EASY BAKED MEXICAN RICE



Easy Baked Mexican Rice image

Simple 5 minute prep, plop it in the oven and you're good to go!

1 8 oz can fire roasted tomatoes (undrained )
2 cups chicken broth
1.5 cups long grain rice
1 tbsp garlic powder
1 tbsp paprika (smoked or unsmoked, you decide!)
1 tsp chili powder
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees farenheit.
  • Combine all ingredients into casserole dish & stir. Cover tightly with foil.
  • Bake for 30-35 minutes or until rice is done and fluffy. Tomatoes will rise to top; stir in before serving and top with cheese.*Bake time depends upon oven.

2 cups cooked brown rice (or quinoa or other grain of choice-about 2/3 cup uncooked)
1 tablespoon olive oil
1 yellow onion (chopped)
1 green bell pepper (chopped)
1 red bell pepper (chopped)
1 pound lean ground beef (or swap ground chicken or ground turkey)
2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
2 cloves minced garlic (about 2 teaspoons)
1 cup plain nonfat Greek yogurt
1 can reduced fat refried black beans (15 ounces)
3/4 cup freshly grated sharp cheddar cheese (divided)
3/4 cup freshly grated mozzarella cheese (divided)
1 10-ounce tomatoes with green chiles (such as Rotel)
Fresh cilantro (for serving)
Chopped green onions (for serving)

Steps:

  • Be sure to cook your rice if you haven't already (if you are just reading this and just now realized you don't have any cooked rice and don't want to wait, consider switching to quinoa, which cooks much more quickly than brown rice. Instant brown rice also works in a pinch).
  • Preheat the oven to 350 degrees F. Coat a large casserole dish (9x13 inch or similar) with nonstick spray and set aside.
  • In a Dutch oven or large, deep skillet, heat the olive oil over medium high. Add the onion, green bell pepper, and red bell pepper. Sauté until slightly softened, about 5 minutes.
  • Add the beef, chili powder, cumin, salt, black pepper, and cayenne pepper. Continue to sauté until the beef is cooked through and no longer pink, about 4 to 5 minutes. Add the garlic and cook just until fragrant, about 1 additional minute.
  • Remove from the heat. Stir in the rice and Greek yogurt until evenly combined. Taste and adjust seasoning as desired.
  • Assemble the casserole: Spread the beans into an even layer in the prepared baking dish.
  • Sprinkle 1/4 cup cheddar cheese and 1/4 cup mozzarella cheese over the beans.
  • Scatter the tomatoes with green chilis over the top.
  • Spoon the rice and ground beef mixture on top of the tomatoes, spreading it into an even layer.
  • Top with remaining 1/2 cup cheddar and 1/2 cupmozzarella.
  • Bake the casserole, uncovered, until the cheese is melted and the casserole is hot, about 15 minutes.
  • Turn the oven to broil, then continue cooking until the cheese is lightly browned, about 3 to 4 additional minutes, watching carefully so that the cheese does not burn.
  • Let rest 5 minutes, sprinkle with chopped cilantro and green onions, and serve.

RICE
2 c water
1 1/2 Tbsp butter
1 tsp salt
1 c long-grain white rice
MIXTURE
2 poblano chiles, fresh, sometime called pasillas
1 Tbsp vegetable oil
1/4 c onion, chopped, plus
2 Tbsp onions, chopped
1 garlic clove, chopped
3/4 c whole kernel corn, canned and drained
1/2 c sour cream
1/4 c fresh cilantro, chopped
2 1/4 c sharp white cheddar cheese, grated, about 9 ounce

Steps:

  • 1. Char chiles over gas flame or in broiler until blackened on all sides, turning occasionally.
  • 2. Wrap in plastic and cool 10 minutes. Peel, seed and chop chiles.
  • 3. Bring 2 cups water, butter and salt to boil in heavy medium saucepan. Add rice, return to boil.
  • 4. Cover, reduce heat to low, and simmer until all liquid is absorbed and rice is tender, about 16 minutes.
  • 5. Transfer rice to large bowl; cool rice, stirring occasionally with fork.
  • 6. Butter 2-quart shallow baking dish.
  • 7. Heat oil in medium skillet over medium heat.
  • 8. Add 1/4 cup onion and garlic, sauté until translucent, about 3 minutes.
  • 9. Add chopped chiles; sauté 1 minute.
  • 10. Add chile mixture and corn to rice in bowl.
  • 11. Whisk sour cream, cilantro and 2 tablespoons chopped onion in small bowl.
  • 12. Add sour cream mixture and cheese to rice, stir.
  • 13. Transfer rice mixture to prepared dish.
  • 14. (Can be made 1 day ahead. Cover and chill. Let stand 2 hours at room temperature before continuing).
  • 15. Preheat oven to 325°F Bake rice until sides are light brown and mixture is heated through, about 25 minutes.

2 cups water
2 (16 ounce) cans chili beans, undrained
1 (8 ounce) can tomato sauce
¾ cup water, or more as needed
1 (8 ounce) container sour cream
1 cup crushed corn chips, or to taste
1 cup shredded Mexican cheese blend

Steps:

  • Bring rice and 2 cups water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir chili beans, tomato sauce, and 3/4 cup water through the cooked rice; bring to a simmer over medium heat. Pour rice mixture into a 9x13-inch baking dish. Spread sour cream over the rice mixture. Sprinkle crushed corn chips over the sour cream layer; top with Mexican cheese blend.
  • Bake in preheated oven until heated through and the cheese is melted, about 15 minutes.

1/2 cup reduced-fat cheddar cheese or 1/2 cup monterey jack cheese, shredded
4 ounces green chilies, chopped
4 green onions, chopped
2 ounces red peppers, chopped
1 cup sour cream
3 tablespoons recaito (cilantro-based seasoning)
1/2 teaspoon cumin
chili powder, to taste
salt, to taste
1/4 teaspoon pepper (or more, to taste)
red pepper flakes, to taste

Steps:

  • Preheat oven to 375°F.
  • In a medium bowl, combine cooked rice with cheese, chilies, and green onions.
  • Mix together.
  • In a small bowl, stir together sour cream, Recaito, cumin, chili powder, salt and pepper.
  • Add to rice mixture and stir thoroughly.
  • Spray an oven-proof casserole dish with vegetable oil spray.

1 lb ground beef
1 cup long grain rice
2 cups water
1 (16 ounce) jar salsa
1 (11 ounce) can mexicorn
1 teaspoon chili powder
1/2 teaspoon salt
1 cup cheddar cheese, shredded

Steps:

  • Place the 2 cups of water and long grain rice in a medium sauce pan and bring to a boil. Reduce heat to a simmer, place a lid on, set timer for 20 minutes and cook rice until done.
  • Preheat oven to 350°F.
  • In a skillet, brown ground beef and drain. Place in a large mixing bowl.
  • In large mixing bowl, add the jar of salsa to the ground beef. Also add chili powder, Mexicorn, rice and salt. Mix with a wooden spoon until combined well.
  • Spray a 2 quart casserole dish. Put rice mixture into dish. Cover with a lid or foil and bake in preheated oven for 30 minutes.
  • At 30 minutes, take off lid/foil. Add shredded cheddar cheese evenly over top and bake for an additional 5 minutes.
  • Remove from oven and serve.
