Similar to the popular dip found in grocery store delis, this Mexicali dip is deliciously addictive. Use this recipe to make your own much better tasting preservative-free Mexicali dip.

Steps:
- In a food processor, combine cream cheese, sour cream, mayonnaise, salsa, and taco seasoning until smooth.
- Pour into a bowl and add green onions, black olives, jalapeño, and cheese.
- Stir to combine and chill for at least a half hour before serving. Serve with tortilla chips or veggies.
- Makes 2 ½ cups or 10 servings (¼ cup each). Can be refrigerated for up to 3 days.

BEST MEXICAN CHEESE CORN DIP EVER
This corn dip has been a really big hit for me. Its easy to make and everyone will ask you for the recipe when you take it to parties or have one of you own. I can't ever escape a party without someone stopping me and asking how to make that "awesome" corn dish. Great for a Picnic too!!

Steps:
- In a medium to large bowl, Combine sour cream,mayonnaise and cumin.
- Stir well.
- Add corn,cheese,chiles,black pepper,and onions to the sour cream mixture.
- Stir with a wooden spoon (are whatever you have) til all is combined.
- Cover and chill for 2 hours or overnight.
- (overnight is what I do, the seasonings are blended in better) Serve with warm tortilla chips.

- In a clear pie pan, or similar dish, spread a layer of bean dip.
- Top the bean dip with a layer of guacamole.
- Allow the layers to thicken in the refrigerator for approximately 20 minutes.
- In a mixing bowl, while the bean dip and guacamole chill, combine the sour cream and taco seasoning.
- When the chilled mixture is sufficiently thickened, spread a layer of the sour cream mixture over the layer of guacamole.
- Top the sour cream layer with the grated cheese.
- Garnish the layers with the jalapenos and tomatoes.

This flavorful layered dip makes a large amount. Perfect for those Super Bowl parties or whenever you need to feed many party-goers. I sometimes put chopped, canned jalapenos on half for the ones who like it really spicy. This dip goes great with icy Margaritas!

Steps:
- Brown ground beef and onion together.
- Add taco seasoning and water.
- Simmer a few minutes.
- Spread refried beans in the bottom of a 9x13 inch pan.
- Top beans with the meat and onion mixture.
- Dollop sour cream over the beef.
- Pour salsa over the sour cream.
- Top with shredded cheddar cheese, then tomato and lastly the sliced black olives.
- Bake at 350 degrees for 30 minutes.
- Serve with tortilla chips.

- Begin by throwing the refried beans into a small pan over medium-low heat. Add several dashes of Tabasco sauce and a small can of (undrained) diced green chilies. Stir well. Next, sprinkle a little bit of ground Cumin. Spread the beans on the bottom of a glass bowl or high-sided dish. Over this sprinkle the sharp cheddar. Next, plop your sour cream. And spread it into a single layer, being careful not to disturb the cheese underneath.The next layer is the guacamole. Spread it over the sour cream. Follow this with a layer of Monterey Jack Cheese and a nice sprinkling of chopped black olives. Lastly, place a generous layer of Pico de Gallo. You can also, if you have the gumption for it, sprinkle some diced jalapenos over top.Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Coat a 9 inch pie plate with vegetable oil spray.
- Press cream cheese evenly onto the bottom of the pie plate.
- In a large skillet, brown the hamburger. Drain excess fat. Mix in the taco seasoning and water. Cook and stir 2 to 4 minutes. Remove the skillet from the heat before mixing in salsa and jalapenos. Pour the beef mixture over the cream cheese in the pie plate. Sprinkle the Mexican-style cheese over the entire dish.
- Bake at 350 degrees F (175 degrees C) until the cheese has melted.
