MEXICAN EGG TACOS WITH POTATOES



Mexican Egg Tacos with Potatoes image

8 large eggs
1 teaspoon chili powder
Kosher salt
2 Yukon gold potatoes (about 1 pound), diced
1 onion, diced
1 poblano chile pepper, thinly sliced
Cooking spray
3 plum tomatoes, diced
1/2 cup chopped fresh cilantro
2 tablespoons jalapeno hot sauce
1 tablespoon unsalted butter
12 white corn tortillas

Steps:

  • Position a rack in the upper third of the oven and preheat to 475 degrees F. Separate 1 egg; set the yolk aside. Whisk the egg white, chili powder and 1/2 teaspoon salt in a large bowl until frothy. Add the potatoes, onion and poblano; toss. Coat a baking sheet with cooking spray; spread out the vegetables, then coat with more cooking spray. Bake, flipping once, until golden brown, 25 to 30 minutes.
  • Meanwhile, toss the tomatoes, 2 tablespoons cilantro and 1 tablespoon hot sauce in a bowl; season with salt and set aside.
  • Whisk the reserved egg yolk and 7 eggs with 1/4 cup cilantro and 1/2 teaspoon salt in a bowl until frothy. Melt the butter in a medium nonstick skillet over medium heat; swirl to coat. Add the egg mixture and cook, stirring, until just set, about 5 minutes.
  • Toast the tortillas in a dry skillet or wrap in a damp paper towel and warm in the microwave. Toss the remaining 2 tablespoons cilantro and 1 tablespoon hot sauce with the vegetable mixture. Divide the vegetables and scrambled eggs among the tortillas. Serve with the tomato salsa.

This is a very traditional Texas breakfast, and quick to prepare. It can be prepared in advance, and filling ingredients and tortillas heated in the microwave in the morning. When the ingredients are set out, kids on the run can quickly build a taco, and wrap it to go. The prep and cook time indicated are estimates and vary based on the fillings chosen.

6 cups bacon or 6 cups leftover meat (assorted hot and cooked fillings of your choice)
1 dozen 6-inch flour tortillas, heated (fresh if you can find them)
2 cups shredded cheese, such as mild cheddar,pepper jack or monterrey jack,or a combination
salsa, of your choice
chopped cilantro

Steps:

  • Set out bowls containing the fillings, cheese, salsa and cilantro.
  • Each person builds their own taco by placing the fillings of their choice in the center of the tortilla, and topping it with cheese, salsa and a little cilantro.
  • Fold the taco and eat as is, or if you prefer, fold the filled tortilla and spread some butter on the top half of the folded tortilla and place under the broiler a few minutes to"crisp" the top a bit and melt the cheese inside.
  • One of my favorites is scrambled eggs, bacon, cheese, salsa and cilantro.
  • Potato, egg and cheese with salsa tacos are popular in my household, too.

Quick Easy and Delicious! I learned this recipe from many years of eating with the Mexican cooks at my restaurant. They like to sneak in breakfast before we open. I've grown to LOVE this breakfast. If you like spicy food, you will love this.

6 ounces chorizo sausage
8 (6 inch) corn tortillas
6 eggs
¼ cup milk
½ teaspoon pepper
½ teaspoon salt
1 cup shredded Monterey Jack cheese
1 dash hot pepper sauce (e.g. Tabasco™), or to taste
½ cup salsa

Steps:

  • Crumble the sausage into a skillet over medium-high heat. Cook and stir until evenly brown. Set aside.
  • Heat one skillet over medium heat, and heat another skillet over high heat. The skillet over high heat is for warming tortillas. In a medium bowl, whisk together the eggs, milk, salt and pepper. Spray the medium heat skillet with some cooking spray, and pour in the eggs. Cook and stir until almost firm. Add the sausage, and continue cooking and stirring until firm.
  • Meanwhile, warm tortillas for about 45 seconds per side in the other skillet, so they are hot and crispy on the edges, but still pliable.
  • Sprinkle a little shredded cheese onto each tortilla while it is still hot. Top with some of the scrambled egg and sausage, then add hot pepper sauce and salsa to your liking.

1 jalapeno pepper, seeded and chopped
1 tablespoon canola oil
2 corn tortillas (6 inches), cut into thin strips
4 large eggs
1/4 teaspoon salt

1/2 cup crumbled queso fresco or shredded Monterey Jack cheese
1/4 cup chopped seeded tomato

  • Start by husking and rinsing the tomatillos. I usually de-stem them as well. Add the tomatillos to a baking sheet along with 6-8 slices of bacon and cook everything in the oven at 350F. The bacon will need around 20 minutes to fully cook and I usually keep an eye on it as it gets close.
  • Once cooked set the bacon aside on a plate lined with paper towels to drain. Once drained you can optionally chop up the bacon into smaller bits for the Tacos.
  • Add the roasted tomatillos to a blender along with the remaining Salsa Verde ingredients: 1/2 small onion, 1 rinsed and de-stemmed jalapeno, 1 peeled garlic clove, 10-12 sprigs rinsed cilantro. I usually twist off and discard the bottom, thicker part of the cilantro stems but use the upper stems that hold the leaves together. And keep in mind that you can always start with 1/2 or 1/4 of the jalapeno if you want a milder batch. After taste testing, simply add additional slivers of jalapeno if you want to increase the heat.
  • Finely dice 1/4 small onion and 1 jalapeno and add them to a skillet along with a glug of oil and a knob of butter (optional). As that cooks you can crack and whisk 8 eggs in a mixing bowl. Once the onion has softened add the eggs to the skillet along with 1/4 teaspoon salt and some freshly cracked black pepper. I usually use medium heat to cook the onion and jalapeno, and then lower the heat a tad to cook the eggs. Note: if you're not using bacon you may want to add a bit more salt to the eggs.
