Ingredients

2 large sweet potatoes
2 teaspoons oil
2 tablespoons taco seasoning

Steps:

Wash, peel and cut up potatoes into fries or cubes.
Toss with oil then with taco seasonings.
Add to slightly greased pan and bake in 425°F oven 10 minutes, turn, 10 more minutes.
These will likely come out better (and not need to be turned) if you place a cooling rack on/in the cookie sheet and then place the fries on the rack. The air gets right around the fries. (Tip learned from Rachael Ray).

Wholesome, spiced and seasoned Mexican chicken with sweet roasted vegetables and McCain's Crispy Sweet Potato Fries.

Ingredients

4 bell peppers, deseeded and cut into large chunks
2 red onions, peeled and cut into wedges
6 garlic cloves, unpeeled
4 tablespoons balsamic vinegar
2 chicken legs
2 tablespoons mexican fajita seasoning mix
1 packet sweet potato, fries
1 lime, cut into wedges
1 drizzle olive oil
1 handful coriander

Steps:

For the McCain Crispy Sweet Potato Fries, preheat the oven to 220°C/430°F/Gas Mark 7. For fan assisted ovens preheat to 210°C/410°F.
For the chicken, preheat the oven to 210°C.
Place the peppers, red onion and garlic cloves into a large roasting tray and drizzle with olive oil and balsamic vinegar.
Rub the chicken legs on both sides with a little olive oil and then the Mexican fajita seasoning. Sit the seasoned chicken on top and drizzle with some olive oil. Place into the oven for 30 mins or until the chicken legs are cooked through. Remove from the oven and rest.
10 minutes before the chicken legs have finished cooking, put the McCain Crispy Sweet Potato Fries on a baking tray in the oven and bake as per packet instructions.
Once ready, serve the fries with the roasted vegetables and the chicken legs.
Finish off with a squeeze of lime and some coriander leaves.

1 medium sweet potato
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped
1 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

Preheat oven to 425ºF/220ºC.
Slice the ends off of the sweet potato and then slice it in half. Take one half and slice it horizontally 4 times then slice vertically 4 times to cut into fries.
In a large bowl mix fries and ingredients until evenly spread.
Place fries on a prepared baking sheet and bake for 25 minutes or until fluffy inside and crunchy on the outside.
