MOM'S CHICKEN AND DUMPLINGS (CHICKEN PAPRIKA)

This was a staple at our house when I was growing up. My mom made this about two times a month and often had to double the dumplings! Since my mom is not good at exact measurements, I tried my best to recreate this great one pot meal from her verbal instructions. She calls this Chicken Paprika, but I am told it would have to have sour cream in it, and it doesn't, which is fine with me :) ****NOTE 1/15/08: I've adjusted the quantities of salt and paprika because depending on what kind of chicken you use, different amounts of water will be used, needing different amounts of spicing. You may also increase the pepper and garlic, if desired, but be careful as garlic should not be a dominant flavor in this dish.

4 lbs chicken thighs, skin removed (boneless thighs if you can find them)
water
2 small onions, chopped
1 tablespoon butter or 1 tablespoon oil
1/2 teaspoon garlic powder
1 -2 teaspoon salt
1/4 teaspoon black pepper (to taste)
1 -2 tablespoon paprika
2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon paprika
1 large egg, beaten
water

Steps:

  • In a stock pot or dutch oven saute onions in butter until tender.
  • Add water until pot is about 1/3 full.
  • Add chicken thighs, garlic powder, salt, pepper and paprika.
  • Make sure water is covering the chicken, if not add more until it just covers.
  • Bring to a boil and then simmer for 90 minutes, covered, stirring occasionally.
  • In the meantime, make the dumplings: Mix the flour, salt, pepper and paprika in a medium bowl until combined.
  • Make a well in the center and drop in the egg and about 1/2 cup water.
  • Stir and add more water by the tablespoon until you have a sticky dough that just leaves the side of the bowl.
  • In a different large pot from chicken, boil water.
  • Drop dumpling mixture by the teaspoon into the boiling water.
  • (I use a regular teaspoon from my flatware, not a measuring spoon.) If dumpling mix is too sticky to drop from spoon, then dip the spoon into the boiling water, the dumpling should slide right off.
  • When dumplings start floating on top, remove them with a slotted spoon or drain them.
  • You may have to reduce the heat to see when they are floating.
  • About 30 minutes before chicken should be done, add the dumplings to the pot with the chicken.
  • After 30 minutes, you should have a delicious dish: the chicken should be tender enough that it is falling off of the bone and the dumplings should have made a thicker sauce out of the liquid the chicken was cooking inches.

1 large russet potato
1 tablespoon butter
½ pound skinless, boneless chicken breast halves
1 ½ teaspoons paprika, divided
¼ teaspoon salt
¼ teaspoon ground black pepper
1 ½ teaspoons olive oil
½ onion, chopped
3 tablespoons half-and-half cream
⅓ cup white wine

Steps:

  • Place the potato in a saucepan, and add enough water to cover. Bring to a boil, and cook for about 20 minutes, until potato is tender. Drain, and cut the potato into chunks.
  • Melt butter in a large skillet over medium heat. Rub chicken with 1/2 teaspoon of paprika, salt, and pepper. Fry in butter, turning as needed, until chicken is cooked through. Remove chicken from the pan, and cut into bite size pieces. Set aside.
  • Pour the olive oil into the skillet, and add the onion. Cook and stir until onion is translucent. Stir in the half-and-half, white wine, and potato. Simmer for about 10 minutes to blend the flavors. Return the chicken to skillet, and cook until heated through. Season with remaining paprika, and serve.

This classic Hungarian dish tastes so great, even my kids (the pickiest eaters in the world) love it. My mom used to make it when I was a kid. Even if you don't like chicken you'll eat this. Great easy recipe!

1 (4 pound) whole chicken, cut into pieces
½ cup all-purpose flour
1 teaspoon seasoned salt
½ teaspoon dried thyme
¼ teaspoon ground black pepper
¼ cup shortening
2 tablespoons paprika
½ teaspoon garlic salt
2 ½ cups hot water
2 onions, peeled and sliced into rings
2 tablespoons all-purpose flour
½ cup milk

Steps:

  • In a shallow dish or bowl, combine 1/2 cup four, seasoned salt, thyme and ground black pepper. Mix together; coat chicken pieces in this mixture and fry in shortening in a large skillet until lightly browned on all sides.
  • Sprinkle paprika and garlic salt over chicken. Add hot water to skillet and simmer for 30 minutes. Placed onion rings on top of chicken pieces and simmer for another 30 minutes. Remove chicken, with onions on top, to a serving platter and reserve.
  • In a small bowl, blend 2 tablespoons flour with milk and add to liquid in skillet. Cook, stirring, until thickened. Pour thickened mixture over chicken and serve with hot cooked white rice or egg noodles, if desired.

Think of this as the sheet-pan dinner version of a Hungarian chicken paprikash, ruddy with paprika and sweet tomato paste. Roasting the chicken at high heat instead of braising it lets it singe at the edges, and allows the potatoes and turnips to turn golden beneath their coating of duck fat (or olive oil). Feel free to double this; just use two large sheet pans instead of the smaller pans.

