Recipe VIDEO above. Copycat of Queso Dip (Mexican Cheese Dip) sold in jars in the US and at Mexican restaurants. Made with real cheese and stays silky smooth even when it cools! AND it reheats perfectly. Makes about 2.5 cups. IMPORTANT: Please read Note 1 regarding store bought shredded cheese.

2.5 cups / 225 g Cheddar cheese, freshly shredded ((Important - read Note 1))
1 tbsp cornflour / cornstarch
1/2 tbsp / 8 g butter
1 large garlic clove, minced
1/4 small white onion, very finely chopped (1/4 cup)
375 g / 13 oz evaporated milk (1 can, not low fat)
1 small tomato, finely diced (3/4 cup) ((Note 2))
1/4 tsp each onion powder, garlic powder, cumin
4 oz / 113g can chopped green chile, fire roasted ((Subs Note 3))
1/4 cup coriander / cilantro, finely chopped
2 - 3 tbsp milk, any
Salt

Steps:

  • Place cheese and cornflour in a bowl, toss to coat.
  • Melt butter over medium heat in a large saucepan or small pot.
  • Add garlic and onion, cook slowly for 3 minutes or until onion is translucent but not browned.
  • Add tomato (including juices) and cook for 2 minutes until tomato is slightly softened.
  • Add evaporated milk and cheese. Stir, then add chiles and Spices.
  • Stir until cheese melts and it becomes a silky sauce.
  • Add salt to taste - amount required depends on saltiness of cheese used - and stir through coriander.
  • Stir in milk or water to adjust consistency (I use 2 tbsp) - the dip thickens when it cools, and milk can be added later to adjust to taste.
  • Remove from heat. Serve warm or at room temperature - it will be soft and scoopable even when it cools.
  • Store in the refrigerator. When refrigerated, it becomes the consistency of the cheese spread sold in jars that are not in the refrigerator section. Reheat in microwave and adjust consistency as desired with a tiny bit of milk. If you add too much, just put on stove again until it thickens.

1 (16 ounce) Bread round
1 cup pico de gallo or salsa, drained (see note 1)
10 ounce can Rotel Tomatoes and Green Chilies, drained
8 ounce package cream cheese (see note 2)
8 ounce container sour cream (see note 3)
2 cups (8 ounces) shredded Cheddar Cheese (see note 4)
2 Tablespoons Taco seasoning
Tortilla chips or fresh vegetables for dipping

Steps:

  • Preheat oven to 350° F.
  • Slice top off bread round and scoop out interior. Use scooped out bread for another purpose.
  • Place pico de gallo, Rotel Tomatoes, cream cheese, sour cream, Cheddar cheese, and taco seasoning in a microwave-safe bowl. Heat on high in microwave for 1 minute. Remove from microwave, and stir ingredients together.
  • Return to microwave for another minute; heat on high. Remove and stir ingredients together. Repeat one more time, or until cheeses are fully melted.
  • Whisk dip ingredients until smooth.
  • Spoon the mixture into the bread bowl. Place the top back on the bread. Wrap the bread in aluminum foil.
  • Bake for 1 hour. Remove from oven and uncover the aluminum foil. Remove the bread top and stir. Return dip and bread top to oven for 15 additional minutes to crisp up bread.
  • Serve with tortilla chips or fresh vegetables such as celery and carrots (see note 5).
  • Yield: 8 servings.

2 cups shredded mozzarella cheese (about 8 ounces)
1 cup crumbled feta cheese (about 4 ounces)
2 tablespoons unsalted butter, diced
1 8-inch sourdough bread boule
1 large egg
1/2 teaspoon red pepper flakes

Steps:

  • Preheat the oven to 400 degrees F. Combine the mozzarella, feta and butter in a large bowl. Slice off the top 2 inches of the bread boule and hollow it out, reserving the top and insides for dipping. Fill the bread bowl with the cheese mixture. Transfer to a baking dish, cover loosely with foil and bake 20 minutes.
  • Uncover and crack the egg on top of the cheese mixture. Continue baking, uncovered, until the egg white is almost set, 12 to 15 minutes, then broil until just set, 1 to 2 more minutes.
  • Remove from the oven and sprinkle with the red pepper flakes. Just before serving, break the egg yolk with a fork and beat into the melted cheese.
  • Serve with the bread trimmings or crudites.

