream come to room temperature while you prepare the meat. This will prevent it from curdling when baked as it won't be going from cold to hot right away.
  • Preheat oven to 350 degrees.
  • Add the ground beef and diced onions to a large pan and cook and crumble over medium heat until the meat is cooked through.
  • Drain excess grease.
  • Add ¾ cup water and taco seasoning.
  • Bring to a boil.
  • Reduce the heat and simmer for 5 minutes, stirring occasionally. Remove from heat.
  • Spread the refried beans in an even layer within a casserole dish. (Mine was 9 x 13" but varying sizes are fine.)
  • Spread the sour cream over the refried beans.
  • Top with cooked ground beef mixture, then with cheese.
  • If you're preparing this head of time, let it cool and cover and refrigerate until ready to bake.

2 tablespoons olive oil
2 cups diced fresh tomatoes (about 3 to 5)
1 onion, diced
3 cloves garlic, minced
4 teaspoons chili powder
2 teaspoons paprika
2 teaspoons ground cumin
1 large boneless, skinless chicken breast (about 12 ounces), cut into bite-size pieces
Kosher salt
1 15-ounce can pinto beans, drained and rinsed
1 15-ounce can kidney beans, drained and rinsed
1 16-ounce jar salsa verde
10 large (burrito-size) flour tortillas or 12 small flour or corn tortillas
2 cups cooked rice (from 2/3 cup dry)
1 11-ounce can corn kernels, drained
1 pound grated cheddar-jack cheese
1 1/2 cups red enchilada sauce
Sour cream and cilantro, for serving

Steps:

  • In a large skillet over medium-high heat, heat 1 tablespoon of the olive oil. Add the tomatoes, onion and garlic, stir and cook for a minute or two to soften the onion. Add 2 teaspoons of the chili powder, 1 teaspoon of the paprika and 1 teaspoon of the cumin. Stir and cook the mixture for another minute or two to release the flavors of the spices. Remove the mixture to a bowl and set aside.
  • In the same skillet, heat the remaining 1 tablespoon olive oil. Add the chicken along with the remaining 2 teaspoons chili powder, 1 teaspoon paprika, 1 teaspoon cumin and 1/2 teaspoon salt. Saute the chicken until it's deep golden brown and done in the middle, about 4 to 5 minutes. Add 1 cup water and stir to make a sauce. Bring the sauce to a boil and cook until it's reduced by half, about 3 to 4 minutes. Stir in the beans and set aside.
  • To assemble the casserole, pour half a jar (about 1 cup) of salsa verde into the bottom of a 9-by-13-inch casserole dish or disposable foil baking pan. Add a layer of half the tortillas on top of the salsa verde, overlapping the edges. Spoon the rice over the tortillas, spread the tomato mixture over the rice, then sprinkle the corn over the tomatoes. Next, add the chicken and bean mixture, then sprinkle on half the cheese and pour over half the enchilada sauce. Next, add the rest of the tortillas, then pour on the rest of the salsa verde and the rest of the enchilada sauce and sprinkle on the rest of the cheese.
  • If you're baking the casserole right away, preheat the oven to 375 degrees F and bake, covered with foil, for 20 minutes. Then remove the foil and continue baking for 15 to 20 minutes, or until hot and bubbly. Serve with sour cream and cilantro.

This recipe my sister and me came up with since we love casseroles and were eager to try something new. Instead of pasta or rice it uses Mexican taco crisps. It has a great texture (soft at the bottom and crisp at the top) and is so delicious.

125 g taco chips (make sure to use Mexican cornflour crisps, also called tortilla crisps)
400 ml hot tomato sauce (or any other tomato sauce you like)
1 (300 g) can sweet corn
1 (250 g) can red kidney beans (chili-flavoured ones go great with it)
160 g carrots
1 onion
40 g green chilies
150 g grated cheese

Steps:

  • Chop the onion into small cubes, slice the carrots and the green chillies into thin pieces. Mix with sweet corn and beans.
  • Place one layer of crisps in a casserole dish, cover it with half the vegetables and add half of the sauce.
  • Cover with another layer of crisps. Then add the rest of the veggies and the sauce.
  • Cover with a last layer of crisps and sprinkle with the cheese.
  • Bake in the preheated oven at 180°C for 30-40 minutes (the cheese should be golden-brown).

Steps:

500 grams lean beef mince
1 medium onion, diced finely
4 large potatoes, thinly sliced
1 cup corn kernels
1 packet of taco seasoning
2 cups of grated mozzarella cheese
300g jar of salsa
Salt and pepper
Jalepenos
Guacamole
Sour cream
Shallots

Steps:

  • Preheat oven to 200 degrees celsius.
  • Thinly slice your potatoes and add to a large pot of salted boiling water for around 10 minutes to soften.
  • Add a tablespoon of oil to a large heated frying pan. Fry onion until soft, before adding the mince.
  • Once the mince is browned, stir in corn, then add taco seasoning and allow to simmer for 10 to 15 minutes (follow instructions on the taco seasoning jar).
  • Stir through salsa until well combined.
  • Layer softened potato slices along the bottom of a large casserole or baking dish and season with salt and pepper.
  • Add a layer of mozzarella cheese over the potatoes. Add the taco and salsa mince mixture on top.
  • Add a layer of mozzarella cheese on top.
  • Cover baking dish with aluminium foil and bake in the oven for around 35 minutes. Then remove foil, sprinkle with chopped shallots and bake for a further 15-20 minutes, or until cheese is browned.
  • Serve with guacamole and sour cream, or with a side salad. Enjoy!

Steps:

  • Preheat oven to 350º Fahrenheit. Grease an 8" x 8" baking dish or similar size casserole with butter or coconut oil.
  • Preheat a large skillet over medium high heat. Add the ground beef and break up into small pieces. Cook, stirring frequently, until meat has browned. Drain if necessary. Remove from heat.
  • Sprinkle the taco seasoning over the browned meat and stir in.
  • Very lightly saute the cauliflower in a non-stick pan. This will help release any water so it doesn't make the sauce watery. Spread two cups of the riced cauliflower in the bottom of the baking dish.
  • Sprinkle half of the spiced meat over the riced cauliflower.
  • Top the meat with 1 ounce (about 1/4 cup packed) of the cheddar cheese.
  • Layer the last two cups of cauliflower over the cheddar cheese.
  • Spread the rest of the spiced meat over the cauliflower. Set aside.
  • Pour the cream into a 1 1/2 quart heavy saucepan. Add 4 ounces (about 1 cup packed) of the grated cheese (this leaves one ounce (about 1/4 cup packed) for later). Put saucepan over medium-low heat.
  • Heat cream and cheese, stirring frequently, until cheese has melted. Stir in the salsa. Bring mixture to a simmer and simmer gently until mixture has thickened enough to coat a spoon.
  • Taste sauce and add sea salt and black pepper if desired. Pour sauce over the contents of the baking dish.
  • Top with the remaining ounce of cheese. Bake in the preheated oven for 30-35 minutes, or until cheese has melted and contents are bubbly in the center.
  • Sprinkle green onion on top to garnish.

Steps:

  • Brown ground beef with minced garlic, salt, and pepper.
  • Cook over medium heat until beef is browned.
  • Add canned tomatoes and remaining spices.
  • Cover and simmer on low heat for about 10 minutes.
  • Pour out into 9x13 baking pan.
  • Place medium-sized saucepan on the stove with the water, almond milk, and butter. Bring to a slow simmer.
  • Whisk the almond flour into the simmering almond-water mixture.
  • Whisk in half of the grated cheddar cheese. Taste and adjust seasoning with a bit of salt and pepper.
