This simple beef and rice recipe is easy, convenient, low on the dishes and absolutely tasty!

1 tablespoon olive oil
1 large onion (chopped)
2 cloves garlic (minced)
1 pound ground beef
1 red pepper (diced)
1 yellow pepper (diced)
1 tablespoon tomato paste
1 tablespoon taco seasoning
salt & pepper (to taste)
1 cup rice ((parboiled preferred; see notes))
1.5 cups broth (or more if it seems dry)
1 jar (16-oz) chunky salsa
1 can (15-oz) black beans
1 cup sweet corn (canned OR frozen)
Shredded cheese, lime wedges, sour cream, chopped tomatoes, cilantro, avocado, tortilla chips.... (optional, to serve)

Steps:

  • Brown meat:Heat the oil in a large skillet over medium-high heat. Add the onion and cook for 2 minutes. Add the garlic and beef and cook until browned. Stir in the diced peppers and cook for 1 more minute.
  • Add remaining ingredients:Stir in the tomato paste, taco seasoning, salt and pepper. Cook for 1 minute. Add the rice, broth, salsa, black beans and corn and stir well.
  • Cook:Bring to a simmer, cover the skillet with a lid, reduce the heat and gently cook for around 15 minutes, or until cooked through. Add more broth if necessary.
  • Serve:Top with shredded cheese and cover for another 2 minutes, if you like. Serve with your favorite toppings.

1 jalapeno pepper, diced

½ teaspoon dried oregano
½ teaspoon paprika

1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can diced tomatoes, drained
¾ cup prepared salsa
1 ½ cups shredded Cheddar cheese

Steps:

  • Heat oil in a large skillet over high heat. Add potatoes and cook until brown and crispy, stirring only as needed to prevent sticking, 8 to 10 minutes. Remove potatoes from the skillet and keep warm.
  • Place beef, carrots, onion, bell pepper, jalapeno, cumin, chili powder, garlic powder, salt, oregano, paprika, and black pepper into the same skillet. Cook until beef is browned and crumbly, 7 to 8 minutes. Stir in corn, tomatoes, and salsa. Cook for 3 to 4 minutes. Stir in cooked potatoes. Top with Cheddar cheese, cover, and reduce heat to medium. Cook until cheese melts, about 1 minute.

2 celery ribs, chopped
1 small green pepper, chopped
1/4 cup chopped onion
1 package (8.6 ounces) beef taco pasta dinner mix
1 teaspoon chili powder
3-2/3 cups hot water
2 cups shredded cheddar cheese
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 can (2-1/4 ounces) sliced ripe olives, drained
Sour cream, optional

Steps:

  • In a large skillet, cook beef, celery, green pepper and onion over medium heat until meat is no longer pink and vegetables are tender; drain. , Set aside topping packet from the dinner mix for another use. 2 Tablespoons tomato paste

2 cups beef broth
2 cups shredded Mexican Blend Cheese ((Cheddar, Monterrey Jack))

Steps:

  • In a large skillet, over medium heat, cook the chopped onion, and bell pepper in oil for about 5 minutes or until the onion and bell pepper are softened.
  • Add the minced garlic and cook for about 1 minute stirring frequently to prevent the garlic from burning.
  • Add the ground beef and cook for another 5 minutes. After the ground beef is cooked, drain the extra grease.
  • Sprinkle taco seasoning over the cooked ground beef and stir until the ground beef is covered with the taco seasoning.
  • After the ground beef is seasoned and cooked, add the drained corn, black beans, salsa, tomato paste, and green chilies and stir until all ingredients are evenly distributed throughout the dish.
  • Add the uncooked rice and beef broth.
  • Cover and bring the rice mixture to a boil and then reduce the heat to low and simmer for about 18 minutes.
  • Sprinkle shredded Mexican Cheese over the casserole. Cover for about 3 to 5 minutes to allow the cheese to melt.
