This recipe, brought to The Times in a 1991 article about the increasing popularity of goat cheese, is simple and full of bright flavors and satisfying textures. Feta, the cheese traditionally used in this classic salad, would be perfectly appropriate (and delicious), but we recommend giving goat cheese a try. The silken texture of the goat cheese contrasts beautifully with the lively crunch of the vegetables.

Kosher salt
1 garlic clove, halved
4 cups romaine lettuce, rinsed, dried and torn into small pieces
8 medium-sized radishes, sliced
1 small red onion, sliced paper-thin and separated into rings
6 scallions, trimmed and chopped
1 small green pepper, cored, seeded and sliced into thin strips
1 pint ripe cherry tomatoes, hulled and halved
1 teaspoon dried oregano
1 tablespoon finely chopped fresh mint
1 tablespoon finely chopped fresh dill
1/2 cup fruity extra-virgin olive oil
3 tablespoons red wine vinegar
Salt and freshly ground black pepper
6 ounces dried textured plain goat cheese, crumbled
8 Greek or Italian black olives in oil, drained
4 to 8 anchovy fillets drained

Steps:

  • Sprinkle a little kosher salt into a large glass or ceramic salad bowl. Rub the cut side of the garlic over the salt. Discard the garlic.
  • Place the lettuce, radishes, onion, scallions, green pepper and tomatoes in the bowl. Add the oregano, mint and dill.
  • Shortly before serving add the olive oil, toss, then add the vinegar. Season the salad to taste with salt and pepper.
  • Crumble the goat cheese over the salad, then arrange the olives and anchovy fillets on top. Toss again at the table before serving.

1 red pepper (seeds removed and chopped)
1 orange pepper (seeds removed and chopped)
1 large tomato (chopped)
5 ounces goat cheese (cubed)
1 lemon (cut in half)
1 cucumber (sliced and quartered)
1 cup Kalamata olives (pitted and drained)
1 red onion (sliced)
1/2 cup olive oil
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon salt

Steps:

  • Roasted Greek Salad with Lemon Dressing
  • Preheat oven to 475 and line a baking sheet with parchment paper.
  • Prep all vegetables as written above in ingredient list.
  • Add chopped red and orange peppers, diced tomatoes and cubed goat cheese and mix together.
  • In a small bowl, combine olive oil, oregano, garlic powder and salt and mix well.
  • Drizzle half of the oil mixture onto the vegetables on the baking sheet and use hands to combine.
  • Slice a lemon in half and place onto the baking sheet with inside facing up.
  • Roast Greek vegetables for 17-20 minutes.
  • Remove sheet pan from oven.
  • Carefully squeeze lemon (it is hot) into oil mixture and whisk the lemon and olive oil dressing together.
  • Add raw quartered cucumbers, drained and pitted Kalamata olives and raw sliced red onion and drizzle entire pan with remaining oil and gently toss with a spatula to combine.
  • Serve Greek Salad warm or room temperature.

2 large tomatoes,cut into chunks
1/4 cup fresh chopped mint
1 tsp fresh thyme leaves
1/2 tsp Mediterranean sea salt
1/4 cup Goat Cheese (cubed)
1 tbsp fresh lemon juice
2 tbsp extra virgin olive oil
1/4 cup sliced green onions (scallions)
1/2 cup of diced green peppers
1/2 cup Kalamata olives
1/2 cups cucumber (diced)

Steps:

  • Cut up tomatoes and place in medium-sized bowl.
  • Add half the mint, half the thyme, the salt, and a bit of fresh-ground black pepper. Combine ingredients and let sit at room temperature for about one hour.
  • In a separate bowl, combine goat cheese, remaining mint, remaining thyme, and a bit more fresh-ground pepper. Let sit at room temperature about one hour.
  • Cut up cucumbers and green peppers into bite-sized pieces. Slice the green onions and add to the cucumbers and green peppers.
  • Add in the combined tomato mixture, Goat cheese, mixture, cucumbers, green onions, Green peppers and olives in large bowl. Let sit at room temperature for a few minutes.
  • Just before serving, the olive oil and fresh lemon juice and mix gently with salad ingredients. (You may not need all the dressing depending on how wet you prefer your salad.) Season with salt and more fresh ground black pepper if desired and serve.

