6 (12-ounce) cans evaporated milk
4 teaspoons ground cinnamon
1 tablespoon vanilla extract
1 teaspoon ground nutmeg
Pinch cayenne pepper
2 (12-ounce) bags semisweet chocolate chips (recommended: Hershey's)
Cocoa powder, for serving

Steps:

  • For stovetop: In a large pot over medium heat, whisk together milk, cinnamon, vanilla extract, and nutmeg. Add chocolate chips. Stir until chocolate is melted. Cover and turn heat to low for 5 minutes.
  • For slow cooker: In a 4-quart slow cooker, whisk together milk, cinnamon, vanilla extract, and nutmeg. Add chocolate chips. Cover and cook on LOW setting for 2 to 3 hours, stirring every 15 to 20 minutes.
  • Serve with a dusting of cocoa powder.

1/4 cup baking cocoa
2 tablespoons brown sugar
1 cup boiling water
1/4 teaspoon ground cinnamon
Dash ground cloves or nutmeg
3 cups whole milk
1 teaspoon vanilla extract
Whipped cream
Whole cinnamon sticks

Steps:

  • In a small saucepan, mix cocoa and sugar; stir in water. Bring to a boil. Reduce heat; cook 2 minutes, stirring constantly. , Add cinnamon and cloves; stir in milk. Simmer 5 minutes (do not boil). Whisk in vanilla. Pour hot chocolate into mugs; top with whipped cream. Use cinnamon sticks for stirrers.

3 cups milk, plus more if needed
1 cup half-and-half
8 cinnamon sticks
2 discs Mexican chocolate, such as Abuelita
1 teaspoon sugar, optional
Toasted marshmallows, for serving

Steps:

  • Combine the milk, half-and-half and 2 of the cinnamon sticks in a small saucepan. Warm over medium-low heat, then stir in the chocolate discs. Stir until melted (though there will still be lovely particles of chocolate throughout). If it's too chocolaty for you, splash in a little more milk. If it's not quite sweet enough for you, add 1 teaspoon sugar.
  • Serve in mugs topped with toasted marshmallows, and place a cinnamon stick in each mug.

1/2 cup Marshmallow Fluff
2 tablespoons almond-flavored liqueur (such as amaretto), or 1/4 teaspoon pure almond extract
1/4 teaspoon pure vanilla extract
1 cup whole milk
1 14-ounce can unsweetened coconut milk
2 tablespoons good-quality unsweetened cocoa powder (such as Valrhona or Ghirardelli), plus more for garnish
3 tablespoons packed light brown sugar
1/2 cup good-quality bittersweet chocolate chips (such as Callebaut or Ghirardelli)
1/4 teaspoon pure vanilla extract
Pinch of fine sea salt
1/2 cup sweetened shredded coconut, lightly toasted

Steps:

  • Make the whipped cream: Combine the heavy cream, Fluff, almond liqueur and vanilla in the bowl of a stand mixer fitted with the whisk attachment; whip until soft peaks form.
  • Make the hot chocolate: Combine the whole milk and coconut milk in a saucepan over medium heat and bring to a simmer. Whisk in the cocoa powder, brown sugar, chocolate chips, vanilla and salt; cook, whisking constantly, until the sugar and chocolate melt and the mixture is smooth and thick, about 5 minutes.
  • Divide the hot chocolate among mugs and top with a large dollop of the whipped cream. Dust with cocoa powder and garnish with toasted coconut.

Sweet and slightly spiced Mexican Hot Chocolate with a cool, creamy dollop of coconut whipped cream. I have included the recipe for coconut whipped cream. It's really easy to make. Prep time does not include chill time for coconut whipped cream. Adapted from Minimalist Baker.

