ASADO DE PUERCO (MEXICAN PORK STEW)

An authentic Mexican pork stew made with dried chiles, no chili powder here! The guajillo chiles add a very smoky flavor while the ancho chiles add a touch of smoky sweetness. To add another level of flavor, we always top our puerco asado with sliced onions marinated in fresh lemon juice.

1 ½ pounds pork shoulder, cut into 1-inch cubes
½ cup water
½ teaspoon salt, or more to taste
4 dried guajillo chile peppers
4 dried ancho chile peppers
2 tablespoons chopped fresh cilantro
1 tablespoon chicken bouillon granules
10 whole black peppercorns
2 garlic cloves
½ inch stick Mexican cinnamon
½ teaspoon dried Mexican oregano
½ teaspoon dried thyme
½ teaspoon cumin seeds
2 bay leaves
2 whole cloves
1 tablespoon lard

Steps:

  • Combine pork cubes, 1/2 cup water, and 1/2 teaspoon salt in a Dutch oven. Cover and cook over medium heat for 20 minutes, stirring every 5 minutes. Uncover, increase heat to medium-high and cook, stirring constantly, until water evaporates. Continue cooking until the pork browns in its rendered fat, 15 to 20 minutes.
  • Meanwhile, cut tops off the dried chiles and remove seeds. Heat chiles in a large skillet over low heat until they start to soften. Do not toast. Place chiles in a bowl of hot water and soak for 20 minutes.
  • Remove pork and set aside. Do not wash, wipe out, or clean the Dutch oven.
  • Transfer chiles to a blender, reserving soaking water. Add cilantro, chicken bouillon, peppercorns, garlic, cinnamon stick, Mexican oregano, thyme, cumin seeds, bay leaves, and cloves. Pour in 1 cup soaking water and blend until smooth. Add 1 more cup soaking water, season with salt, and blend until completely smooth.
  • Melt lard in the Dutch oven. Carefully add blended chile mixture and scrape up all browned bits. Bring to a boil and add pork. Reduce heat and cover partially, leaving about 1 inch open. Simmer, stirring occasionally, until sauce has thickened and reaches the desired consistency, 15 to 20 minutes.

Simple, yet delicious meat. This is something I came up with one night when I was craving the usual Mexican flare and had pork on hand. I served it with my Recipe #150134 and a side of corn. Good eats!

4 boneless pork chops
3 tablespoons butter
1/4 cup diced onion
2/3 cup salsa
1 1/2 teaspoons cumin
1 1/2 tablespoons red wine vinegar
2 teaspoons chili powder
1 dash onion salt
1/4 cup shredded cheddar cheese

Steps:

  • Sprinkle meat with spices and place meat in saucepan with onion and butter and brown on both sides of pork chops.
  • Then add in the salsa and red wine vinegar and remove pork chops one at a time cutting into cubes, and place back in pan when finished cutting.
  • Once all pork is cooked through take off heat and sprinkle with cheese and place lid on pan and leave until melted.

I got a deal on pork cubes at the grocery store, but wasn't sure exactly what to do with them. One night when I wanted an easy, comfort-food kind of meal, this is what I came up with. NOTE: The Zaar computer won't recognize the "Lawry's Perfect Blend Seasoning and Rub for Chicken or Poultry" that I used, and keeps changing it to "seasoned salt". That would be way too much salt! Another brand of rub would probably also work.

1 lb pork, cubed
3 tablespoons olive oil
2 -3 tablespoons Lawry's Seasoned Salt, brand rub (SEE NOTE ABOVE- NOT SEASONED SALT! Lawry's Perfect Blend Seasoning and Rub.)
1 teaspoon garlic powder
2 teaspoons fresh black pepper
1 white onion, sliced
1 (4 ounce) can mushroom stems and pieces
1 tablespoon brown gravy mix
2 (10 ounce) cans cream of mushroom soup

Steps:

  • Heat olive oil in a large skillet. Add pork cubes and season generously with poultry seasoning, garlic powder, and black pepper. Cook until pork is no longer pink.
  • Add onions and mushrooms, and saute until onions are translucent.
  • Stir in the two cans of mushroom soup & gravy mix. Simmer on low for fifteen minutes.
  • Serve over top of mashed potatoes or noodles.

