TEX-MEX SKILLET CHICKEN AND RICE



Tex-Mex Skillet Chicken and Rice image

3/4 cup salsa verde
1/2 cup sour cream
2 tablespoons extra-virgin olive oil
1 12-ounce bag small broccoli florets (about 4 cups)
1 large red bell pepper, diced
3 scallions, sliced (white and green parts separated)
3 cloves garlic, minced
Kosher salt and freshly ground pepper
1 teaspoon ground cumin
2 cups shredded rotisserie chicken, skin removed
3 cups frozen cooked brown rice, heated as directed
1 1/4 cups shredded Mexican cheese blend

Steps:

  • Preheat the broiler. Whisk the salsa, sour cream and 3/4 cup water in a bowl.
  • Heat the olive oil in a large ovenproof nonstick skillet over medium-high heat. Add the broccoli, bell pepper, scallion whites and garlic; season with salt and pepper. Cook, stirring, until softened, about 6 minutes. Add the cumin and stir until toasted, 30 seconds.
  • Stir in the chicken, rice, salsa mixture and 1 teaspoon salt. Bring to a boil, then reduce the heat to medium and simmer until heated through and saucy, 1 to 3 minutes. Fold in half of the cheese; top with the rest. Broil until the cheese melts, 2 to 4 minutes. Top with the scallion greens.

1 small red onion, diced
1 tablespoon extra virgin olive oil
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1 teaspoon dried oregano
1 red bell pepper, cored and diced
1 (4 ounce) can diced green chilies, drained (or 1 jalapeno, diced)
1 cup corn kernels, fresh or frozen and defrosted
1 (15 ounce) can black beans, drained and rinsed
12 ounces salsa or enchilada sauce
1 and 1/2 cups cooked brown rice
1/2 cup shredded Monterey Jack cheese*
1/4 cup shredded cheddar cheese*
serving suggestions: fresh cilantro, diced green onions, avocado

Steps:

  • Start by warming the oil in a large skillet (mine is 3 quarts) over medium heat. Add the onion and cook for 3 minutes, then add the spices (cumin to oregano) and stir together. Continue to cook for another 2-3 minutes. Next add the red pepper and the green chilies and stir together. Cook for another 2-3 minutes then add the drained and rinsed beans, corn, salsa, and rice. Stir everything until well-combined. Turn the oven to broil then top the mixture in the skillet with the shredded cheese. Place the skillet in the oven and cook for about 3-4 minutes until the cheese is golden and bubbly on top. Serve warm with diced green onions, cilantro, and/or avocado.

2 tablespoons canola oil
3 cloves garlic, minced
1/2 to 1 whole large onion, chopped
4 cups long grain rice
Two 14.5-ounce cans whole tomatoes
One 10-ounce can diced tomatoes and green chiles, such as Rotel
1 teaspoon cumin (or more to taste)
1 teaspoon kosher salt
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon turmeric
6 to 8 cups low-sodium chicken broth (more if needed)
1 1/2 cups grated Cheddar
Fresh cilantro, chopped, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the oil in a large dutch oven and add the garlic and onions. Cook, 3 to 4 minutes. Reduce the heat to low and add the rice. Stir constantly, making sure the rice doesn't burn. Cook over low heat, about 3 minutes.
  • Next, add the whole tomatoes, diced tomatoes, cumin, salt, pepper, cayenne and turmeric. Stir to combine and let cook, about 2 minutes. Finally, add the chicken broth and stir the mixture together. Bring the mixture to a boil, and then reduce heat to low. Cover, and simmer until the rice is not quite done, 10 to 15 minutes.
  • Top with the cheese, and then bake with the lid off until the cheese is melted and the rice fully cooked, about 15 minutes. Serve with chopped cilantro.

1 large egg, beaten
1 pound chicken tenderloins, chopped
1 small onion, chopped
1 tablespoon olive oil
2 garlic cloves, minced
2 cups cooked jasmine or long grain rice
1 can (15 ounces) black beans, rinsed and drained
1 can (11 ounces) Mexicorn, drained
1 jar (7 ounces) roasted sweet red peppers, drained and sliced
1 jar (8 ounces) taco sauce
2 green onions, chopped
1/4 cup minced fresh cilantro

Steps:

  • In a large skillet coated with cooking spray, cook and stir egg over medium-high heat until set. Remove and set aside., In the same skillet, stir-fry chicken and onion in oil until chicken is no longer pink. Add garlic; cook 1 minute longer. Stir in the rice, beans, Mexicorn, peppers, taco sauce and green onions; heat through. Stir in reserved egg. Sprinkle rice with cilantro.

This is SO easy and yummy! And best of all only uses 1 pan. I came up with this recipe when we were low on groceries and low on money. Just using stuff on hand in the cupboard and fridge I came up with something everyone loves. My husband likes to put this inside a tortilla and roll it up with sour cream.

1 lb lean ground beef (hamburger)
2 1/2 cups tomato juice
1/2 cup onion, chopped
2 tablespoons chili powder (more or less to your taste)
salt & pepper
2 cups shredded cheddar cheese
2 cups Minute Rice

Steps:

  • Brown ground beef in large skillet on MD/HI & drain fat.
  • Add onion & cook for a couple of minutes.
  • Sprinkle with salt & pepper (if desired).
  • Stir in chili powder & mix well.
  • Stir in tomato juice & bring just to boil.
  • Once boiling add rice & reduce heat to MD.
  • Cover & cook 10-15 minutes, until rice is tender, stirring a couple times.
  • Stir in 1 1/2 c of the cheese and remove from heat.
  • Sprinkle with remaining cheese and cover 1 min to melt.

1/2 lb cooked chorizo sausage or 1/2 lb smoked sausage, halved lengthwise, cut into 1/2 inch pieces
1 (7 5/8 ounce) box Spanish rice
2 1/2 cups water
1/2 cup chunky salsa
4 eggs
pepper (optional)
10 1/2 ounces flour tortillas (6 inch, heated) (optional)

Steps:

  • In a 10 inch non-stick skillet, heat sausage over medium heat, stirring occasionally, until sausage begins to brown. Stir in rice, contents of seasoning packet, water and salsa. Heat to boiling. Reduce heat to low; cover and cook 20 minutes.
  • Break 1 egg onto each quarter of rice mixture (the egg will sink into the rice). Cover; cook 7-9 minutes or until eggs are set and rice is tender. Sprinkle with pepper. Serve with warm tortillas.