This is a recipe I found online about 6 years ago. Whenever we are invited anywhere this is always requested. The best part of this recipe is when the dip is gone and the bread has soaked up all the yummy dip. It's heavenly!!! You can use the bread cubes or crackers or veggies to dip. Enjoy!

1 loaf Hawaiian bread or 1 loaf rye bread, etc.
1/2 cup sour cream
8 ounces cream cheese, softened
2 cups sharp cheddar cheese
1/2 cup chopped green onion
1/2 cup chopped dried beef or 1/2 cup ham
1 (4 ounce) can chopped green chilies
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350°.
  • Cut a round hole in the top of the bread bowl and hollow out, making sure not to puncture the sides or bottom of the bread bowl.
  • Cut up the hollowed out bread into cubes to use for dipping.
  • Combine the rest of the ingredients with an electric mixer and pour into bread bowl.
  • Wrap in double thick foil and place on a cookie sheet.
  • Bake for about 1 hour.
  • Enjoy!

1 loaf dark rye (9 inch round)
16 ounces sharp cheddar cheese, grated
8 ounces cream cheese
8 ounces sour cream
1/2 cup green onion, chopped
1 teaspoon Worcestershire sauce
1 (4 1/2 ounce) can green chilies, chopped
1 cup ham, chopped
tortilla chips

Steps:

  • Cut the top portion off the bread, reserving top. Scoop out inside of loaf, leaving about a 1/2-1 inch thick shell. (You can cut the scooped out bread into pieces to use with the dip later)
  • In mixing bowl, combine remaining ingredients except tortilla chips and mix well. Fill bread shell with cheese mixture.
  • Place on baking sheet, and cover shell with bread top. Bake at 350 degrees for one hour (cover loosely with foil if bread starts to darken too much).
  • When ready to serve, remove top and surround with chips and chunks of bread on a platter.

1 loaf Hawaiian sweet bread
1 (1 1/4 ounce) package Knorr vegetable soup mix
2 cups colby-monterey jack cheese (shredded)
1 cup mayonnaise
1/4 cup sour cream
2 tablespoons parmesan cheese
13 1/2 ounces spinach, drained and water squeezed out to dry

Steps:

  • Hollow out top of bread by cut along the inside leaving about an inch of sides and bottom. Take out the inside bread. With the remaining bread, pinch into bite size pieces.
  • Mix all of the ingredients together and fill the bread bowl.
  • Place the filled loaf on a cookie sheet. Sprinkle the top with more Parmesan cheese. .
  • Bake at 350°F for 35-40 minutes until hot and bubbly.
  • Serve warm with remaining bread pieces.

1 lb Velveeta Mexican cheese, Hot or Mild
1 small onion, chopped fine
2 tablespoons butter
1 (16 ounce) can del monte original stewed tomatoes
1 round loaf sourdough bread, can sub italian

Steps:

  • In non-stick pan, saute onions in butter till softened.
  • Cube cheese and add.
  • Drain half of the tomato juice and mash tomatoes, add tomatoes and rest of juice.
  • Cook, stirring, til melted over low heat.
  • Set aside.
  • Cut top third off bread, cut top into bite-sized cubes.
  • Hollow out inside leaving a 1/2" shell. Cut inside pieces into bite-sized pieces.
  • Place bread bowl onto platter.
  • Place bread cubes around bread bowl for dipping.
  • Pour cheese sauce into bread bowl.
  • Serve!
  • *You can sub regular velveeta if desired.
