RICH'S SOPA DE MARISCOS (MEXICAN SEAFOOD SOUP)
Adapted from "Healthy Mexican Cooking" by Velda de La Garza. This recipe can be made with any combination of seafood (shrimp and fish is typical of South Texas, although we've also seen shrimp and octopus, or just fish). It could also be adapted to become a "Caldo de Pollo" by substituting chicken!

Steps:
- With a mortar and pestle (or molcajete if you have one!), crush cumin seed. Add chopped garlic and chopped jalapeño and crush into a paste. Add a little water to free the spices.
- Add olive oil to a heavy-bottom cooking pot or Dutch oven. Saute onions. Add tomatoes and peppers and continuing sauteing until tender.
- Add all the rest of the ingredients except seafood and cilantro. Bring to full boil, cover, and simmer gently for 40 minutes.
- Add fish and cilantro, and gently simmer an additional 15-20 minutes. Serve hot with chips and salsa.
CAMPECHANA: MEXICAN SEAFOOD SOUP
Campechana is a Mexican seafood cocktail usually made of oysters, baby octopus, mussels, shrimp, squid and scallops.The seafood mix is prepared in its broth with vegetable juice, lime juice, ketchup, cucumbers, tomatoes, onions, avocado and cilantro. Of course, jalapenos for the spicy kick (I only use 2 SMALL ones for flavor)! Tried this in a restaurant for $20 a bowl!!! I was able to find all these ingredients at Wal-Mart for under $35!! What you can't find in the mix purchase separately (my mix didn't have oysters, mussels or shrimp so I bought canned oysters, skipped the mussels and got frozen shrimp). This is in one word: SUBLIME.

Steps:
- Boil seafood mix in 4 to 5 cups of water for 5 to 10 minutes.
- Drain, setting aside broth.
- Cool both seafood and broth.
- Prepare tomatoes, onions, cilantro, cucumbers and jalapenos.
- In a large bowl, mix well. Add seafood mix.
- Add vinegar and juice from limes, broth, ketchup and vegetable juice.
- Season with cumin, and salt and pepper to taste.
- Add avocados.
- Serve with tostadas or saltine crackers. (I served it with extra sour sourdough crusty rolls).
- TIPS:.
- 1) I purchased the seafood as a mix from Food4less for around $3.50 a pound. It was already pre-sliced and ready to go. This is a more economical and convenient alternative than purchasing the oysters, squid and such individually.
- 2) Most recipes call for Clamato juice but since we are using the broth that absorbed the flavors from the seafood when they were boiled, vegetable juice such as V-8 will do.
- 3) Beware! I found the 5 jalapenos called for in this recipe to be beyond my "spice" tolerance. Modify the amount according to taste.
- 4) Of course, get a cold bottle of Corona beer and enjoy!

