1 lb extra lean (at least 93%) ground beef
1/2 cup sliced green onions
1 cup Old El Paso™ Thick 'n Chunky Salsa
1 1/2 teaspoons chili powder
3/4 teaspoon cumin
1 can (11 oz) corn, drained
1 pouch (4.7 oz) Betty Crocker™ loaded mashed potatoes
Water, milk and butter called for on potatoes pouch
1/2 cup shredded Cheddar cheese (2 oz)
1 medium tomato, sliced into thin wedges
Tortilla chips, if desired

Steps:

  • In 10-inch skillet, cook ground beef and 1/4 cup of the green onions over medium-high heat 5 to 7 minutes, stirring occasionally until beef is thoroughly cooked; drain. Stir in salsa, chili powder and cumin. Spoon corn evenly over beef mixture in skillet. Cover and cook over low heat until mixture is thoroughly heated.
  • Meanwhile, make potatoes as directed on pouch, using water, milk and butter.
  • Spoon potatoes over corn in skillet; spread evenly. Sprinkle with cheese and remaining 1/4 cup green onions. Cover; cook over low heat about 5 minutes or until cheese is melted. Arrange tomato wedges in spoke fashion over potatoes. Garnish with tortilla chips around outside edge of skillet.

Ask Pie Town locals what you should order at Michael Rawl's Good Pie Cafe and they'll suggest New Mexican apple pie. It's basically New Mexico in a pie dish: green chiles, pinon nuts, and on top, the state flag rendered in dough. Rawl, a Baltimore native, developed the recipe shortly after opening Good Pie Cafe in Pie Town, New Mexico in 2001. It has been the bestseller ever since.

4 tablespoons lard
2 cups all-purpose flour, plus more for dusting
1 tablespoon granulated sugar
1 teaspoon salt
1 teaspoon baking powder
6 to 7 apples (such as Granny Smith, Fuji and/or Gala), peeled and sliced (about 6 cups)
1/2 cup all-purpose flour
1/2 cup turbinado sugar, plus more for sprinkling
2 tablespoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon freshly grated nutmeg
1/4 cup fresh lemon juice (from about 2 lemons)
1/4 cup canned or frozen chopped hot green chiles (thawed if frozen)
1/4 cup pine nuts
1 large egg
Vanilla ice cream, for serving

Steps:

  • Make the crust: Cut the lard into 1/2-inch cubes; transfer to a plate and freeze at least 1 hour. Combine the flour, granulated sugar, salt and baking powder in a large bowl. Cut in the lard with 2 knives until the mixture looks like coarse meal with pea-size bits of lard (do not overmix). A little at a time, stir in 1/2 to 1 cup ice water until the dough holds together when squeezed; the amount of water will vary depending on the humidity. (You can also make the dough in a stand mixer with the paddle attachment.) Divide the dough between 2 sheets of plastic wrap; use the plastic to help form each half into a disk. Wrap tightly and refrigerate until firm, at least 1 hour or overnight.
  • Make the filling: Combine the apples, flour, turbinado sugar, cinnamon, ginger, nutmeg, lemon juice, green chiles and pine nuts in a large bowl and toss. Let sit 20 minutes. Meanwhile, preheat the oven to 375 degrees F.
  • Roll out 1 disk of dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch deep-dish pie plate, then spoon the filling into the crust. Roll out the remaining disk of dough into a 12-inch round; lay the dough over the filling. Press the 2 crusts together around the edge, then fold the overhanging dough under itself and crimp with your fingers. Cut a few slits in the top crust or prick with a fork to let steam escape. Whisk the egg with 1/4 cup water and brush over the top crust. Sprinkle with turbinado sugar.
  • Bake, rotating the pie every 20 minutes, until golden brown, 1 to 1 1/2 hours. Transfer to a rack and let cool completely. Serve with ice cream.

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a skillet over medium heat, cook and stir the ground beef and onion until beef is evenly brown. Drain, and allow to cool slightly.
  • In a bowl, mix the cooked beef and onion, egg, ketchup, and Worcestershire sauce.

