4 eggs
1 medium sized tomatoes, washed and diced
1/4 onion, finely chopped
1 -2 serrano pepper, chopped
1 tablespoon butter
1 tablespoon oil
salt

Steps:

  • Melt the butter with the oil in a deep skillet, add the onion and the peppers and sauté until the onion is translucent.
  • Add the tomato and the eggs, stirring constantly to prevent sticking until the eggs are done.
  • Season to taste with salt.

2-3 roma tomatoes, finely chopped
8 eggs, well beaten
1 Tbsp oil

Steps:

  • Finely chop the pepper, onion, and tomato. Beat the eggs to your liking.
  • Preheat oil in frying pan or skillet. Fry up the onion, pepper, and tomato until pepper and onion are soft.
  • Mix in the eggs. Let cook until the eggs are completely cooked. Serve and enjoy.
