These low-fat homemade turkey sausage patties are simple to prepare and can be refrigerated or frozen. Be sure to buy ground turkey with some fat in it, ideally 93 percent lean, because some fat is needed to achieve that rich sausage essence. Besides, even with that much fat, the meat qualifies as lean.

1 teaspoon whole fennel seed
1 teaspoon dried rubbed sage
3/4 teaspoon salt
3/4 teaspoon ground black pepper
1/2 teaspoon dried thyme
1/4 teaspoon garlic powder
1/8 teaspoon ground allspice
1 lb 93% lean ground turkey
1 tablespoon olive oil, divided use

Steps:

  • Whisk together the fennel seed, sage, salt, pepper, thyme, garlic powder and allspice in a small bowl.
  • Place the turkey in a medium bowl, then sprinkle the seasoning blend over it.
  • Use your clean hands or 2 forks to gently work the seasoning into the meat, being careful not to overmix.
  • It's OK if they are not absolutely evenly distributed throughout.
  • Form the mixture into 8 (3 inch) patties. May be refrigerated to meld flavors or frozen for future use.
  • Heat half the oil in a medium skillet over medium high heat. Once the oil shimmers, add half the patties; cook until nicely browned on the outside and cooked through, about 3 minutes per side.
  • Transfer to a plate; repeat with the remaining oil and patties.

1/2 cup fresh cilantro, tightly packed
1/2 cup fresh Italian parsley, tightly packed
1/2 cup romaine lettuce, tightly packed
1 bay leaf
1 1/2 tablespoons crushed fresh oregano (or 2 tsp. dried)
1/2 teaspoon salt
1/8 teaspoon fresh ground pepper
1/8 teaspoon ground cumin
1/8 teaspoon ground cloves
1/8 teaspoon fennel seed
1 lb lean ground turkey

Steps:

  • Place all ingredients, except turkey, in a food processor.
  • Process until smooth.
  • Scrape the mix into a medium size bowl.
  • Add the turkey and combine well with your hands until everything is evenly distributed.
  • Cover and refrigerate for at least 4 hours to blend flavors.
  • Heat a nonstick skillet over moderate heat.
  • Form the sausage into 3" patties.
  • Fry the patties for 3-6 minutes, turning once, until lightly browned.

2 teaspoons toasted fennel seed, ground
1 1/2 teaspoons kosher salt
1 teaspoon dried oregano
1 teaspoon onion powder
1 teaspoon smoked paprika
1 cup crumbled store-bought cornbread
1/2 cup milk, at room temperature
1 pound sweet Italian sausage, casings removed
1/2 cup grated Pecorino cheese
2 teaspoons Calabrian chili paste
2 (2-pound) boneless, skin-on turkey breast halves, butterflied
Six 1-inch thick slices ciabatta bread
6 tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to 425 degrees F. Mix together the fennel seed, salt, oregano, onion powder and smoked paprika in a small bowl. Set aside.
  • Mix together the cornbread and milk in a medium bowl. Allow the mixture to soak for 10 minutes. Stir in the sausage, Pecorino and chili paste. Use your hands to mix well.
  • Lay the turkey breasts skin-sides down on a cutting board so that they are open like a book. Pat half the stuffing onto each skinless side, leaving a 1/2-inch border, then close each half so the skin sides are up. Tie each turkey breast tightly with 4 pieces of butcher's twine about 1 1/2 to 2 inches apart. Rub the seasoning mix all over the turkey.
  • Lay the bread on a rimmed baking sheet and drizzle with 2 tablespoons of the olive oil. Place the turkey breasts skin-sides up on the bread and drizzle the remaining 4 tablespoons olive oil over the tops. Roast 30 minutes, then reduce the heat to 375 degrees F and continue to roast until the skin is brown and crisp and an instant-read thermometer reads 160 degrees F, about 40 minutes more. Allow the turkey to rest for 10 minutes before slicing and serving.

2 3/4 pounds skinless, boneless turkey thighs, cubed
1 pound pork fatback, cubed
1/2 cup chopped fresh sage
2 cloves garlic, minced
1/4 cup chopped fresh chives
1 tablespoon freshly ground pepper
Small pinch of nutmeg
Finely grated zest of 1 orange
Kosher salt
1/2 cup cold whole milk
1/2 cup white wine, chilled
One 8-foot hog casing, soaked in water 30 minutes and then flushed with water
Crusty buns, for serving
Spicy brown mustard, for serving
Grilled red onions, for serving

Steps:

  • Combine the turkey, pork fatback, sage, garlic, chives, pepper, nutmeg, orange zest and 2 tablespoons salt in a large bowl. Transfer to a large plastic zip-top bag and refrigerate overnight.
  • At least 30 minutes before grinding the meat, place all of your tools (including the meat grinder parts, stand mixer bowl, stand mixer paddle attachment and sausage stuffer parts) in the freezer to chill.
  • Using your meat grinder, grind the marinated meat mixture through the small die plate into the chilled bowl of the stand mixer. Refrigerate at least 30 minutes, then return the mixture to the mixer. Add the milk and wine and beat on medium speed using the chilled paddle attachment until combined. Refrigerate until ready to use.
  • Stuff the sausages (see Cook's Note) and, for best results, refrigerate overnight.
  • Before cooking, pierce each sausage several times with a pin. Grill over medium heat until the center registers 160 degrees F, 10 to 12 minutes. (You can also pan-fry or broil the sausages.) Serve in split toasted buns with spicy brown mustard and grilled red onions.