2 cups non-dairy milk (I used 1/2 full fat coconut milk 1/2 vanilla almond milk)
3 tablespoons cocoa powder (or more for intense chocolate flavor-I like the dark chocolate cocoa)
2 -3 tablespoons sugar, depending on your taste
1/2 teaspoon cinnamon (I recommend Vietnamese as its sweeter)
1/4 teaspoon nutmeg (freshly grated if possible)
1/8-1/4 teaspoon cayenne
1/2 teaspoon vanilla extract (optional)
1 pinch salt (optional)
0.5 (13 1/2 ounce) can full fat coconut milk
1/4 cup powdered sugar
1/2 teaspoon vanilla extract

Steps:

  • In a small saucepan, bring milk to a low simmer over medium heat.
  • Add cocoa powder, sugar, salt, vanilla and spices and whisk vigorously to combine.
  • Serve warm with coconut (or regular) whipped cream and a drizzle of chocolate syrup.
  • To make Coconut Whipped Cream:.
  • Place your coconut milk in the fridge overnight or in the freezer for 30 minutes to an hour. Upon removal, be careful NOT to shake the can as you want the cream to remain separated from the liquid.
  • Open the can and scoop the top layer of cream into a chilled mixing bowl. Whip on medium-high until soft peaks form. (Add a dash of the remaining coconut liquid if it's too thick.).
  • Add powdered sugar and vanilla and whip again to combine. Taste and adjust flavor/sweetness accordingly. Serve with hot cocoa and reserve the rest in an airtight container in the fridge for later use. Should keep for several days.

You'll find a ton of different recipes for Mexican Hot Chocolate but in the end the important ingredients are chocolate and some kind of spice (whether it be chili powder, cinnamon or both). 1 cup sugar
1/2 cup buttermilk
1/2 cup canola oil
2 large eggs, at room temperature
1 teaspoon vanilla extract
1 teaspoon espresso powder
1/3 cup water (to mix the espresso in)
2 cups cake flour
1/3 cup cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon fine salt
2 ounces dark chocolate, chopped
3 ounces mascarpone cheese or 3 ounces cream cheese, at room temperature
1/2 cup heavy whipping cream
2 tablespoons powdered sugar
1 tablespoon cocoa powder
1 teaspoon vanilla extract
12 mini marshmallows (optional)
1 pinch cinnamon (optional)

Steps:

  • Preheat oven to 325 degrees.
  • Add sugar, buttermilk and oil to a stand mixer (or large bowl if you're using a hand mixer). Mix well. Add eggs and vanilla extract, mix well.
  • In a separate large bowl, sift cake flour, cocoa powder, baking soda, baking powder, cinnamon and salt.
  • Add 1/3 of your dry ingredients to the wet ingredients and mix until combined. Pour in your espresso mixture, blend, then continue with two more addition's of the remaining dry ingredients.
  • Pour blended batter about 3/4 full into cupcake pans lined with cupcake liners. Bake until the cupcakes have puffed up with a deep brown color, about 25 minutes. Let cool on a baking rack.
  • FILLING:.
  • While cupcakes are baking, using a double boiler, melt chocolate until completely smooth. Let cool. In a large bowl, mix cooled chocolate and mascarpone cheese until well blended. Scoop mixture into a piping bag.
  • With a knife or melon baller, carefully create a hole in the center of each cupcake. Pipe the chocolate mixture into the hole you just created, about 1½ tablespoons of chocolate into each cupcake.
  • TOPPING:.
  • Mix heavy whipping cream, powdered sugar, cocoa and vanilla in a stand mixer and whip to stiff peaks. Add to a piping bag and pipe over each cupcake in a circular motion.
  • Decorate with one or more mini marshmallows and pinch of cinnamon if you like.

  • In a medium saucepan with a heavy bottom, whisk together the masa harina, muscovado sugar, cocoa powder, chili powder and salt. Whisk in the water until fairly smooth, then add the almond milk, cinnamon sticks and chocolate.
  • Place the pan over medium-high heat and bring to a simmer, stirring frequently. Reduce the heat to medium-low and continue simmering and stirring until the mixture is smooth and thickened to your liking, 10-15 more minutes. Taste, adding more spice if you like. Serve immediately, or remove from the heat and let stand until ready to serve; the champurrado will continue to thicken as it stands and the flavor of the cinnamon will deepen. Thin with almond milk or water if needed.
  • Meanwhile, make the whipped coconut cream. Without tipping or shaking the cans, remove the coconut cream from the refrigerator, open the cans, and scrape the thick cream from the top of the cans. Place in a large bowl or the bowl of a stand mixer with the powdered sugar and vanilla. Whip until soft peaks form, 2-3 minutes on medium-high. Taste, adding more sugar or vanilla if you like.
  • Ladle the champurrado into cups, top with a dollop of cream, a sprinkle of chocolate shavings, and serve immediately.
