Yummy flavors light up these boneless, skinless chicken breasts. Prosciutto, garlic, onion, red bell pepper, spinach and feta go inside the chicken, and a delicious crust goes on the outside. Air fryers do a terrific job with meat, and you don't have to heat up your big oven. Enjoy these stuffed chicken breasts with a simple green salad and a nice, crusty bread, or slice in 1/2-inch slices and use as a hearty appetizer!

2 tablespoons extra-virgin olive oil
½ cup diced red onion
½ cup diced red bell pepper
½ cup diced fresh mushrooms
1 teaspoon minced garlic
½ cup chopped fresh spinach
½ teaspoon dried Italian seasoning
1 pinch salt and ground black pepper to taste
½ cup crumbled feta cheese
4 boneless, skinless chicken breasts
4 slices prosciutto
12 toothpicks
¾ cup grated Parmesan cheese
¾ cup fine dry bread crumbs
1 teaspoon dried parsley
1 egg, beaten
1 serving avocado oil cooking spray

Steps:

  • Heat olive oil in a small skillet over medium heat until hot. Add onion; cook and stir until softened, about 3 minutes. Add red bell pepper and mushrooms, and cook, stirring occasionally, for an additional 3 minutes. Remove skillet from heat and stir in chopped spinach and garlic. Continue stirring until the spinach is slightly wilted. Season with Italian seasoning, salt, and pepper and allow to cool for 10 minutes.
  • Stir in feta cheese crumbles, breaking up any large pieces.
  • Pat chicken pieces dry and place on a secure cutting board. Cut a 'pocket' into each breast by inserting a knife in the thickest part of the breast and slicing parallel to the cutting board, leaving about 1 inch at each tip. Be careful not cut all the way through the thinnest edge of the breast.
  • Preheat the air fryer to 370 degrees F (190 degrees C) if preheating is recommended by the manufacturer.
  • Separate prosciutto slices and place on a clean prep surface. Place 2 tablespoons of vegetable-feta mixture on top and roll around the filling, creating an oblong bundle. Tuck 1 prosciutto-wrapped bundle into each sliced chicken breast, and close the opening with toothpicks.
  • Combine Parmesan cheese, breadcrumbs, parsley, salt, and pepper on a plate. Dip each stuffed chicken breast into beaten egg, then dredge in breadcrumb mixture. Spray with avocado oil spray.
  • Transfer to the air fryer basket and cook until browned, about 15 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Since mine is a small one, I wanted to get as much filling as I could in each stuffed chicken breast. 4 boneless skinless chicken breast halves (6 ounces each)
1 small onion, halved and thinly sliced
1/2 medium green pepper, thinly sliced
1 tablespoon olive oil
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon garlic powder
4 ounces cheddar cheese, cut into 4 slices
Optional: Salsa, sour cream, minced fresh cilantro, jalapeno slices and guacamole

Steps:

  • Preheat air fryer to 375°. Cut a pocket horizontally in the thickest part of each chicken breast. Fill with onion and green pepper. In a small bowl, combine olive oil and seasonings; rub over chicken., In batches, place chicken on greased tray in air-fryer basket. Cook 6 minutes. Top chicken with cheese slices; secure with toothpicks. Cook until a thermometer inserted in chicken reads at least 165°, 6-8 minutes longer. Discard toothpicks. If desired, serve with toppings of your choice.

2 (6 ounce) chicken breasts
2 teaspoons olive oil
2 teaspoons Italian seasoning
1 teaspoon garlic salt
2 ounces fresh mozzarella cheese
¼ cup sliced pepperoni
2 tablespoons minced onion
2 tablespoons pizza sauce

Steps:

  • Preheat the air fryer to 380 degrees F (190 degrees C).
  • Cut a shallow slice lengthwise down each chicken breast. Fold chicken breasts in half and cut 2 more shallow slices horizontally. The pocket will resemble an upside down "T".
  • Rub each chicken breast with 1 teaspoon oil and season with Italian seasoning and garlic salt.
  • Stuff each chicken breast with 1/2 of the fresh mozzarella, pepperoni, onion, and pizza sauce. Transfer to the air fryer basket.
  • Air fry until chicken is no longer pink in the center and the juices run clear, about 18 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Crispy on the outside, tender and cheesy on the inside, these stuffed chicken rolls are made with flattened chicken breasts, a spicy, cheesy, corn filling that gives this impressive chicken dinner a Mexican flare! No need to fry in oil, just air fry it, and you have a guilt-free chicken roll.

4 large chicken breasts ((cut 3/4 way through horizontally, then pounded flat into large pieces))
16 slices mozzarella cheese
1 cup corn ((drained))
1 (8-oz pkg) cream cheese
1 tablespoon minced garlic
1 (4-oz can) green chilis
1 cup Mexican cheese blend ((shredded))
1/4 cup cilantro ((chopped))
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup all purpose flour
2 eggs ((well beaten))
2 cups breadcrumbs ((Recommend Panko breadcrumbs))

Steps:

  • Preheat the air fryer to 375° for 5 minutes.
  • Lay out a piece of flattened chicken and lay out 2-4 mozzarella cheese slices over the chicken.
  • In a large mixing bowl, add the cream cheese, corn, garlic, green chilis, and Mexican cheese. Beat with a hand mixer until well combined. Spread a couple of spoons of the cream cheese mixture over the sliced cheese.
  • Starting on one end, roll up the chicken as tight as you can without squishing out the filling.
  • Use toothpicks to close the chicken.
  • In a large shallow dish, combine the salt, pepper and flour.
  • In a separate dish, add the beaten eggs
  • In a third dish, add the breadcrumbs.
  • Roll one chicken roll in the flour mixture, then roll in the eggs, and lastly in the bread crumbs.
  • Place the breaded rolls in the air fryer, making sure the rolls are not packed too closely together. You may need to do a second batch.
  • Spray the rolls with nonstick cooking spray, then place the air fryer basket back into the air fryer and set at 375° for 10 minutes.
  • Flip the rolls over and spray with the nonstick cooking spray. Return to the air fryer and cook for another 15 - 20 minutes.
  • Use a meat thermometer to check for doneness. Temperature should reach 165° when chicken is probed in the middle of the roll.
  • Remove and serve immediately with your favorite side dish.
  • Remember to remove the toothpicks before serving.