1 lb boneless pork loin roast, cut into 1-inch pieces
1 (20 ounce) jar salsa
1 (4 ounce) can chopped green chilies, drained
1 (15 ounce) can black beans, rinsed and drained
1 cup shredded monterey jack cheese, if desired (4 ounces) (optional)
rice, cooked according to package directions
guacamole (optional)
sour cream, if desired (optional)

Steps:

  • Mix pork, salsa and chilies in 3 ½ to 4 quart slow cooker.
  • Cover and cook on low heat setting 6 to 8 hours or until pork is tender. Stir in beans. Cover and cook on low heat setting about 5 minutes or until hot. Sprinkle with cheese.
  • Serve over rice, sprinkle with cheese. Excellent topped with guacamole and sour cream.

2-1/2 pounds lean boneless pork, cut into 1-inch cubes
1 garlic clove, minced
1 cup chopped onion
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
1 to 2 cans (4 ounces each) chopped green chilies
1 tablespoon minced fresh cilantro
2 teaspoons dried oregano
2 bay leaves
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • In a large skillet that has been coated with cooking spray, brown pork and garlic. Add onion, saute until tender. Stir in tomatoes, chilies, cilantro, oregano and bay leaves; cover and simmer for 40 minutes or until pork is tender and no longer pink., In a bowl, combine cornstarch and water until smooth; stir into skillet. Bring to a boil. Cook and stir for 2 minutes or until thickened. Discard bay leaves.

3/4 cup olive oil
2 tablespoons parsley, minced
2 garlic cloves, crushed
2 teaspoons crushed red pepper flakes
1 1/2 teaspoons ground cumin
1 teaspoon thyme
1 teaspoon paprika
1 bay leaf, crumbled
salt
pepper
1 1/2 lbs pork, cut into cubes
3 ounces almonds, chopped
1 teaspoon flour
1/2 cup sherry wine
1/4 cup water
salt

Steps:

  • In a large bowl combine first 8 ingredients (oil-bay leaf) and then season with salt and pepper. Add meat and stir to coat. Cover and refrigerate overnight or several hours (at least 4 hours), stirring occasionally.
  • Remove meat from marinade using a slotted spoon. (Remember to reserve 1 tablespoon marinade for dip if making).
  • Heat one tablespoon marinade in a large skillet over medium high heat. Add meat in batches and cook until meat is brown (15 minutes).
  • Transfer to heated platter and serve with dip (see below) as an appetizer or serve over rice as a main dish.
  • To make dip: heat one tablespoon reserved marinade in a small skillet over low heat. Stir in almonds and cook until lightly colored. Sprinkle with flour and cook, stirring constantly (1-2 minutes). Add Sherry, water and salt and simmer 2-3 minutes longer.

2 1/2 lbs pork shoulder, cut into one-inch cubes
flour seasoned with salt and pepper, for dredging
1 tablespoon vegetable oil
1 large yellow onion, chopped
2 large garlic cloves, minced
4 anaheim chilies, roasted, skins and seeds removed, stem beheaded, coarsely chopped
3 tablespoons chili powder
1 tablespoon cumin
1 bay leaf
1/2 tablespoon basil
1/2 tablespoon thyme
1/2 tablespoon oregano
3 1/2 cups chicken broth (divided use)
28 ounces plum tomatoes, drained, squeezed, chopped
1 (15 ounce) can refried beans

Steps:

  • Heat oil in a Dutch oven. Dredge pork cubes in seasoned flour, brown on all sides. Set aside.
  • NOTE: "Brown" means "brown." Don't remove the pork cubes when they're merely gray (the biggest mistake home cooks make when they're browning meat for a stew.) The pork cubes should be browned to where they look like they could be eaten as is.
  • Add onion, garlic, and Anaheims. Cook until onion softens, about 3-4 minutes.
  • Add seasonings and bay leaf. Cook 1 minute.
  • Deglaze with ½ cup chicken broth. Return the pork to the Dutch oven. Add the remaining chicken broth, chopped tomatoes, and refried beans.
  • Bring to a boil, reduce heat, simmer with lid off for two hours.
  • Can be served on the plate as a stew, with heated flour tortillas to sop up all the goodness, or can be used to make burritos. Just add an appropriate amount of stew in a line across the center of a heated flour tortilla, sprinkle on top of the stew some shredded iceberg lettuce and chopped fresh tomatoes, and place at either end of the line sour cream and guacamole.
  • To increase the heat, add more Anaheims. To increase it further, add more chili powder (but try increasing the heat first by adding more Anaheims.).
