- In a large skillet over medium heat, cook bacon until crispy, 5 to 8 minutes. With a slotted spoon, remove bacon, leaving fat in skillet; drain on a paper towel. Set aside.
- Increase heat to high; fill skillet with as much spinach as will fit. Season with salt and pepper. Cook, tossing spinach and adding more as it wilts (it may take up to 2 minutes to fit it all). Continue to cook until tender, 1 to 3 minutes.
- Tilt skillet to drain water from spinach (using slotted spoon or a spatula to hold spinach back). Mix in vinegar; season with salt and pepper. Serve sprinkled with crispy bacon.
CHICKEN AND SPINACH MAC AND CHEESE
Steps:
- Bring a pot of salted water to a boil. Add the elbow macaroni and cook according to the package directions. Drain and set aside.
- Meanwhile, place the chicken skin in a large nonstick saute pan over medium heat, being careful to keep the skin as flat as possible. Cook, flipping over halfway, for about 2 minutes, until the skin is crisp and the fat has rendered out. Remove the skin from the pan and place on a paper towel-lined plate.
- Melt 1 tablespoon of the butter in the same pan over medium-high heat. Add the spinach and wilt for 1 minute, stirring occasionally. Remove the spinach from the pan and set aside.
- To the same pan, add the remaining 3 tablespoons of butter and melt over medium-high heat. Add the flour and cook, whisking continuously, until the mixture is free of any lumps and light tan in color, about 1 minute. Lower the heat to medium, slowly pour in the milk, whisking constantly, and cook until the mixture is slightly thickened, about 2 minutes. Add the cheese, whisking to combine, and cook until it is melted and the sauce is smooth. Reduce the heat to low and whisk in the chicken stock, lemon juice, yellow mustard and hot sauce. Season the sauce with salt and pepper.
- Add the drained pasta, wilted spinach and pulled chicken to the sauce. Stir to combine. Crumble the crispy chicken skin on top and serve immediately.

- In a large pot over medium heat, bring about 4 quarts water to a boil. Add pasta and cook for about 1 to 2 minutes less than package directions.

- Sprinkle Scallops with salt/pepper/garlic salt and set aside.
- In a large dry non-stick skillet crisp up bacon strips until they reach your desired crispiness. Scoop out bacon crisps onto a flat paper towel. Drain off half the bacon grease into a container or coffee mug. Set aside.
- To remaining bacon grease, add seasoned scallops in single layer to pan. Once you add to the pan, let brown for 4-5 minutes without disturbing them. Flip and repeat browning process for another 4-5 minute
- Remove from pan to reserved paper towel where you put your cooked bacon crisps.
- Add two tbsp of reserved bacon grease to hot pan. Add diced onion. Season with salt/pepper/garlic salt and saute until tender. Add garlic and stir often to avoid burning. Once garlic is soft, add white wine to hot pan and scrap up all the pits on the bottom. Bring to a boil then reduce to low heat and simmer until slightly reduced. Add butter and stir until melted.
- Add the scallops back into the dressing and cook for 2-3 minutes until heated through.
- Divide fresh spinach onto serving plates, or place in center of one large serving platter. Arrange scallops on bed of spinach. Pour warm dressing over salad and sprinkle with reserved bacon crisps.

- Cook the pasta following pack instructions. Meanwhile, heat the oil in a medium non-stick pan. Add the leeks, stir well, then cover and cook for about 6 mins or until softened.
- Put the flour and mustard powder in a small bowl and gradually whisk in the milk. Pour into the pan with the leeks and stir with a wooden spoon until thickened. Continue stirring over a low heat while the pasta cooks. It will seem thick but will be diluted later.

- Spray 8" square baking dish with nonstick cooking spray.
- In small bowl, whisk 1/4 cup of the milk and flour until smooth.
- In heavy medium saucepan, heat remaining 1 1/2 cups milk over medium heat until steaming.
- Add flour mixture; cook 2-3 minutes or until sauce boils and thickens, whisking constantly.
- Remove from heat; stir in cheddar cheese until melted.
- Stir in cottage cheese, salt, pepper and nutmeg.
- Cook spinach according to package directions; drain.
- Rinse under cold running water; squeeze out excess moisture.
- Cook macaroni in large pot of boiling lightly salted water 4-5 minutes or until not quite tender, stirring often.
- (Macaroni will continue to cook while baking.) Drain; rinse with cold water.
- Drain again.
- In large bowl, stir together cheese sauce and macaroni.
- Spread half of the macaroni mixture in baking dish; spoon spinach over top.
- Spread remaining macaroni mixture over spinach layer; sprinkle with wheat germ.
- (Dish can be made to this point and refrigerated for 2 days or frozen for 2 months. Thaw in refrigerator before baking.) Bake 35-45 minutes or until bubbly and golden.

- HEAT OVEN TO 400F/204C. Line 2 quart casserole with parchment paper (for easy cleanup) or spray casserole dish with oil.
- BOIL MACARONI AND SPINACH: Bring salted water to a boil in a large saucepan and add macaroni. Cook as per package directions. 3 minutes before macaroni is cooked, add frozen or fresh chopped spinach. This will slow the boil, so increase heat to medium high to finish cooking pasta to al dente which is what you want. Drain in colander and set aside.
- MAKE CHEESE SAUCE: Heat butter in saucepan on medium heat. Add flour and whisk to blend. Cook for 2 minutes. Add milk. Whisk to blend. Add salt and mustard (if using). Cook for about 5-7 minutes until thickened. Turn off heat. Mix in 2 1/2 cups (~280g) cheese, reserving remaining 1/2 cup (56g) of cheddar for topping.
- COMBINE SAUCE AND MACARONI: Add cooked macaroni and spinach to cheese sauce. Mix to combine well. Transfer to 2 quart casserole. Sprinkle remaining 1/2 cup shredded cheese casserole.
- BAKE AND SERVE: Bake for 15-20 minutes until cheese is golden brown on top. Serve with slaw, baked beans or tomato salad.