1 1/2 cups graham cracker or Maria cookie crumbs (about 6.5 ounces)
7 tablespoons unsalted butter, melted
2 tablespoons packed light brown sugar
12 tablespoons (1 1/2 sticks) unsalted butter
1/2 cup packed light brown sugar
6 tablespoons light corn syrup
3 cups pecan halves (about 10 ounces)
1/4 cup Mexican crema or whipping cream
1 disk Mexican chocolate, such as Ibarra, finely minced (about 3.1 ounces)

Steps:

  • For the crust: Spray a 9-inch pie dish with cooking spray.
  • Blend the cookie crumbs, butter and brown sugar in a food processor until the crumbs are moist. Press the crumb mixture into the bottom and up the sides of the prepared pie dish. Cover the crust and freeze while preparing the filling. (Can be made 1 week ahead. Keep frozen.)
  • Preheat the oven to 350 degrees F.
  • For the filling: Combine the butter, brown sugar and corn syrup in a heavy medium saucepan. Bring to boil, stirring often. Boil 1 minute. Stir in the pecans and crema. Boil until the mixture thickens slightly, about 3 minutes. Remove from the heat. Add the chocolate and stir until the chocolate melts and the mixture is well blended.
  • Pour the hot filling into the crust. Using a spoon, evenly distribute the nuts. Bake until the filling bubbles all over, about 10 minutes. Transfer the pie to a rack and cool completely before serving.

1 medium green sweet pepper, chopped
3 garlic cloves, minced
2 tablespoons olive oil
1 lb uncooked ground turkey
1/2-1 teaspoon chili powder
3 tablespoons ground cumin
1/4 teaspoon cayenne pepper
1 (15 ounce) can black beans, rinsed and drained
1 (14 ounce) can diced tomatoes, undrained
1 cup bottled salsa
2 (16 ounce) packages refrigerated cooked polenta (or cook and mold your own)
2 cups shredded monterey jack cheese
2/3 cup chopped fresh tomato
1/4 cup snipped fresh cilantro

Steps:

  • preheat oven to 375°F.
  • In a skillet cook onion, sweet pepper,and garlic in 1 tablespoon hot oil until tender.
  • Add turkey, chili powder, cumin and cayenne.
  • Cook until turkey is no longer pink, stirring to break up meat.
  • Add beans, undrained tomatoes and salsa.
  • Bring to boiling; reduce heat.
  • Simmer gently 15 minutes.
  • Meanwhile, grease a 3-quart rectangular baking dish with the remaining 1 tablespoon oil.
  • Cut 1 tube polenta into 1/2-inch cubes; press evenly into prepared baking dish.
  • Halve remaining polenta lengthwise and cut into 1/2-inch thick slices; set aside.
  • Sprinkle 1 cup of cheese over polenta in dish.
  • Top with meat mixture.
  • Arrange sliced polenta over meat; sprinkle with remaining cheese and fresh tomato.
  • Bake, uncovered, for 35 minutes or until bubbly.

TORTILLA CHIP CRUST FOR SAVORY PIE (QUICHE, MEXICAN PIE, ETC.)



Tortilla Chip Crust for Savory Pie (Quiche, Mexican Pie, Etc.) image

Great use for those extra little pieces at the bottom of the bag, or chips that are going slightly stale. It's extremely easy, made with the same method as a graham cracker crust. I find that a blender or food processor works best for getting these crushed finely enough - roughly the same as graham cracker crumbs. If you're using salted chips, be sure to omit or adjust any salt in your recipe.

