- Heat oven to 375°F. In 10-inch nonstick skillet, cook pork over medium-high heat 5 to 7 minutes, stirring frequently, until no longer pink; drain.
- In ungreased 2-quart casserole, stir pork, beans, taco seasoning mix, enchilada sauce, water and tortilla strips until well mixed.
- Cover and bake about 40 minutes or until heated through. Stir casserole; sprinkle with cheese. Bake uncovered 5 to 8 minutes longer or until cheese is melted. Top with tomato.

- Sprinkle pork with salt and black pepper. Cook bacon in a large Dutch oven over medium heat until crisp and well browned; transfer to paper towel-lined plate, reserving 1/4 cup drippings in pot.
- Brown pork pieces in bacon drippings over medium-high heat, 3 to 5 minutes per side. Work in batches; transfer browned pieces to a plate as they brown. Transfer all pieces back to pot, along with accumulated juices. Stir in onion, serrano pepper, broth, and tomato sauce. Bring to a boil, then reduce heat to medium-low or low to maintain a low simmer. Simmer, covered, 1 hour.
- Stir in beans and cactus; simmer, uncovered, until heated through, 20 minutes more. Stir in bacon. Serve over rice and garnish with avocado and cilantro.

MEXICAN PORK AND BEANS

- Begin by removing the chorizo from their casings. Set a medium saucepan over medium heat and coat with a little canola oil. Add the chorizo and use a spoon to break up the pieces into smaller chunks. Add the garlic and jalapeno. Allow the chorizo to cook and render for 4 to 5 minutes. When the oil is fragrant and red from the chorizo spices, add the cumin and black beans (including the liquid from one of the cans). Add 1/2 cup water, bring to a simmer and cook for 15 minutes to allow the flavors to come together. Add the lime juice and season with salt and pepper.
- Serve the beans in a large bowl garnished with crumbled Cotija cheese and chopped cilantro.
PORK AND BEANS CASSEROLE
Pork and beans casserole is sweet beans & salty pork covered in melty cheese topped with a perfectly browned biscuit all baked in one dish.

- In the bottom of a 9"x13 casserole dish, mix together beans, hot dogs, tomato, and onion.
- Top with shredded cheese.
- Remove biscuit dough from tube and using your fingers, or a rolling pin, flatten each biscuit and shape so that it fits in the pan, covering the top of the casserole. It is important to make the biscuits thinner so they will cook through completely.
- Optional: baste the top of each biscuit with whisked egg.
- Bake on center oven rack uncovered at 350 degrees for about 30 minutes, or until biscuits are golden brown on top and cooked all the way through.

PULLED PORK ENCHILADA CASSEROLE

- Preheat the oven to 400˚. Coat an 8-inch square baking dish with cooking spray. Spread 1/2 cup enchilada sauce in the bottom of the pan and top with 3 corn tortillas, slightly overlapping and cutting as needed to fit. Top with half each of the pork, beans and corn; sprinkle with 1/2 cup cheese. Top with 3 more tortillas and spread with another 1/2 cup enchilada sauce. Top with the remaining pork, beans and corn and sprinkle with another 1/2 cup cheese. Top with the remaining 4 tortillas; spread the remaining enchilada sauce on top.
- Cover with foil and bake until hot and bubbling around the edges, 20 to 25 minutes. Uncover, top with the remaining 1 cup cheese and continue to bake until melted and bubbling all over, about 10 minutes. Top each serving with sour cream, scallions and cilantro.
PORK, BLACK BEAN, AND RICE CASSEROLE
Hubby and I go grocery shopping only once a week because of the stay-at-home order due to the Coronavirus. We got lucky and found a 25-pound pork shoulder roast for $0.59 per pound! Though it's only the 2 of us at home, we could not pass up such a great bargain. We cut the roast up into 2-pound chunks and individually vacuum packed them with our FoodSaver. I made this with items in my pantry and it is filling and delicious.

- Combine pork cubes, 1/2 cup water, and 1/2 teaspoon salt in a Dutch oven. Cover and cook over medium heat for 20 minutes, stirring every 5 minutes. Uncover, raise heat to medium-high, and cook, stirring constantly, until the water evaporates. Cook until pork starts to brown in its rendered fat, about 10 minutes. Add onion and cook for 5 to 10 minutes more. Add minced garlic and cook until fragrant, about 1 minute.

- Cook the beef in the skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
- Rinse and drain the beans in a strainer. Mix the beef, beans, tomato sauce, salsa and chili powder in the ungreased baking pan.

Every once in a while I crave pork and beans and when I do I love to make this recipe. It has a slightly sweet filling and is topped with flaky biscuits and cheese for a nice flavor contrast making it almost like a pie.

- Brown ground beef; drain fat.
- Heat pork and beans in a medium saucepan. Add brown sugar and ketchup. (Start off with 1/2 tablespoon brown sugar and 1/2 tablespoon ketchup, gradually adding more until it suits your taste. I like mine a little on the sweet side.)
- Preheat oven to 375 degrees (the oven tempurature may vary depending on the brand of biscuits you use).
- Combine ground beef and pork and beans in a 2 1/2 quart casserole.
- Place biscuits on a baking sheet, baking them 4 minutes (just long enough so that the bottoms of the biscuits start to cook).
- Place the slightly baked biscuits on top of the pork and bean mixture. Sprinkle with cheese. Bake covered at 350 degrees for 20-30 minutes.

- Soak beans over night and drain.
- Put beans into cast iron pot.
- Toss pork with chilli powder, cumin, coriander and salt.
- Lightly brown onion and garlic with pork in ungreased skillet.
- Mix tomatillos into crockpot.
- Add the pork, black pepper and 2 cups of light stock. Cover and cook 2 hours at a simmer.
- Serve with rice and garnish with coriander.