- Cook bacon in a heavy, large skillet over medium heat until crisp.
- Transfer bacon to paper towels and drain.
- Pour off all but 3 Tbsp.
- drippings from the pan.
- Add bell pepper and onion to the skillet and sauté until tender.

I love to cook and am always trying out new and different things. I love to experiment in the kitchen. This is one of my experiment recipes that I did once. It proved so successful that I have passed this recipe on to family and friends.

- Preheat your oven to 200 dc. Now put the milk, cream and soft cheese and a pinch of salt and pepper into a large jug or bowl and whisk together until all the ingredients are blended together. Now put the butter into a sauce pan and let it melt. Once the butter has melted, add the flour to the butter and mix together so if forms a thick paste.
- Slowly and gradually add the milk mixture to the flour and butter whisking as you do so. Keep doing this until all of the milk mixture is mixed in with the butter and flour. Keep whisking or mixing so the mixture does not become lumpy. While still mixing the sauce add 150g of the grated cheese and stir in to the sauce. Keep stirring until the sauce thickens to the consistency of double cream. Then put the sauce aside.
- Put a pot of water on the stove and add a pinch of salt and a tea spoon of oil. Leave the water to boil. Once the water starts to boil then add the macaroni and cook to the time it suggests on the packet. Once the macaroni is cooked then drain and put into a large casserole dish or roasting tin.
- Now put some oil into a pan and heat it up. Put the onions, spring onions and bacon into the pan and cook until soft and golden. Once cooked add the onions, spring onions and bacon to the dish with the macaroni.
- Now put the spinach and garlic to the pan and fry until cooked. Once the spinach is cooked add it to the Macaroni dish. Now sprinkle 75g of the grated cheese over the macaroni and mix all of the ingredients together. Now pour the cheese sauce over the macaroni and other ingredients, mix together well so that all of the macaroni has sauce on it.
- Now evenly sprinkle the remaining 75g of cheese on top of the macaroni. Sprinkle a little salt and pepper over the cheese. Put in the oven and cook for 45 to 60 minutes depending on your oven. Serve with a crisp garden salad and a glass of white wine.
MAC 'N' CHEESE WITH BACON, SPINACH AND TOMATOES

- Steps oven to 200°C. Bring a large pot of salted water to the boil. Grease a large baking dish or 6 large muffin tins. Cook macaroni in pot of boiling water for 6-8 minutes, stirring occasionally, until al dente (just tender). Reserve ½ cup pasta water, then drain well. Heat olive oil in a large fry-pan on medium heat. Fry onion and bacon for 6-8 minutes, until golden. Add pasta water and rub bottom of pan to release brownings. Remove from heat and stir through spinach. While onion mixture is cooking, melt butter in a medium pot on low to medium heat. Stir in flour and continue cooking for 2-3 minutes, until caramel in colour. Remove from heat, and stir in stock powder, mustard and very gradually pour in milk, stirring constantly. Return to heat and bring to a simmer and cook for 3-4 minutes, until thickened, stirring frequently. Season to taste with salt and freshly ground pepper. Combine macaroni with vegetable and bacon mixture and sauce and pour into a large baking dish or into about 6 large or 12 small muffin tins. Mix cheese with breadcrumbs, sprinkle over mac 'n' cheese and bake for 18-20 minutes, or until crust is golden brown and crispy. Place tomatoes in a small oven dish. Mix olive oil, balsamic vinegar and brown sugar together and drizzle over the tomatoes. Bake for 12-15 minutes, until soft and cooked through. Spoon some mac 'n' cheese onto plates with some roast tomatoes on the side.

- Steps oven to 200°C. Bring a large pot of salted water to the boil. Cook macaroni in pot of boiling water for 6-8 minutes, stirring occasionally, until al dente (just tender). Reserve ½ cup pasta water then drain well. Heat olive oil in a large fry-pan on medium heat. Fry onion and bacon for 6-8 minutes, until golden. Add pasta water and rub bottom of pan to release brownings. Remove from heat and stir through spinach and capsicum. While onion mixture is cooking, melt butter in a medium pot on low to medium heat. Stir in flour and continue cooking for 2-3 minutes, until caramel in colour. Remove from heat, and stir in stock powder, mustard and very gradually pour in milk, stirring constantly. Return to heat and bring to a simmer and cook for 3-4 minutes, until thickened, stirring frequently. Season to taste with salt and freshly ground pepper. Combine macaroni with vegetable and bacon mixture and sauce and pour into a large baking dish or into about 6 large or 12 small muffin tins or ramekins. Mix cheese with breadcrumbs. Sprinkle over mac 'n' cheese and bake for 18-20 minutes, or until crust is golden brown. In a bowl, whisk all dressing ingredients together. Roughly chop lettuce and drizzle dressing over lettuce just before serving. Divide mac 'n' cheese between plates with crunchy cos on the side. Serve with a dollop of tomato sauce if desired.

Add 1 cup shredded cheese, stirring until melted. Stir in pasta-spinach mixture and chopped bacon, mixing well.
- Pour mixture into a 2-qt. casserole dish and top with remaining cheese. Bake for 20 minutes, or until heated through.