1 pound cherry tomatoes, quartered

2 handfuls fresh flat-leaf parsley, leaves picked and chopped

Steps:

  • Heat a large high-sided saute pan over medium-high heat. Add the olive oil to heat. Once hot, add the sausages and brown on all sides, for about 8 minutes total. Remove the sausages from the pan to plate and reserve.
  • Add the garlic, and saute until golden and brown. With a wooden spoon, stir in the chopped tomatoes and red peppers and season with salt and pepper. Lower the flame, and cover the pan with a lid, simmer for 10 minutes, until the tomatoes have broken down and thickened to a sauce-like consistency.
  • Add the browned sausages (and any juice left on the plate), beans, and bay leaves to the thickened tomatoes. Stir well and simmer for another 10 minutes.
  • Add the chopped parsley before serving.

Steps:

  • Prepare the smoker. In a large mixing bowl, add the turkey. In a small mixing bowl, combine the remaining ingredients together. Mix well. Toss the turkey with the seasoning blend and mix well. Cover and refrigerate for 24 hours. Grind the meat twice in a meat grinder fitted with a 1/2-inch die. A food processor could also be used to grind the meat. Stuff half of the mixture into 1 1/2-inch casings, forming 6-inch links. Form the remaining into 3 (1/2 pound) patties. You can either use the sausage fresh or smoke the sausage. For the smoked sausage: Place the sausage in the smoker and cook for 10 to 15 minutes.

Steps:

Steps:

  • Boil water for pasta with 1 tbsp.
  • kosher salt.
  • Trim woody ends off asparagus spears (leaving about 3/4) and chop remaining into 2-inch pieces.
  • Seed bell pepper and cut into small strips.
  • Take sausage meat out of casing and fry in olive oil in wok or other large fry pan.
  • Break sausage into small pieces, and add crushed red pepper flakes (to suit desired spiciness, using less for hot turkey sausage.) Begin to boil the pasta (6-8 minutes for al dente).
  • While this is cooking, add asparagus, mushrooms, and red pepper strips to same pan with sausage.
  • Stir fry over medium-high heat for about five minutes until vegetables are crisp-tender.
  • Turn off heat, and drain pasta.
  • Toss drained pasta with vegetable-turkey mixture, adding a small amount of extra virgin olive oil if desired.
  • Add salt& pepper to taste.
  • Allow to cool for 5-10 minutes.
  • (Dish is served warm, not piping hot. May also be served room temperature or cold on hot days.) After cooling slightly, toss lightly with feta and chopped parsley.
  • Serve with lemon wedges, crusty bread and white wine for easy summer entertaining.

Leave out the crushed red pepper flakes for milder sausage.

1/2 teaspoon ground coriander
1/2 teaspoon fennel seed
1/4 teaspoon salt
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1/4 teaspoon paprika
1/4 teaspoon fresh ground black pepper
1 dash of grated nutmeg
1/4 teaspoon ground red pepper, a dash if you like it less spicy (cayenne)
parsley sprig (to garnish)

Steps:

  • Combine ground turkey, egg whites, bread crumbs, sage, coriander, fennel seeds, salt, marjoram, thyme, paprika, black pepper, nutmeg and hot pepper in a medium size bowl.
  • Form into 4 patties.
  • Wet hands before making them, they are easier to form.
  • Cook in a lightly oiled, medium size nonstick skillet 3 to 4 minutes, until lightly browned.
  • Turn and brown remaining sides until patties are cooked through.
  • Serve garnished with parsley.

Juicy turkey sausage? Impossible! But it's true - I've worked out a way to add moisture and keep turkey sausage nice and juicy. Try it and see. Just don't use the extra lean ground turkey - it's much too lean. Note: times do not include letting the sausage set overnight.

1 1/4 lbs ground turkey
3 slices whole wheat bread, crusts removed
1/2 onion, cut in large chunks
1 teaspoon sage
1 teaspoon thyme
1/4 teaspoon marjoram
1/4 teaspoon celery seed
1/2-1 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/4-1/2 cup chicken broth
optional 1 tsp. salt
olive oil

Steps:

  • Crumble ground turkey into a large mixing bowl.
  • Tear bread into large pieces and place in food processor. Add onions and all seasonings. Pulse until everything is in uniform crumbs. Add chicken broth and pulse until combined. The amount of broth will depend on the dryness of your bread - it should have the consistency of oatmeal. (And yes, it looks pretty disgusting).
  • Add bread mixture to the turkey in the bowl and combine thoroughly (I use my hands for this). Cover and refrigerate overnight to let flavors blend.
  • Heat olive oil in skillet. Shape sausage into 16 patties and fry until cooked through.

1 pound lean ground turkey
2 tablespoons water
5 teaspoons butter-flavored sprinkles
1/2 teaspoon each dried thyme, basil and rubbed sage
1/4 teaspoon each dried marjoram, oregano, cayenne pepper and ground cumin
1/8 teaspoon each garlic powder, pepper, ground ginger and nutmeg

Steps:

  • Crumble turkey into a bowl. Add the remaining ingredients; mix well. Cover and refrigerate overnight. Shape into eight patties. In a nonstick skillet coated with cooking spray, cook patties over medium heat until no longer pink and a thermometer reads 160°.
