What's the best thing about being a chef? It's being able to name your dishes anything you want! The exotic, tropical tang of the fruit and the richness of the wild salmon work wonderfully together. The 'bango' comes from the spicy sweet pepper jam I use to bind the fresh mango relish.

1 mango - peeled, seeded and diced
2 tablespoons lime juice
2 tablespoons red bell pepper and ancho chili pepper jam
2 tablespoons chopped fresh cilantro
2 salmon fillets, skin removed
sea salt to taste
2 teaspoons vegetable oil

Steps:

  • Stir mango, lime juice, pepper jam, and cilantro together in a bowl. Cover the bowl and refrigerate for relish flavors to combine, about 30 minutes.
  • Season salmon fillets with sea salt.
  • Heat oil in a large non-stick skillet over medium-high heat until oil begins to smoke. Place salmon, flesh-side down, in the hot skillet and cook until edges are just starting to cook through, about 2 minutes. Flip fillets, remove skillet from heat, and let fillets sit in the hot pan until cooked through, 2 to 3 minutes more. Transfer to a plate and top with chilled mango relish.

3/4 cup pineapple juice
1 tablespoon soy sauce
1 teaspoon grated ginger
1 clove garlic, minced
2 tablespoons mirin
4 salmon fillets
2 mangos, peeled and diced
1/4 cup minced red onion
1/2 tomato, diced
1 whole habanero pepper, seeded and diced
1/4 cup chopped fresh cilantro leaves
2 tablespoons fresh lime juice
1 teaspoon grated ginger
1/2 teaspoon salt
2 tablespoons olive oil
1 tablespoon paprika
1 tablespoon brown sugar
1 tablespoon ground cumin
1/2 tablespoon chopped fresh cilantro leaves
Salt and pepper

Steps:

  • Preheat a grill.
  • Pineapple Marinade:
  • Whisk all the ingredients together thoroughly in a non-reactive baking dish. Add the fillets to the marinade and turn to coat. Let marinate while you prepare the salsa.
  • Mango-Habanero Salsa:
  • Combine all of the ingredients for the salsa in a bowl. Stir gently to combine. Set aside while you prepare the rub.
  • Barbeque Rub:
  • Combine all of the ingredients for the rub in a bowl. Stir until well mixed.
  • Take the fillets out of the marinade and coat with the rub on both sides. Grill the fillets for 5 to 7 minuets on each side or until flaky. Serve with salsa over top.

1 cup mango nectar
1 mango, diced
1/2 cup all-purpose flour
1/2 cup cornmeal
2 teaspoons sugar
1 teaspoon salt
4 (6-ounce) center-cut salmon fillets with skin
Freshly ground black pepper
1 tablespoon extra-virgin olive oil
1 tablespoon butter

Steps:

  • In a small saucepan over high heat, bring mango nectar and mango to a boil. As mango begins to break down, press down on it with a fork or potato masher, to mash it. Continue cooking until mango cooks down to form a chunky puree, about 15 minutes. Remove half to serve as a sauce. Set the other half aside for dredging.
  • On a large plate, mix together flour, cornmeal, sugar and salt.
  • Preheat a large skillet.
  • Season salmon with salt and freshly ground black pepper. Brush glaze over top of salmon, then dredge in cornmeal mixture. Add oil and butter to skillet. Over high heat, sear salmon cornmeal mixture face down until golden, about 6 to 8 minutes for medium rare, flipping halfway through to crisp skin.

I love the combination of tarragon and Italian parsley, but I've used herbs like basil and thyme, which worked wonderfully as well. As far as the fish goes, a center-cut salmon filet is a perfect thickness for this, but other similarly shaped seafood will work.

2 (8 ounce) center-cut salmon fillets, with skin
¼ teaspoon kosher salt
1 teaspoon vegetable oil
1 clove garlic, sliced
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh flat-leaf parsley
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon fresh lemon juice
1 pinch cayenne pepper

Steps:

  • Season salmon fillets with kosher salt. Line a baking baking sheet with foil and brush lightly with vegetable oil.
  • Preheat oven's broiler on high and set the oven rack about 8 inches from the heat source.
  • Process garlic, tarragon, and parsley in a blender or mortar and pestle to form a loose paste.
  • Mix mayonnaise, Dijon mustard, lemon juice, and cayenne pepper into garlic paste until combined.
  • Place salmon fillets skin side down on the baking sheet. Spoon herb spread over the top and sides of each fillet.
  • Cook under the preheated broiler until fillets are well-browned, about 5 minutes. Turn the broiler off and turn the oven to 350 degrees F (175 degrees C).
  • Bake until the internal temperature of the salmon is 130 degrees F (55 degrees C) and salmon flakes easily with a fork, about 3 to 4 minutes.

I found this in World Jewish Digest by Rachel Burstyn as part of her article "The 411 on an Easy Fast". This was really yummy. Even with a store bought salsa it was still great.

6 salmon fillets
6 pinches sea salt
6 pinches pepper
6 pinches garlic powder
sesame seeds
1 1/2 cups finely diced mangoes (2 mangoes)
3/4 cup finely diced red pepper
3 tablespoons minced red onions
3 tablespoons minced parsley
1/4 teaspoon sea salt
3 tablespoons extra virgin olive oil

Steps:

  • To make the mango salsa: combine all ingredients in a small bowl, and refrigerate for about 20 minutes.
  • For the baked salmon: preheat oven to 400 degrees.
  • Place fillets on a baking sheet lined with parchment paper.
  • Season each fillet with a pinch of salt, pepper, and a large pinch of garlic powder.
  • Cover with seasame seeds.
  • Bake for 10-12 minutes.
  • Serve with mango Salsa.

This is an incredibly simple recipe that tastes delicious. Accompany with rice for a quick and healthy main course. Easily adjustable for however many people you have)

12 -16 ounces salmon fillets (6-8 oz per person, thin filets are better because they will cook more evenly)
2/3-1 cup mango juice (1/3 - 1/2 cup per person, either puree your own from fresh mangoes or Goya mango juice will do just)
scallion, chopped (for garnish, approximately a small handful per fillet)
olive oil (small amount for cooking)

Steps:

  • The skin will stick to the pan, so if it comes off easily, trim the skin off the salmon filets before cooking.
  • Otherwise, just wait for it to come off during the cooking process.
  • Heat enough oil to coat the pan, and then add the salmon fillets.
  • Pour approximately 1/3 the mango juice over the filets, then after a few minutes (3-5 depending on how thick the fillet is), flip over and add another 1/3 of the mango juice to the pan.
  • Cook the fillet until no longer pink, then remove from the pan.
  • Sprinkle with chives and serve with rice.
