2/3 cup TACO BELL® Thick & Chunky Salsa
2/3 cup A.1. Original Sauce
1-1/2 lb. lean ground beef
1 egg
1/2 cup dry bread crumbs

Steps:

  • Heat oven to 425°F.
  • Combine salsa and A.1. Mix 1/3 cup with meat, egg and bread crumbs just until blended.
  • Shape into 48 (1-1/4-inch) meatballs; place on rimmed baking sheet sprayed with cooking spray.
  • Bake 12 to 15 min. or until done (160ºF). Place meatballs in serving dish; add remaining salsa mixture and stir gently to coat.

I started making these meatballs years ago and brought them to every event imaginable. I never brought home leftovers and have been asked for the recipe so many times, I started bringing copies with me. Depending on the crowd you are going to feed, you can make these mild or spicy. Easy to make and they freeze well for pre-planning.

1 1/2 lbs ground beef
1 1/2 lbs ground pork
2 eggs
1 1/2 cups dried breadcrumbs, plain
1 teaspoon salt
1 teaspoon black pepper, ground
2 garlic cloves, minced
1/2 cup water
2 (28 ounce) cans diced tomatoes with juice
1 -3 chipotle chile in adobo
4 teaspoons vegetable oil
2 small onions, minced
4 garlic cloves, minced
2 teaspoons ground cumin
2 cups chicken broth
1 teaspoon salt
1/2 cup fresh cilantro, chopped (optional)

Steps:

  • In a large bowl, using your hands, mix together the ground beef and pork, eggs, bread crumbs, 1 t. salt, pepper, 2 cloves of minced garlic, and water. Form into 1 inch meatballs and set aside on a piece of waxed paper.
  • Pour the diced tomatoes into the container of a blender along with the chipotle chilies. Blend until smooth, and set aside.
  • Heat the oil in a large Dutch oven over medium high heat. Add the onion; cook and stir until tender. Stir in the remaining garlic and cumin, and cook for a few minutes to release the aromas. Pour in the tomato mixture and chicken broth. Season with the remaining teaspoon salt, and mix well. Bring to a boil, then simmer over low heat while you brown the meatballs.
  • Heat a large skillet over medium-high heat. Spray with cooking spray. Add meatballs, but do not crowd them. Fry them in 2 batches if necessary. Cook, stirring occasionally until browned on the outside. Remove from the skillet, and place into the pot of simmering sauce. Let the meatballs simmer in the sauce for about 30 minutes. Longer will not hurt them.
  • For special occasions, serve the meatballs and sauce in a chafing dish. Garnish with chopped cilantro.

1 1/2 cups masa harina (finely ground yellow cornmeal)
1/2 cup flour
2 teaspoons salt

2 (16 ounce) cans tomatoes, chopped
1 onion, grated
2 teaspoons salt (or to taste)

Steps:

  • Combine all meatball ingredients.
  • Shape into marble sized balls; set aside.
  • In a blender, combine all sauce ingredients and blend for about 2 seconds; then heat the sauce in a heavy pot.
  • Gently fold in the meatballs and bring to a boil.
  • Reduce heat to low and simmer, uncovered, about 20 minutes or until meat is no longer pink and sauce thickens to desired consistency.
  • Serve in a chafing dish with colorful picks.

12 unsalted saltine crackers
1/2 teaspoon salt
1 1/2 teaspoons chili powder
1 pinch red pepper flakes
2 tablespoons milk
1 egg, beaten
1 tablespoon minced onion
1 tablespoon minced green pepper
1 lb lean ground beef
1 tablespoon vegetable oil
1 tablespoon vegetable oil
1 clove garlic, minced
1/4 cup onion, finely chopped
1/4 cup celery, finely chopped
1 1/2 tablespoons all-purpose flour
1 (10 ounce) can beef broth
1 (10 ounce) can water
3/4 cup tomato sauce
pepper, to taste
1 teaspoon chili powder
1/2 teaspoon ground cumin

Steps:

