GRILLED MEXICAN STREET CORN SALAD



Grilled Mexican Street Corn Salad image

Neutral oil, for the grill grates
6 ears corn, shucked
4 scallions
2 jalapenos
1 red bell pepper
1/3 cup sour cream
1/4 cup mayonnaise
1 teaspoon chipotle chile powder
Zest and juice from 1 lime
1 clove garlic, grated on a rasp grater
One 15-ounce can black beans, drained and rinsed
1 cup grated Pecorino-Romano cheese
Kosher salt and freshly cracked black pepper
Hot sauce, as needed, optional
1/4 cup chopped fresh cilantro
8 slices crispy bacon, cooked using the Mauro Method and crumbled (see Cook's Note)

Steps:

  • Preheat a grill to high heat. Oil the grates well.
  • Put the corn, scallions, jalapenos and bell pepper directly on the grates. Grill, turning, until charred on all sides, 2 to 3 minutes for the scallions, 5 to 8 minutes for the peppers and 8 to 10 minutes for the corn; set aside to cool.
  • In a medium bowl, add the sour cream, mayo, chipotle chili powder, lime zest and juice and garlic and mix to combine.
  • Slice the corn kernels from the cobs. Remove the ribs and seeds from the red pepper and cut into small dice. Chop the scallions and dice the jalapenos (seeds and ribs removed to taste). Put the corn, red pepper, jalapenos, scallions and beans in the bowl with the dressing and mix to combine while the veggies are still slightly warm. Sprinkle the Pecorino-Romano over the salad. Season with salt and pepper and add a dash of hot sauce if desired. Top with the cilantro and crispy bacon and serve immediately slightly warm, or refrigerate until ready to serve.

6 tablespoons unsalted butter
¼ cup crumbled Cotija cheese
¼ cup chopped fresh cilantro
2 teaspoons chili powder
2 limes, juiced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place corn, in husks, directly on the oven rack.
  • Roast in the preheated oven until tender and cooked through, 40 to 45 minutes.
  • Peel down husks and rub each ear of corn with 1 tablespoon butter. Sprinkle each with Cotija cheese, cilantro, chili powder, and lime juice. Serve.

1 cup cooked red kidney beans, drained
1/2 cup creamed corn
1/4 cup red bell peppers or 1/4 cup orange bell pepper, chopped
2 tablespoons fresh coriander, chopped
1 teaspoon dried oregano
1 teaspoon cumin powder
1/2 cup cornmeal
1/2 cup white flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon asafoetida powder
about 1/4 cup to 1/3 cup cold water
oil, to fry fritters

Steps:

  • Into a large mixing bowl, place red kidney beans, creamed corn, pepper, oregano and cumin powder.
  • Sift over the mixing bowl the cornmeal, white flour, baking powder, salt and asafetida powder.
  • Mix to combine then slowly add water to make a thick batter.
  • Cook spoonfuls of batter in oil heated in a fry pan. Flip when bubbled to cook underside.
  • Serve hot with sour cream or tomato salsa.

Steps:

  • Grill, roast or broil corn to your liking.
  • Spread cooked corn with a thin layer of mayonnaise or sour cream, then roll in cheese to coat.
  • Sprinkle with cayenne.
  • Squeeze lime juice from wedges to taste. Enjoy!

  • Heat a grill pan over medium high heat and spray with olive oil. Grill the corn, turning occasionally, until cooked and charred in some places, 8-10 minutes. Remove from grill and cool. Cut the kernels from the cobs (you should have about 2 ½ cups). Reserve.
  • Whisk the cornmeal, flour, baking powder, chili powder, garlic powder, and salt together in a large bowl. Whisk the egg and milk together in a small bowl. Pour the wet ingredients into the dry ingredients and stir to combine. Stir in the chives, 2 cups of corn, 2 teaspoons lime juice and ¾ cup queso fresco. Mix the remaining ½ cup corn, ¼ cup queso fresco, 1 teaspoon lime juice, and a pinch of salt together in a small bowl to use as the topping.
  • Heat a cast iron or nonstick skillet over medium heat and spray or brush with about 1 teaspoon of olive oil. Place 8 spoonfuls of the batter into the pan, about 1 tablespoon each, flattening them slightly. Cook 3-4 minutes until golden brown, then flip and cook another 2-3 minutes. Remove from the skillet. Working in batches, heat the remaining oil and cook the remaining fritters (you should have about 32 fritters in total).
  • To make the cilantro lime yogurt, stir the yogurt, lime juice and cilantro together in a small bowl.

  • In a large mixing bowl, combine the corn, cilantro, lime juice and zest, egg, mayo, chili powder, cotija cheese. Stir just until combined.
  • Heat 1 tbsp of Avocado oil in a large skillet over medium heat. Once hot, add ¼ cup of the corn mixture to the skillet, then flatten the top slightly to form a round circle that is about ½ inch thick.
  • Allow the corn fritter to cook for about 2 minutes, or until the underside is golden brown, then flip and cook for an additional 2 minutes on the other side.
