SOUTHWESTERN PORK STIR FRY WITH CREAMY CILANTRO POLENTA



Southwestern Pork Stir Fry with Creamy Cilantro Polenta image

Yield 4 servings

Number Of Ingredients 19

3 to 4 cups whole milk
3/4 cup whole grain polenta (not instant)
1 tablespoon salted butter
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped fresh cilantro
2 tablespoons olive oil
27.2 ounce Smithfield Mesquite Pork Loin Filet, trimmed and cut into 1-inch pieces
1 large zucchini, washed, trimmed and diced
1 small red bell pepper, seeded and cut into 1/4-inch strips
1 small yellow bell pepper, seeded and cut into 1/4-inch strips
1/2 small red onion, thinly sliced
1 cup fresh or frozen corn kernels
1 medium jalapeño pepper, seeded and thinly sliced
1 medium clove of garlic, minced
1 1/2 tablespoons freshly squeezed lime juice
1 teaspoon chili powder
salt and freshly ground black pepper to taste
1 teaspoon cornstarch dissolved in 1/2 cup chicken broth

Steps:

  • Prepare the Polenta: In a medium saucepan, bring 1 cup of milk to a boil. Whisk in the polenta and reduce the heat to low. Simmer for 3 to 5 minutes, stirring often until thickened. Add another 1 cup of the milk and stir. Continue to stir and simmer for 5 to 6 more minutes. Stir in another 1 cup of milk and continue to simmer, still stirring often, until the polenta is thick and creamy, 5 to 6 more minutes. Stir in the butter, salt, pepper and cilantro. Set aside while you make the stir fry. Prepare the stir fry: Heat the olive oil in a large skillet until hot. Add the pork to the skillet. Cook for 2 minutes, stirring often. Add all of the vegetables to the skillet. Sprinkle with lime juice, chili powder, and a sprinkle of salt and pepper. Cook for 3 to 4 minutes longer, stirring often, until the vegetables begin to soften and the pork cooks through. Add the broth to the skillet and cook just until the liquid comes to a boil and begins to thicken. Serve over polenta. HINT: If the polenta thickens too much upon standing, just add in some additional milk, heat and stir. It should easily re-gain its creamy consistency again.

1 pkg (16 oz.) penne pasta
2 pork tenderloins (1 lb.)
2 Tbsp olive oil
8 green onions, chopped
4 cloves garlic, minced
3 cans (14-1/2 oz) dices tomatoes with mild green chiles, undrained
2 cans (15 oz. each) black beans, rinsed and drained
1 pkg (16 oz.) frozen corn, thawed
1 jar (16 oz.) salsa
1 Tbsp chili powder
1 tsp salt
1 tsp ground cumin
1 tsp paprika or smoked paprika
1/2 tsp pepper
1/4 tsp cayenne pepper
1 Tbsp cornstarch
2 Tbsp cold water
Sour cream

Steps:

  • Cook pasta according to package instructions. Meanwhile, in a Dutch oven, cook pork in oil in batches over medium heat for 6-7 minutes or until juices run clear; return all to the pan. Add onions and garlic; cook 1 minute longer. Stir in the tomatoes, beans, corn, salsa and spices. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.
  • Combine the cornstarch and water until smooth. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until slightly thickened. Drain pasta; add to pork mixture and toss to coat.
  • Serve desired amount of pasta with sour cream. Cool remaining pasta; transfer to freezer containers. Cover and freeze for up to 3 months.

1 pound pork tenderloin, cut into bite-sized cubes
2 teaspoons ground cumin
1 teaspoon garlic powder
½ teaspoon dried oregano
1 pinch salt and ground black pepper to taste
¼ cup water
1 tablespoon tomato paste
2 tablespoons vegetable oil
1 green bell pepper, cut into 1-inch pieces
1 jalapeno pepper, sliced, or to taste
1 tomato, coarsely chopped
2 each green onions, sliced
½ cup chopped fresh cilantro

Steps:

  • Place pork in a medium bowl. Add cumin, garlic powder, oregano, salt, and pepper; mix to combine.
  • Mix water and tomato paste in a small bowl; pour over pork and mix well. Refrigerate for 20 minutes.
  • Heat oil in a large skillet over medium-high heat. Place pork in skillet and brown on all sides, 5 to 8 minutes. Add bell pepper and jalapeno pepper. Cover and cook until peppers are crisp tender and pork is cooked through, about 5 minutes. Add tomato, green onions, and cilantro; cover and cook until heated through, abut 1 minute.

Southwestern Pork Soup (For Crock Pot) image

This is a great soup, so flavorful and so easy. Even though the avocado, lime juice and cilantro are "garnishes," the flavor of the lime and the cilantro especially is very key to the balance of flavors. This is good enough for company, really yummy. I think you probably could get away with using chicken meat in this too, although I tried this using the pork. Another find from the Robin Miller show, with my adjustments.

