PORK CHOPS WITH LOW-FAT MUSTARD-CREAM SAUCE



Pork Chops With Low-Fat Mustard-Cream Sauce image

Nice and creamy and no one will know you used low-fat ingredients.

4 boneless center-cut pork chops
1/2 tsp salt
1/2 tsp black pepper
1 Tbsp vegetable oil
1/2 c fat-free, reduced sodium chicken broth
1 1/2 Tbsp dijon mustard
1/3 c fat-free half & half or fat-free evaporated milk

Steps:

  • 1. Sprinkle pork chops on both sides with salt and pepper. Brown in 1 tbsp. oil over medium-high heat. Remove from pan and set aside.
  • 2. Lower temp and add chicken broth to the skillet and add dijon mustard and cream. Simmer until the sauce thickens slightly. Return chops to sauce and continue simmering until chops are cooked through.
  • 3. Serve with mashed potatoes or rice.

1/4 cup of white wine
2 tablespoons of Dijon Mustard
1 tablespoon of dried Taragon
2 tablespoons of sour cream
1/2 cup of 1% Milk
1 teaspoon Wondra Sauce flour

Steps:

  • heat a sauce pan on a medium low heat. Once heated, pour in the white wine and let boil to 1/2 the volume you place in the pan (1-2 minutes). Whisk in the sour cream, mustard, milk, and taragon, stiring constantly for 3 minutes. Lower the heat and continue to intermitently stir till thickened. You may have to add up to a teaspoon of Wondra sauce flour depending on how thick you lick your sauce.

2 shallots , finely chopped
150ml white wine
1 bay leaf
2 tsp light soft brown sugar
2 tbsp English mustard
1 tbsp wholegrain mustard
200ml crème fraîche

Steps:

  • Put the shallots, wine, bay leaf and sugar in a pan and set over a medium heat. Simmer until the wine has reduced by half and the shallots have softened. Stir in the 2 mustards and crème fraîche. Serve warm or cold.

2 egg yolks
3 tablespoons white vinegar
1 tablespoon prepared mustard
artificial sweetener, to equal 1 tsp. sugar
1/2 teaspoon dry mustard
3 tablespoons skim milk
1 tablespoon lemon juice

Steps:

  • Beat egg yolks with dry mustard in the top of a double boiler until blended.
  • Add vinegar gradually, beating after each addition.
  • Cook over simmering water, stirring constantly until thick and smooth.
  • Add milk gradually, beating in with a fork or wire whip.
  • Cook 5 more minutes over simmering water.
  • Remove from heat.
  • Let cool 10 minutes.
  • Add remaining ingredients, blend well.