  • For meatballs: Make crumbs of crackers.
  • Combine crackers, salt, chili powder, pepper flakes, milk, and egg.
  • Stir in onions and green pepper.
  • Add ground beef and mix well.
  • Form into 30-35 meatballs.
  • Heat oil in a skillet.
  • Add meatballs and fry over medium heat until done.
  • Remove from pan.
  • Drain grease from pan and wipe out with a paper towel.
  • For the sauce: Heat oil in same skillet meatballs were cooked in.
  • Saute garlic, onion, and celery until soft.
  • Stir in the flour.
  • Gradually stir in the beef broth, stirring well.
  • Stir in tomato sauce, chili powder, cumin, and pepper.
  • Cook until well combined and bubbly.
  • Add meatballs.
  • Simmer, uncovered, 15-20 minutes, until sauce is a suitable consistency.

2 tablespoons canola oil
1 medium red onion, finely diced
1 jalapeno, finely diced
2 cloves garlic, finely chopped
2 tablespoons ancho chili powder
1/2 teaspoon ground coriander
1 to 2 chipotle peppers in adobo, processed until smooth
One 28-ounce can plum tomatoes and their juice, processed until smooth
Kosher salt and freshly ground black pepper
Clover honey, to taste, optional
1 to 2 tablespoons Mexican crema
Fresh cilantro leaves, for garnish
1/3 pound chorizo, very cold, cubed
1/3 pound chuck, very cold, cubed
1/3 pound pork butt, very cold, cubed
3 cloves garlic, finely chopped
1 large egg, lightly beaten
1/2 cup finely chopped cilantro, plus extra for garnish
1/4 cup freshly grated Cotija cheese
1 tablespoon New Mexico chili powder
2 teaspoons Mexican oregano
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
3/4 cup panko breadcrumbs
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 3/4 cups chicken stock
Queso fresco, for garnish
Fresh cilantro leaves, for garnish

Steps:

  • For the red chile tomato sauce: Heat the oil in a 12-inch high-sided saute pan over high heat. Cook the onions and jalapenos until softened, about 5 minutes. Add the garlic and cook 30 seconds, and then stir in the chili powder and coriander and cook 1 minute. Pour in 1 cup water and cook until reduced. Mix in the chipotles and tomatoes and bring a boil, and then reduce to a simmer and cook until the sauce is slightly thickened, about 20 minutes. Season with salt, black pepper and honey, if using. Whisk in the crema, followed by the cilantro, and adjust the seasoning, if needed.
  • For the mexican meatballs: Grind the cubed meats using a hand-operated meat grinder fit with a medium dye. Combine the ground meats with the garlic and egg in a large bowl, and then add in 1/4 cup of the cilantro, the cheese, New Mexico chili powder, Mexican oregano, cumin and cayenne pepper. Gently mix together until combined. Begin mixing in the breadcrumbs, 1 tablespoon at a time, until the mixture holds together. Mix in some salt and black pepper, and form the meat into 2-inch balls. Heat the olive oil in a medium saute pan over medium heat. Cook the meatballs, turning occasionally, until brown all over, 3 to 4 minutes. Pour in the chicken stock and cook until the liquid is mostly reduced and the meatballs are just cooked through, 5 to 7 minutes longer. Transfer to a serving platter and top with the Red Chile Tomato Sauce, queso fresco and additional cilantro leaves.

A simple spicy meatball recipe that makes a great alternative to beef chilli

1 ½ tbsp olive oil
1 large onion , finely chopped
400g beef mince
50g fresh white breadcrumb
1 tsp each ground cumin and coriander
1 ½ tbsp chipotle paste
200g basmati rice
400g can chopped tomato
400g can kidney bean , drained and rinsed
small handful coriander , to serve

Steps:

  • Heat 1 tbsp of the oil in a large frying pan. Cook the onion for 8-10 mins until soft, then remove from the pan.
  • Meanwhile, place the mince, breadcrumbs, spices and chipotle paste in a bowl, season generously and mix thoroughly. Roll mixture into 20 walnut-sized meatballs. Add the remaining oil to the pan and fry the meatballs for about 8 mins until brown all over.
  • Meanwhile, cook the rice following pack instructions. Return the onion to the pan, adding the tomatoes, as well as a can full of water. Simmer for 5 mins, then add the kidney beans and cook for a further 10 mins, until the sauce has thickened and the meatballs are cooked through. Season the meatballs, scatter with coriander and serve with the rice.

