Steps:

  • Place the collard greens and ham hocks in a large pot. Mix in the chicken broth, water, and vinegar. Season with salt and pepper. Bring to a boil, reduce heat to low, and simmer 1 hour.

Collards are among the oldest members of the cabbage family! Vegetarians can skip the bacon and use smoke flavoring and use a veggie broth in place of the chicken broth. I find this is one green that you do have to cook a while. The flavor is between cabbage and kale. They are low in calories. A rich source of fiber, vitamin C and calcium, and protects you against cancer.

3 -4 slices cooked bacon, cut into small pieces
1 medium onion (sliced or chopped)
4 garlic cloves, minced
8 cups collard greens, tough stems removed and cleaned well
1 teaspoon crushed red pepper flakes
1 teaspoon seasoning salt
1 teaspoon pepper
1 1/2 cups chicken stock
1/4 cup light brown sugar (optional)

Steps:

  • In a deep pot brown bacon add onion and garlic and optional sugar to fried bacon.
  • Add collards layering with spices to fried bacon add broth and cover pot and cook until tender over medium heat for about 30 minutes.
  • Taste and adjust seasonings.

BRAISED COLLARD GREENS

Smoked ham hocks are the key ingredient to these tender braised greens. Inexpensive and full of flavor, these meaty pork knuckles typically require long, low simmering to release their smokey flavor, but if you have an Instant Pot they soften up in no time flat.

2 tablespoons unsalted butter
3 cloves garlic, smashed
1 large onion, chopped
Kosher salt and freshly ground pepper
1 tablespoon Cajun seasoning
3 smoked ham hocks (about 1 1/2 pounds)
4 cups low-sodium chicken broth
2 large bunches collard greens (about 3 pounds), chopped
1 cup apple cider vinegar

Steps:

  • Melt the butter in a large Dutch oven or other heavy pot over medium heat. Add the garlic, onion and 1 teaspoon each salt and pepper. Cook until the onion is softened, about 5 minutes. Stir in the Cajun seasoning and cook 30 seconds. Add the ham hocks, chicken broth and 4 cups water. Increase the heat to high and bring to a low boil. Reduce the heat to low and simmer until the ham is tender and falling off the bone, about 2 hours.
  • Remove the ham hocks from the liquid. Remove and discard the skin and bones. Roughly chop the meat into bite-size pieces. Return the meat to the cooking liquid along with the collard greens and vinegar. Increase the heat and bring the mixture to a boil. Reduce the heat and simmer, stirring occasionally, until the greens are tender, about 30 minutes. Serve the collards with some of the liquid.

3 bunches collard greens (about 2 lbs **See notes below)
2 cups onion (diced)
4 garlic cloves (minced)
1 green pepper (diced)
1 sweet bell pepper (diced)
1 tbsp jalapeno pepper (diced)
2 lbs whole smoked turkey wings
1 tsp cajun seasoning ((optional))
2-3 tsp crushed red pepper
2 tsp onion powder
2 tsp garlic powder
3 cups chicken broth (I used Better Than Bouillon )
2 tbsp distilled white vinegar
2 tbsp granulated sugar
salt for taste
pepper for taste

Steps:

  • To a large pot or dutch oven, add 1 tablespoon of vegetable oil over medium heat. Add the green peppers, sweet red bell peppers, jalapeño, and onions. Saute until soft. Add the minced garlic and saute for one minute.
  • In a large stock pot or dutch oven over medium heat, add the smoked turkey wings, crushed red peppers, the sauteed vegetables and chicken broth. Cover and simmer for about an hour.
  • Next, add the collard greens, vinegar, sugar, garlic powder, onion powder and salt and pepper to taste. Mix to combine. If the greens seem like too much. Keep stirring until they have wilted down. They should be able to fit once they have wilted down. Cover and simmer for 2 hours or until the meat has fallen completely off the bone. Once done. Serve immediately.

Collard Greens - This authentic Southern dish is slowly simmered in a savory and spicy broth loaded with ham hocks and delectable seasonings. It's a flavor-packed take on your favorite leafy greens. Even better, it pairs well with cornbread for that perfect soul-food meal!

2-3 ham hocks
2 pounds (908 g) collard greens
2-3 strips bacon, (thick-cut)
2 tablespoons (28 ml) cooking oil, (or more as needed)
1 large onion, (sliced)
1 tablespoon (8 g) garlic, (minced )
1-2 tomatoes, (diced (optional))
1 tablespoon (8 g) paprika
2 teaspoons (8 g) Creole Seasoning ((adjust to taste))
1-2 teaspoons (2-4 g) red pepper flakes, ( to taste)
1 tablespoon (8 g) chicken bouillon powder, (to taste)
½ lemon (freshly juiced)
5 cup (1.2 L) chicken broth, ( or more as needed)

Steps:

  • Start by boiling the ham hocks in a pot fully covered in water, bring to a boil, then lower heat and simmer for approximately 1½-2 hours or until the meat falls off the bone. The easiest way to do this is to use a pressure cooker. It's faster and takes me only about 12 minutes or less once it starts cooking. Let it cool, then cut the meat into bite-size pieces.
  • Remove leaves from the stem. Then wash, rinse and chop. Repeat until all the collard greens have been removed from its stem. Discard stem and reserve chopped leaves.
  • Heat up a medium or large dutch oven. Then add chopped bacon and cook for about 6-7 minutes or until brown.
  • Add about 1 tablespoon of oil - there should be about 2 tablespoons of grease in the pot.
  • Add onions, garlic, and ham hocks, then sauté for about 3-5 minutes.
  • Throw in tomatoes, paprika, Creole seasoning, and some pepper flakes. Sauté for another 2 minutes.
  • Finally, add the collard greens, chicken bouillon, and lemon. Pour in chicken broth or water. Lightly salt, if desired, or wait till the last few minutes of cooking.
  • Bring to a boil and simmer for about 45 minutes or more or until the greens are tender.
  • Serve warm with hot sauce and cornbread.

My Memaw was a great cook of southern soul food and she taught me this recipe. When I got married, I made it a tradition in my family. The kids know the minute they walk into the house that Dad's making greens (the aroma fills the air). And no matter where we have our holiday meals or who is in charge of the menu, I insist on bringing the greens.

3 bunches fresh collard greens
1/2 lb smoked bacon
1/3-1/2 cup sugar
salt
water

Steps:

  • Thoroughly wash greens in a sinkful of cold water.
  • Break stems off an inch or two below leaf and discard.
  • Tear/shred the leaves by hand and place them in a large cooking pot.
  • Add bacon, 1/4 cup of sugar, and about 2 tablespoons of salt.
  • Fill pot with water up to about 1 1/2 inches from top of pot.
  • Bring to a boil, then reduce heat, and simmer for about 2 hours, stirring occasionally (water will cook off, so add more if necessary).
  • After 2 hours, add more sugar (not more than 1/4 cup; I usually add slightly less) and more salt to taste.
  • Fill the pot back to about half-full with water.
  • Cover, boil, reduce heat, simmer, and stir occasionally for another 1 1/2-2 hours (if more water is needed, add only enough to keep about three fingers worth in the pot).
  • Serve with a slotted spoon to drain away water and eat'em up (some folks eat'em with tabasco or pepper sauce).
  • These are great as a side dish with fried chicken, country ham, meatloaf, turkey, roast, or as a companion to a big bowl of beans.
  • I usually enjoy the leftovers with nothing but a pan of cornbread.
