GREEK ROASTED TILAPIA FILLETS (LOW FAT)

Greek Roasted Tilapia Fillets (Low Fat) image

Tilapia has a really great, extremely subtle flavor and it doesn't dry out as easily as many other varieties of fish. This tilapia is topped with a mixture of tomatoes, feta and fresh parsley and then baked. You'll get a large portion for few calories. Just be sure to season the fillets directly with salt. That will really make a difference. From The Most Decadent Diet Ever cookbook by Devin Alexander, author of The Biggest Loser Cookbook.

LOW-FAT JALAPENO GARLIC TILAPIA

Low-Fat Jalapeno Garlic Tilapia image

I have posted the origional Recipe for Johnny Carino's Jalapeno Garlic Tilapia, which we love. But, if you look at the fat content, it's pretty frightful. I came up with a lower fat, healthier version so I can have my fish and eat it too.

Time 20m

Yield 1-2 serving(s)

Number Of Ingredients 17

2 (4 ounce) tilapia fillets
1/2 cup white flour
1 tablespoon olive oil
1 teaspoon garlic, chopped
1/4 cup jalapeno, diced
1 cup spinach, chopped & de-stemmed
1 pinch salt
1 pinch pepper
1 pinch garlic salt
2 ounces half-and-half
2 ounces milk
5 ounces angel hair pasta
1 teaspoon fresh parsley
1/8 cup roma tomato, diced
1/2 tablespoon butter
1/2 teaspoon lemon juice
1 teaspoon white wine

Steps:

  • Cream all of the ingredients for the Lemon Butter together.
  • Dredge the tilapia filets in the flour, and add them with the olive oil and garlic to a medium temperature sauté pan.
  • Once the tilapia has finished cooking on one side, flip them over and add the jalapenos, spinach, salt, pepper, and garlic salt.
  • Prepare the angel hair in boiling water, and allow it to cook for 3 to 4 minutes depending on the temperature of the water.
  • As the filets begin to flake, add the heavy cream, and bring it to a slight boil.
  • Once the cream begins to boil, remove the pan from the fire and reduce the lemon butter into the sauce.
  • Place the pasta in a bowl, and pour the fish with the sauce over the pasta.
  • Garnish with fresh roma tomatoes and parsley.

EASY TILAPIA TACOS

Easy Tilapia Tacos image

Really easy fish tacos! My boyfriend, who is a bodybuilder, made these for me and I loved them.

Provided by CSparks

Categories     Main Dish Recipes     Taco Recipes

Time 25m

Yield 4

Number Of Ingredients 11

1 tablespoon olive oil
4 (4 ounce) skinless tilapia fillets
garlic powder, or to taste
ground black pepper to taste
½ avocado
⅓ cup low-fat sour cream
garlic powder, or to taste
salt to taste
4 flour tortillas
½ cup mango salsa
8 leaves iceberg lettuce

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add tilapia fillets and sprinkle with garlic powder and pepper. Cook for 5 minutes, turn, and continue cooking until fish flakes easily with a fork, about 5 more minutes. Break fillets apart with a spatula, remove from the heat, and allow to cool. Wipe skillet clean with a paper towel.
  • While fish is cooling, mash avocado in a small bowl for guacamole. Mix in sour cream and season with garlic powder and salt.
  • Place 1 tortilla in the cleaned skillet and cook over low heat until warm, about 1 minute. Remove tortilla and set on a plate with the uncooked side facing up. Cover one half of the tortilla with 2 lettuce leaves and salsa. Spread guacamole on the other half, then add 1/4 of the fish. Fold halves together. Repeat to make the remaining tacos.