  • Grease a 4-quart baking dish (or a large enough baking dish to hold the mixture).
  • For the filling: In a large skillet cook the onion, garlic, jalapeño pepper and green bell pepper in oil until the onion is softened (about 4-5 minutes).
  • Add in ground pork; cook until the pork is no longer pink, stirring and breaking the mixture up with a wooden spoon.
  • Stir in tomato paste, thawed corn, black beans, cumin, allspice, chili powder, Worcestershire sauce, Tabasco sauce, cornmeal, salt and pepper; mix well to combine, and bring to a simmer, stirring occasionally for about 35 minutes (adding in more Tabasco sauce to taste.
  • Spoon the mixture into prepared baking dish.
  • To make the cornmeal crust: In a bowl sift together flour, cornmeal, sugar, baking powder and salt.
  • Add in melted butter, milk and egg; stir until JUST combined.
  • Add in grated cheese and chili peppers.
  • Spread or drop the batter by large spoonfuls around the edge of the casserole, or you can spread completely over the pork filling.
  • If you are spreading the batter around the edge of the dish, you can sprinkle grated cheddar on top of the pork mixture in the middle of the dish, but that is optional.
  • Bake in the second-lowest oven rack at 350 degrees for 35-40 minutes or until the cornmeal crust is baked and the filling is bubbly.

1 cup shortening, plus
2 tablespoons shortening
3/4 teaspoon salt
6 -8 ounces Coca-Cola

Steps:

  • Sift flour and salt.
  • Cut in shortening.
  • Slowly add Coke,until dough forms a ball.
  • Makes about 5 single pie crusts.
  • Very tender crust.
  • I roll mine into 3 inch circles and place a teaspoon of filling like jam, pie filling, etc.
  • fold into half and pinch and seal edges.

1 (4 ounce) can green chilies
2 cups cheddar cheese
1 (15 ounce) can refried beans
4 ounces canned chipotle chiles in adobo, chopped
16 small corn tortillas, cut in half

Steps:

  • Heat oil in skillet over medium high heat.
  • Cook onions until translucent.
  • Add garlic, taco seasoning and ground beef, cook until brown.
  • Stir in green chilies.
  • Preheat oven to 400 degrees.
  • Lightly grease pie plate and cover bottom with 4 tortillas.
  • Layer in this order: 1/2 beef mixture, 1/2 cheese, 4 tortillas, beans, 4 tortillas, chipolte peppers, 4 tortillas, remaining beef, remaining cheese.
  • Bake 30-40 minutes uncovered, or until cheese is melted.
  • Serve with toppings of choice (salsa, sour cream, and guacamole).
  • Leave out the chipolte peppers if you do not like spice, feel free to add black beans with refried beans for extra protein, and substitute leftover chicken or turkey for the beef with ease. Double recipe to freeze ahead for a lazy or crazy day.

  • Measure your flour by gently spooning it into a measuring cup and then sweeping off any excess using the back of a butter knife. Add the measured flour and salt to a medium mixing bowl. Whisk together to combine. Add the shortening, working it into the flour until mixture is crumbly using a pastry cutter. It should resemble coarse sand and thoroughly combined.
  • Cut the butter into small cubes (cut each tbsp into 4 pieces). Add the butter to the flour mixture and toss to cover the pieces with flour. Quickly work it into the mix with a pastry cutter or your hands breaking apart the pieces of butter and continuing to toss in the flour. The mixture should be somewhat uneven, with bigger chunks of butter mixed in with the smaller pieces. (bits of butter help your crust come out more flaky and delicious so it’s okay to have some chunks throughout the mix).
  • Drizzle 4 tbsp of ice cold water over the mixture (I ended up using 8 Tbs). Toss gently to combine. Add only enough additional tbsp of water to make it hold together when you gather it up and squeeze it in your hand. (you don’t want to knead your dough or add too much water as this will create a tougher crust)
  • Transfer the mixture to apiece of parchment paper. Loosely shape the dough into a rectangle about 15x7or so. Fold the right side toward the middle for about one third. Then fold the left side toward the middle. It should resemble a business letter in shape. If needed, spray a little bit of cold water on any dry areas. Flatten and fold again, repeating this process until it has been incorporated. (folding the dough in this way will create more flaky layers in your crust). Make sure not to handle the dough too much with your hands as they will heat up the dough and melt the butter.