1 tablespoon extra-virgin olive oil
1 1/2 tablespoons sweet paprika
1 tablespoon tomato paste
2 teaspoons kosher salt

Finely grated zest of 1 lemon

2 pounds bone-in, skin-on chicken legs, separated into drumsticks and thighs

Steps:

  • In a medium bowl, combine oil, sweet paprika, tomato paste, 1 1/2 teaspoons salt, smoked paprika, 1/2 teaspoon pepper, cumin, lemon zest, and garlic.
  • Place chicken on a quarter-size rimmed sheet pan (or use a regular rimmed sheet pan) and rub the chicken all over with the paprika mixture. Cover and let rest at least 30 minutes at room temperature or up to 24 hours in the refrigerator.
  • Heat oven to 450 degrees. Toss potatoes, turnips, duck fat, 1/2 teaspoon salt and 1/4 teaspoon pepper together on a quarter-size rimmed sheet pan or a 9-by-13-inch pan.
  • Slide both baking pans into the oven. Roast chicken until cooked through, 25 to 30 minutes. Roast vegetables, tossing after 15 minutes. When you remove the chicken from oven, turn up heat to 500 degrees and continue cooking the vegetables until they are golden brown, another 5 to 10 minutes longer. (Tent chicken with foil and let rest while vegetables finish cooking.)
  • Place the chilled cucumber in a bowl and sprinkle with salt and herbs. Serve with chicken and vegetables, garnished with herbs. Pass the cucumbers and sour cream (if using) at the table.

6 oz boneless, skinless chicken breast, 4 pieces, pounded to 1/2 inch (1 cm) thickness
2 teaspoons smoked sweet paprika
fine sea salt, to taste
freshly ground black pepper, to taste
5 tablespoons olive oil, divided
2 teaspoons dijon mustard, divided
1 clove garlic, grated
1 lemon, zested, divided
1 lb fingerling potato, halved
¾ cup whole milk greek yogurt
2 tablespoons fresh parsley, chopped, extra to garnish, to taste

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Season the chicken breasts with paprika, salt, and pepper. Place in a shallow dish and add 2 tablespoons of the oil, 1 teaspoon of the mustard, the garlic, and half the lemon zest.
  • Toss until the chicken breasts are fully coated, then cover the dish and marinate at least 30 minutes, up to overnight.
  • On a baking sheet, toss the potato halves with 1 tablespoon of the olive oil. Season with salt and pepper and roast until tender and golden, 25 to 30 minutes.
  • Heat 1 tablespoon of oil in a large skillet over medium-high. Remove the chicken breasts from the marinade, and working in two batches, cook until golden brown on one side, 6 to 8 minutes. Flip each breast and continue to cook until the chicken is cooked through, 2 to 4 minutes longer. Transfer to a serving platter and repeat with the remaining oil and breasts.
  • In a small bowl, stir together the yogurt with the remaining 1 teaspoon mustard, lemon zest, salt, pepper and the parsley.
  • Serve the chicken with the yogurt and potato wedges.

A lovely winter dish by Merrillees Parker ('Good Food' magazine, Novemver 05) using sherry instead of wine which gives the sauce a softer flavour. I added more paprika, though, and a hint of chilli which is not in the original recipe. I also added a red bell pepper, which worked well. Please note that the cooking time really depends on the chunks of your potatoes. I had to more than double the stated time. However, that shouldn't worry you as the dish can be prepared in advance and reheated. And yes, it's also suitable for freezing :).

3 tablespoons light olive oil
8 boneless skinless chicken thighs, each cut into four pieces (I preferred smaller sizes, so I cut mine into 8)
1 onion, finely sliced
2 garlic cloves, crushed
500 g floury potatoes, peeled and cubed (1 lb)
1 tablespoon Dijon mustard
1 tablespoon sun-dried tomato paste (or substitute with tomato puree)
1 teaspoon paprika (I used 1 tablespoon)
1 pinch chili powder, not in original recipe (optional)
2 tablespoons red wine vinegar
100 ml sherry wine (3 1/2 fl oz)
300 ml fresh chicken stock
4 tablespoons sour cream, to serve (optional)
4 teaspoons flat leaf parsley, chopped, to serve (optional)

Steps:

  • Heat 1 tbsp oil in a sauté pan over a medium heat. Season the chicken and add to the pan. Fry for about 4 mins until browned all over. Lift out of the pan and set aside. Heat the remaining oil in the pan and fry the onion for about 3 mins, until it is jus softened, then add the garlic and cook for a further minute.
  • Add the potatoes, mustard and sundried tomato paste to the pan, and cook for 1 minute Stir in the paprika, chilli if using, vinegar, sherry and stock. Bring to the boil and allow the liquid to reduce for 2 minutes.
  • Return the chicken to the pan, cover and simmer for 10 minutes. Stir well and simmer with the lid off for another 8 minutes, or until the sauce is thickened and the potatoes and chicken cooked through. I had to cook my stew much longer, as my potatoes weren't cooked.
  • Can be frozen at this point for up to 1 month.
  • Check the seasoning and serve in bowls with a dollop of soured cream (optional) and a sprinkling of parsley (optional).
