RICE-AH-RONI
Here's my version of what's often called 'the San Francisco treat,' although the next time I see this served here will be the first time. I used real chicken broth and a variety of seasonings.

Steps:
- Mix together salt, pepper, coriander, mustard powder, celery salt, paprika, turmeric, and cayenne pepper in a small bowl.
- Melt butter in a large skillet over medium-high heat. Add diced onion and pasta. Cook and stir until onions soften and pasta turns golden brown, 4 to 6 minutes. Stir in spice blend; cook and stir about 30 seconds. Add rice and stir until rice is coated with butter, about 1 minute.
- Pour in chicken broth. Bring to a simmer. Stir; reduce heat to low. Cover with a tight-fitting lid; cook for 17 minutes. Remove from heat; let covered skillet sit for 5 minutes. Remove lid and stir in parsley, fluffing rice and breaking up any clumps.

MEXICAN RICE A RONI SKILLET
Steps:
- Preheat oven to 400 degrees F. In large skillet, cook Rice-A-Roni according to directions on package. At the same time in another skillet, brown ground beef and add taco seasoning according to direction on package.
- Combine Rice-A-Roni and taco meat along with corn, chilies and diced tomatoes. Top with shredded cheese.
- Bake for 10 minutes or until cheese is melted. Top with sour cream and additional toppings.

MEXICAN RICE WITH CHICKEN

- In a large skillet, cook and stir rice and pasta mix in butter until lightly browned, about 5 minutes. Add the water, tomatoes and contents of rice seasoning packet. Bring to a boil. Reduce heat; cover and cook for 10 minutes. , Add chicken and jalapeno. Cover and cook until rice is tender and liquid is absorbed, 8-10 minutes.

CHEESY MEXICAN RICE SKILLET
This is SO easy and yummy! And best of all only uses 1 pan. I came up with this recipe when we were low on groceries and low on money. Just using stuff on hand in the cupboard and fridge I came up with something everyone loves. My husband likes to put this inside a tortilla and roll it up with sour cream.

Steps:
- Brown ground beef in large skillet on MD/HI & drain fat.
- Add onion & cook for a couple of minutes.
- Sprinkle with salt & pepper (if desired).
- Stir in chili powder & mix well.
- Stir in tomato juice & bring just to boil.
- Once boiling add rice & reduce heat to MD.
- Cover & cook 10-15 minutes, until rice is tender, stirring a couple times.
- Stir in 1 1/2 c of the cheese and remove from heat.
- Sprinkle with remaining cheese and cover 1 min to melt.

RICE-A-RONI CASSEROLE
Also affectionately known around our house as "ugly casserole". I don't remember where I oringinally found this recipe but I've been making it for over 15 years. Everyone in the family loves this stuff. I hope your family will enjoy it, too.

Steps:
- Brown beef in a skillet; drain off grease.
- Place drained beef in a large bowl. Add seasoning packets from rice mix, soup, and water. Whisk until thoroughly blended. Mix in rice and noodles from boxes.
- Place in a greased 9 x 13" glass casserole dish.
- Bake at 350 degrees for 1 hour.
- Remove from oven and stir thoroughly, making sure to scrape the bottom of the casserole, so the rice isn't sticking.
- Return it to the oven and bake 10 minutes more, sprinkling the onions over the top for the last 3 minutes.
