2 cans (15 to 16 ounces each) pinto beans
1 can (8 ounces) tomato sauce
1/2 cup mild chunky-style salsa
1 teaspoon chili powder
1 cup shredded Monterey Jack cheese (4 ounces)

Steps:

  • Heat the oven to 375°.
  • Cook the beef in the skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
  • Rinse and drain the beans in a strainer. Mix the beef, beans, tomato sauce, salsa and chili powder in the ungreased baking pan.
  • Cover with lid or aluminum foil and bake 40 to 45 minutes, stirring once or twice, until hot and bubbly. Carefully remove the lid, and sprinkle cheese over the top. Continue baking uncovered about 5 minutes or until the cheese is melted.

1 lb ground beef
1 -2 tablespoon minced fresh garlic
1 medium onion, chopped
1 green bell pepper, seeded and chopped
1 -2 jalapeno pepper, seeded and chopped (optional)
1 -2 tablespoon taco seasoning mix (or to taste, can use chili powder in place of taco seasoning mix I use Kittencal's Taco Seasoning Mix)
salt and black pepper
2 (15 ounce) cans black beans, rinsed and drained
2 (8 ounce) cans whole kernel corn, drained
1 (16 ounce) container sour cream
2 cups salsa (medium or mild)
6 cups crushed plain tortilla chips
3 cups shredded Mexican blend cheese (can use more or less cheese if desired) or 3 cups cheddar cheese (can use more or less cheese if desired)
2 plum tomatoes, finely chopped
3 -4 green onions, chopped

Steps:

  • Grease a 13 x 9-inch baking dish.
  • In a skillet over medium heat brown the ground beef with garlic, onion, green bell pepper and jalapenos (if using) drain fat then add in taco seasoning, salt and black pepper to taste; heat stirring for 1-2 minutes; transfer the mixture into a large mixing bowl.
  • Add in black beans, corn, sour cream and salsa; mix until well combined.
  • Spoon 1/3 of the ground beef mixture or enough to cover the bottom of the dish.
  • Arrange HALF (3 cups) of the crushed tortillas on top of the ground beef mixture, then sprinkle about 1 cup shredded cheese.
  • Spoon another 1/3 of meat mixture on top of the cheese.
  • Cover with remaining half (3 cups) of crushed chips then sprinkle with 1 cup shredded cheese.
  • Spread the final layer of meat mixture on top then sprinkle with 1 cup cheese.
  • Top the casserole with green onions and then chopped tomatoes.
  • Bake at 350 degrees for about 40 minutes.
  • Let sit for 15-20 minutes before slicing and serving.

1 1/2 pounds ground beef
3 tablespoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano

1 medium onion, finely diced
4 cloves garlic, minced
One 15-ounce can pinto beans, strained and rinsed
2 cups jarred tomato salsa, plus more for serving
6 cups yellow corn tortilla chips (about 5 ounces), plus more for serving
3 cups shredded Cheddar and Monterey jack blend
3 cups shredded Cheddar and Monterey jack blend
1 cup sour cream, stirred well for easy dolloping
1 cup shredded iceberg lettuce
2 plum tomatoes, diced
1/2 avocado, diced
1/4 cup pickled jalapenos, chopped

Steps:

  • Preheat the oven to 375 degrees F. Lightly oil a 9-by-13-inch casserole dish.
  • Heat the oil in a large skillet over high heat. When the oil is shimmering, add the beef and sprinkle with the chili powder, cumin, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, breaking up the meat into smaller pieces, until browned, about 5 minutes. Add the onions and garlic and cook until the onions are soft, about 5 minutes more. Add the beans, salsa and 1/2 cup water and bring to a simmer; cook until the sauce thickens and coats the meat, about 5 minutes. Add salt and pepper to taste. (This beef-and-bean mixture can be made up to a day ahead of time.)
  • Lay half the tortilla chips on the bottom of the oiled casserole dish. Spread half the meat mixture on top. Sprinkle half the cheese blend over the meat. Repeat with the remaining chips, meat and cheese. Bake uncovered until the cheese melts and the casserole is hot, about 20 minutes.
  • Top with sour cream, lettuce, tomato, avocado and pickled jalapenos if desired. Serve with more salsa and tortilla chips on the side.

  • Arrange the following in layers in a 9-inch deep-dish pie pan or 10-inch round microwave-safe dish: 4 of the tortilla halves, one-third of the bean mixture, one-third of the zucchini and 1/4 cup of the cheese. Repeat twice, while packing down the layers. Sprinkle with additional salt and the remaining 1/4 cup cheese.
  • Microwave on high until the zucchini is fully cooked, about 10 minutes. Remove from the microwave and loosely cover with foil to finish the cooking process, about 5 minutes. 3/4 cup water
1 can (16 ounces) refried beans
1/2 cup salsa

3 -4 tablespoons oil
3/4 cup water
1 1/2-2 cups sliced fresh mushrooms (can use canned also)
2 green bell peppers, chopped
1 large onion, chopped
2 -3 fresh minced garlic cloves (or more if desired, I use 1 Tbsp)
1 (28 ounce) can undrained canned tomatoes
1 (19 ounce) can red kidney beans, drained
3/4 cup long grain rice (uncooked)
1 tablespoon chili powder (or to taste)
2 teaspoons cumin (or to taste)
1/8-1/4 teaspoon cayenne pepper (use 1/8 tsp for less spicy taste)
1 -2 cup shredded mozzarella cheese

Steps:

  • Set oven to 350 degrees.
  • In a large skillet or Dutch oven, heat the oil with water over medium heat.
  • Add in the sliced mushrooms, green bell peppers, onion and garlic; simmer stirring often until onion is tender (about 10 minutes).
  • Add in the tomatoes (with juice, and break up slightly with a fork), beans, rice, chili powder, cumin and cayenne; mix to combine.
  • Simmer covered for about 25 minutes, or until rice is tender, and the liquid is absorbed.
  • Transfer to a large greased baking dish.

2 lbs lean ground beef (browned with onion)
1 small diced onion
2 packages enchilada sauce/or 2 cans (prepared / heated and set aside)
1 can bush's chili beans with sauce (hot or mild, your choice)
1 8oz pkg. mexican or taco cheese (shredded)
1 8oz pkg. cobly-monterey jack cheese (shredded)
garnish ingredients: (below)
shredded lettuce, diced tomatoes, diced green onions,
sour cream, jalapeno pepper rings, black olives, guacamole, salsa (you choose)
optional- western dressing

Steps:

  • 1. Pre-heat oven at 350 degrees Brown ground beef with onion .. drain excess grease. Using approx a 9 x 12 baking dish spread approx 1/2 cup of enchilada sauce with back of spoon about bottom of baking dish ( you might have to add a couple extra tbs ) place corn tortillas (over lapping a bit) over sauce enough to cover bottom of baking dish, spoon 1/2 of beef mixture over tortillas. Add chili beans with sauce in spoonfuls to beef (beans won't cover all of the beef), spoon over approx 1/2 cup of enchilada sauce, sprinkle entire bag of Mexican/taco cheese ( you can use less).. add another layer of tortillas, add remaining beef , remaining enchilada sauce (hold back some if too much) and sprinkle Colby-Monterey Jack cheese over entire casserole. (you can use less)
  • 2. Place casserole in oven , bake for approx 30 minutes or until cheese begins to bubble and brown . Remove from oven let cool a few minutes before cutting into , top with favorite garnishes. Serve with fried or Spanish rice on side.
  • 3. Suggestion: Try a bit of Western dressing over lettuce garnish. It's really good !! Note: place garnishes in divided serving tray .. makes it easier to pass around / help self.
