EASY SKILLET BREAD RECIPE
This easy homemade Skillet Bread recipe requires no kneading, no yeast, and is ready in 30 minutes or less. It's utterly delicious, simple, slightly chewy, and moist.

Steps:
- Preheat oven to 400F. Grease a 10-inch cast-iron skillet or spray an enameled cast-iron skillet with cooking spray.
- In a large mixing bowl, whisk together the flour, baking soda, salt, and sugar. Make a well in the center and add oil and honey and pour in the buttermilk. Stir just to combine.
- Transfer the batter into the prepared skillet. Using a spatula, evenly spread it into the bottom of the skillet.
- Bake at 400F for 15 minutes. Then lower the oven temperature to 350F and bake for an additional 10 minutes, or until golden.
- Once baked, immediately slide the bread onto a wire rack to cool. Serve in wedges or slices with butter, honey, or other favorites.

QUICK SKILLET BREAD
I just tried this recipe yesterday and it was great! Its from a food friend named Knoxcop. She is a master baker, so I knew the recipe would be delicious! This bread would be perfect to use with biscuits and gravy! You can add any topping you like! I added crispy fried smoked pork pieces!

Steps:
- 1. In a heavy 12 inch skillet (prefer non stick) heat 1 tablespoon of your fat.
- 2. Sift flour, soda and salt together.
- 3. Quickly stir in buttermilk until just moistened.
- 4. Place batter into the melted fat, spreading batter across pan.
- 5. Place lid onto skillet.
- 6. Cook bread, covered, over low to med heat for about 10-12 minutes.
- 7. Lift one side of the bread gently, with large turner, and flip. But add remaining Tbls. of oil to skillet before the flip.
- 8. This is when you add your toppings if desired!
- 9. Continue to cook other side for 10-12 minutes,
- 10. Cut into wedges and serve.
FRIED SKILLET BREAD
This is from The Art of American Indian Cooking by Y. Kimball & J. Anderson. It's quick and easy, and makes a good "camp" bread. I've made it both at home, and over a campfire. Cooking time is approximate as it will depend on your heat. This is especially true if cooking it over a campfire.

- Sift 4 cups flour with baking powder and salt.
- Combine milk and melted butter.
- Place flour/baking powder mixture in large bowl and gradually add liquid ingredients, beating well.
- When the mixture has been worked into a soft dough, lightly flour a board with part of the remaining flour.
- Turn out dough onto board and knead lightly, working in remaining flour.
- Divide dough into 3 parts and shape each into a round pone about 1/8 inch thick and a diameter to fit skillet.
- Pour enough oil in skillet to measure about 1/4 inch deep.
- Heat oil and brown each loaf quickly, one at a time until golden on both sides.

- In a bowl, combine the water, yeast and sugar. Let stand for 5 minutes.
- In another bowl, combine the flour and salt. Add the yeast mixture and stir with fork until a soft dough forms. Add a little flour if necessary.
- Knead for 1 minute in the bowl while adding flour to prevent sticking.
- Cover with a clean cloth. Let the dough rise for about 30 minutes in a warm place, away from drafts (in the microwave oven, for example).
- On a floured surface, roll out the dough in two 20 cm (8 in) in diameter discs.
- In a cast iron skillet, heat half the butter and cook one bread over medium heat for about 3 minutes on each side. Repeat with the remaining butter and bread. Cut into wedges and serve hot.