1 -1 1/2 lb pork tenderloin, cut into 1-inch pieces
1 cup onion, chopped
1 green bell pepper (I used an orange one)
1 jalapeno pepper, seeded and minced
2 -4 teaspoons garlic, minced
1 teaspoon dried ancho chile powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
5 cups reduced-sodium chicken broth
1 (14 ounce) can diced tomatoes
1 (14 ounce) can pinto beans, rinsed and drained
1 avocado, diced, for garnish
1 cup fresh cilantro, chopped, garnish
1 lime, juice of, to 2 garnish
cheddar cheese, shredded, garnish (optional)
tortilla chips, garnish (optional)

Steps:

  • In the bottom of a slow cooker, combine pork, onion, bell pepper, jalapeño, garlic, chili powder, cumin, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper (measuring both the salt and pepper with real measuring spoons, leveled).
  • Stir to combine.
  • Add broth, tomatoes, and beans, cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
  • When ready to serve, test for seasonings, then ladle soup into bowls and top with avocado, some cilantro, and a squirt or two of lime juice over each serving.
  • Serve with some chips and a sprinkling of cheese too if desired.

This is a deliciously cheesy pasta casserole. If you can't find mini penne pasta in your grocery store, you can use small shell pasta or regular penne instead. I like to use "Recipe#111347" for the alfredo sauce.

1 lb mini penne pasta
1 lb lean ground beef
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1 (16 ounce) jar salsa
1 (16 ounce) jar alfredo sauce
4 eggs
2 cups Mexican blend cheese, shredded
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 tablespoon fresh parsley, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta according to package directions; drain.
  • Meanwhile, coat a 9-inch springform pan with cooking spray.
  • In large nonstick skillet over medium-high heat, cook beef with seasoning and salt until browned.
  • Stir in salsa; remove from heat.
  • In large bowl, mix Alfredo sauce, eggs and 1 cup cheese; stir in pasta.
  • In another bowl, toss spinach with 1/2 cup cheese.
  • To assemble, spoon half of pasta mixture, about 4 cups, into pan.
  • Sprinkle spinach mixture evenly over pasta.
  • Top with even layer of beef mixture.
  • Top with remaining pasta mixture.
  • Sprinkle with remaining 1/2 cup cheese.
  • Bake until hot in center and top is golden, about 1 hour.
  • Run sharp knife around edge of pan to loosen pasta.
  • Let stand 10 minutes.
  • Remove side of pan; sprinkle with parsley.

1 egg
1 lb ground pork

1/2 teaspoon dried oregano

1 (16 ounce) can low-sodium tomato sauce
8 ounces monterey jack cheese or 8 ounces cheddar cheese

Steps:

  • Preheat oven to 425°F Prepare pasta according to package directions; drain.
  • Whisk together the milk and egg and mix in the hot pasta in a greased 9 x 12 x 2-inch baking dish.
  • Cook the pork, onion, green pepper, garlic and jalapeño together ina large skillet over medium heat for about 6 minutes, until the pork is cooked through. Drain off excess fat. Stir the chilipowder, cumin, oregano, salt and pepper into the pork and cook forabout 2 minutes.
  • Spread the meat over the pasta in the baking dish. Sprinkle both cheeses evenly over the top. Bake in the lower third of the oven for about 10 minutes, until the cheese is melted and the casserole begins to bubble.
  • Let stand 5minutes before serving.

1/4 cup packed light-brown sugar
1/2 to 1 teaspoon cayenne pepper
Coarse salt and ground pepper
3 pounds boneless pork shoulder (Boston butt), cut into 4 equal pieces
1 1/2 cups cider vinegar
4 garlic cloves, minced
8 soft sandwich rolls, split
Store-bought barbecue sauce, for serving (optional)

Steps:

  • Preheat oven to 350 degrees, with racks in lower and upper positions. In a small bowl, combine sugar, cayenne, 1 tablespoon salt, and 1 teaspoon pepper.
  • Place pork in a 5-quart Dutch oven or large heavy-bottomed pot; rub with spice mixture.
  • In a medium bowl, combine vinegar, garlic, and 1/2 cup water; pour over pork. Cover pot, and place in oven on lower rack. Bake until pork is very tender and separates easily when pulled with a fork, 2 to 2 1/2 hours.
  • Transfer pork to a work surface, reserving pan juices. With two forks, shred meat. Transfer to a large bowl, and toss with pan juices to moisten (you may not need all the juices). Pile pork on rolls, and top with barbecue sauce, if desired.