1 tablespoon freshly squeezed lemon juice
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper

1/4 cup extra-virgin olive oil
8 large leaves red leaf lettuce, sliced crosswise
1/4 large red onion, thinly sliced
1/2 green bell pepper, cut into large dice
1 vine-ripened tomato, cut into wedges
1/2 English cucumber, halved lengthwise, cut into 1/2-inch pieces
6 Kalamata olives
2 ounces feta cheese, crumbled

Steps:

  • Combine the vinegar, lemon juice, oregano, and salt and pepper to taste in a small bowl and whisk together. Add the oil in a steady stream, whisking constantly.
  • Combine the lettuce, onion, bell pepper, tomato, cucumber, olives and feta in a large salad bowl. Pour the dressing over and toss until all of the ingredients are well coated. Taste and adjust the seasonings, adding more salt or lemon juice as desired.

SALAD WITH WARM GOAT CHEESE



Salad with Warm Goat Cheese image

1 (11-ounce) log plain or herbed Montrachet
2 extra-large egg whites, beaten with 1 tablespoon water
Fresh white bread crumbs
2 tablespoons good cider vinegar
2 tablespoons good Champagne vinegar
Pinch sugar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 extra-large egg yolk
1 cup good olive oil
Enough mixed salad greens for 6 servings
Olive oil and unsalted butter, for frying

Steps:

  • Slice the Montrachet into 12 (1/2-inch-thick) slices. (The easiest way to slice goat cheese is to use a length of dental floss.) Dip each slice into the beaten egg whites, then the bread crumbs, being sure the cheese is thoroughly coated. Place the slices on a rack and chill them for at least 15 minutes.
  • For the dressing, place the vinegars, sugar, salt, pepper, and egg yolk in the bowl of a food processor fitted with a steel blade and blend for 1 minute. With the motor running, slowly pour the olive oil through the feed tube until the vinaigrette is thickened. Season, to taste.
  • Toss the salad greens with enough dressing to moisten, then divide them among 6 plates.
  • Melt 1 tablespoon oil and 1 tablespoon butter in a saute pan over medium-high heat until just under smoking. Cook the goat cheese rounds quickly on both sides until browned on the outside but not melted inside. Top each salad with 2 warm rounds and serve.

1 1/2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
2 garlic cloves, minced
1 teaspoon dried oregano (Mediterranean is best)
1 head lettuce, torn into bite-size pieces ((I use Romaine)
3 large plum tomatoes, seeded and coarsely chopped
1 English cucumber, peeled and coarsely chopped (the long, thin, almost seedless ones)
1 medium red onion, cut into thin rings and soaked for 10 minutes in a small bowl of ice water to make it less sharp
1 small green pepper, cut into thin rings
3/4 cup kalamata olive
3/4 cup crumbled feta cheese

Steps:

  • Whisk dressing ingredients together until blended.
  • Season to taste.
  • Drain onion from ice water and pat dry with paper towels.
  • Combine all salad ingredients, except cheese, in large bowl.
  • Toss with dressing.
  • Sprinkle cheese over and serve.

1/2 lb feta cheese, 1/2-inch diced (not crumbled)
1/2 cup kalamata olive, pitted
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon Dijon mustard
1/4 cup good red wine vinegar
1 teaspoon kosher salt (NOT table salt or sea salt)
1/2 teaspoon fresh ground black pepper
1/2 cup olive oil

Steps:

  • Place the cucumber, peppers, tomatoes and red onion in a large bowl.
  • For the vinaigrette, whisk together the garlic, oregano, mustard, vinegar, salt and pepper in a small bowl. Still whisking, slowly add the olive oil to make an emulsion.
  • Pour the vinaigrette over the vegetables.
  • Add the feta and olives and toss lightly.
  • Set aside for 30 minutes to allow the flavors to blend. Serve at room temperature.
  • Tips from me:
  • To reduce the sharpness of the onion, soak the sliced onion in ice cold water for 30 minutes and pat with paper towels to dry, before adding to salad.
  • To cut down on prep time, place a single layer of cherry/grape tomatoes between two Tupperware lids (or flat plates, etc.) and slice through all of them at once, using a sharp knife.