This recipe is wonderful as an appetizer, served with crusty bread, or as a main dish, served in sub rolls and sprinkled with cheese, or you can add a (15 oz.) can of beans and serve as a meatball chili. It is one of my favorite recipes because it is so easy to prepare and so versatile. I often keep this hot in a crockpot to take to pot lucks and a get together with family and friends.

1 lb ground beef
1 envelope taco bell taco seasoning mix (or taco seasoning mix of your choice)
1 egg, beaten
1/2 cup plain fresh breadcrumb
1/4 cup parmesan cheese
2 tablespoons peanut oil
salt and pepper
1 (16 ounce) jar salsa, mild or hot
1 (14 1/2 ounce) can tomato sauce
extra parmesan cheese, as a garnish (optional)

Steps:

  • Combine ground beef, 1/2 of the taco seasoning package, 1/2 cup salsa, bread crumbs, cheese, egg and salt/pepper to taste.
  • Shape mixture into 1 1/2 inch balls and brown in large skillet in the peanut oil.
  • Drain meatballs on paper towels.
  • In a 2 quart sauce pan, add the tomato sauce, remaining salsa, taco seasoning and meatballs.
  • Simmer for 30 minutes.

1 lb ground chuck
1 lb ground pork
1/2 cup minced flat leaf parsley
1 large white onion, grated
3 garlic cloves, minced
1 teaspoon dried Mexican oregano (or to taste)
1/2 teaspoon ground cumin (or to taste)
3 eggs, beaten
3 slices coarse white bread, crust removed and soaked in 1/3 cup milk
salt & freshly ground black pepper, to taste
6 large ripe tomatoes or 1 (28 ounce) can fire roasted whole tomatoes, drained
4 garlic cloves, peeled
1 medium onion, peeled, quartered
2 1/2 cups chicken broth
1 -3 canned chipotle chillies in adobo seasoning, to taste
1 teaspoon ground cinnamon (or 2-3-inch piece Mexican cinnamon bark)
2 teaspoons coarse salt (kosher, or to taste)
1 teaspoon fresh ground black pepper (or to taste)
1/2 cup olive oil or 1/2 cup vegetable oil
1 sprig mint or 1 pinch ground dried mint

Steps:

  • For the meatballs, combine all meatball ingredients in a large bowl, mix with hands. Refrigerate and cover for 1 hour.
  • Meanwhile for the sauce, if using fresh tomatoes, place on a cooking sheet and broil, turning once or twice until the skins bister and blacken, about 10 minutes. Peel the skin off tomatoes and place the peeled (or canned tomatoes) in to a blender or food processor.
  • Put the garlic and onion into a hot, dry skillet and cook, turning occasionally, over medium heat, until the garlic is lightly browned and the onion is lightly scorched,.
  • Add to the blender along with 1/2 cup broth, chipotles to taste (start with 1), cinnamon, salt and pepper. Blend until smooth, Taste, and add more chipotles if desired.
  • Heat oil in a large , heavy and deep skillet over medium heat until quite hot but not smoking. Add the tomato mixture and "fry" until it thikckens (it will splatter), about 10 minutes.
  • Stir in the remaning 2 cups broth and heat to a boil. Stir in mint. Taste again, adjust salt and pepper, and add some adobo from the canned chilies if not spicy enough.
  • Shape the meat mixture into meatballs (about 1 inch diameter), the mixture should make 60 meatballs. Add the meatballs to the sauce, Shake the pan once or twice in the first 5 minutes of cooking to prevent sticking. Simmer slowly until the meatballs are done, about 30 minutes.