SPICY CRAB SOUP
Steps:
- Cook and clean crabs:
- Bring water to a simmer in pot and add crabs using tongs. Cover pot and cook over high heat until crab shells are bright red, 5 to 6 minutes. Transfer crabs to a shallow baking pan and reserve cooking liquid in pot.
- When crabs are cool enough to handle, break off 16 claws, working over pan to catch juices, and reserve claws, covered and chilled, for garnish (if using Dungeness crabs, reserve 16 hind legs). Still working over pan, pull off aprons (abdomens), legs, and remaining claws from crabs and add to pot, then cut crabs in half, through shell, with kitchen shears (if using Dungeness crabs, pull top shells from bodies and crack front claws with a mallet). Dip crabs into cooking liquid to rinse off mustard (tomalley), then pull apart shells and extract meat and any orange-red roe with your fingers. (There are bits of meat in all the nooks and crannies.) Put meat and roe in a small bowl and chill, covered. Add all shells and any juices from baking pan to cooking liquid in pot.
- Make broth:
- Quarter onion and add 1 quarter to crab cooking liquid along with halved garlic cloves. Boil broth, uncovered, skimming froth frequently, until liquid is reduced to about 8 cups, about 50 minutes. Carefully pour broth through a cheesecloth-lined sieve into a large bowl, pressing on and then discarding solids.
- Make sofrito while broth is reducing:
- Heat a dry well-seasoned cast-iron skillet over moderately high heat until hot, then toast chile 30 seconds on each side and transfer to a blender. Pan-roast unpeeled garlic, turning with tongs, until browned in spots, 3 to 5 minutes. Cool garlic, then peel and add to blender. Pan-roast tomatoes, turning occasionally, until browned in spots, about 10 minutes. Meanwhile, chop remaining onion and add to blender. Cool tomatoes, then core, peel, and quarter and add to blender.Purée mixture until smooth. Force purée through a medium-mesh sieve into a bowl and discard solids.
- Heat oil in a 4-quart heavy pot over moderately high heat until hot but not smoking and carefully stir in purée (oil will splatter). Cook, stirring frequently, until thickened, about 15 minutes, to make sofrito. Add epazote and 7 cups strained broth, then simmer soup over moderately low heat, stirring occasionally, 30 minutes.
- Add remaining broth to blender along with tortillas, cornstarch, and salt and blend until smooth, 1 to 2 minutes. Pour mixture through cleaned medium-mesh sieve into a bowl, pressing on and then discarding solids. Stir tortilla purée into soup and simmer, stirring occasionally, until slightly thickened, about 10 minutes. Remove and discard epazote if fresh. Stir in reserved crabmeat and simmer just until heated through. Serve soup ladled over reserved claws.
KARYN'S CREAM OF CRAB SOUP
This cream of crab soup is so rich and delicious! I make this a lot, especially in the winter with some nice, hot rolls! Use more Old Bay to suit your taste. I also recommend using lump crabmeat. Enjoy!!

- In a medium bowl, blend flour and hollandaise sauce mix with 2 cups half-and-half.
- Melt butter in a medium, heavy saucepan over medium heat. Slowly add hollandaise mixture, stirring constantly until thickened. Add remaining half-and-half, Old Bay, dry mustard, celery seed, and whipping cream. Bring to a simmer and reduce heat to low. Add crabmeat and sherry, stirring gently until warmed through. Serve immediately.

MEXICAN CRAB SOUP
This recipe represents the cuisine of Vera Cruz, Mexico -- spicy and flavorful. The soup features a spicy depth of flavor from the pickled jalapenos and capers (which is why you don't want to substitute the canned capers and jalapenos with fresh) and a nice touch from the green olives.

Steps:
- Heat the oil over medium heat in a large, heavy soup pot or Dutch oven, and add the onions. Cook, stirring, for five to 10 minutes until tender. Add the garlic and continue to cook for another minute or two, until the garlic begins to color. Add the tomatoes and about 1/2 teaspoon salt, and cook, stirring, for about 15 minutes, until the tomatoes are somewhat cooked down and the mixture smells fragrant.
- Add the potatoes, the winter squash, chiles, olives, capers, bouquet garni and the oregano, and stir together for five minutes. Add 2 quarts water and salt to taste, and bring to a simmer. Simmer 30 minutes, until the potatoes and winter squash are tender. Taste and adjust seasonings, adding more salt and/or garlic if you wish. This soup can be made up to 1 day in advance, following Steps #1 and #2, and kept in refrigerator. Then proceed with Step #3 when ready to reheat and serve.
- Stir in the crab and continue to simmer until crab is heated through, stirring and being careful not to let the soup boil or the cooked crabmeat will become rubbery.
- Just before serving, stir in the chopped cilantro, and serve with lime wedges on the side.
CLASSIC SHE CRAB SOUP
A full-bodied creamy crab soup that can be served with lemon for added tartness.

- Place eggs in a 2 quart saucepan and cover with water. Bring water to a boil. Remove from heat, cover and let stand for 10-12 minutes. Remove eggs from hot water and cool.
- Press the yolks of hard-boiled eggs through a sieve and set aside.
- In a large pot, melt the butter over medium low heat. Add the green onions and celery; cook, stirring occasionally, until the vegetables are soft, about 4 minutes.
- Add the flour and cook and stir for 2 minutes. Stir in the stock, milk and cream. Bring to a simmer.
- Add cooked egg yolks, crabmeat, sherry, salt and pepper and heat through. Ladle into bowls and garnish each serving with a pinch of paprika and a lemon slice.
