MELT IN YOUR MOUTH BEEF STEW
This is my own version of beef stew. The secret is to thicken the gravy as soon as you brown the beef. To make life easy, this dish is finished in the oven. You will not believe how tender the meat gets by using this method!

Steps:
- Salt and pepper beef and dredge in flour.
- Over high heat, place oil in cast iron Dutch oven.
- Add beef and onion and saute until meat is browned.
- Add beef broth and water to barely cover the meat and bring back to a boil.
- Shake 1 cup of cold water and flour in a jar until well combined and then add slowly to beef mixture.
- Cook and stir until thickened.
- Cover and place in preheated 325° oven and cook for 1 hour.
- Remove from oven and add potatoes and carrots.
- Cover and return to oven and bake at the 325° temperature for 1 more hour.
- Remove from oven, add peas and stir.
- Serve with crusty bread.

MELT IN YOUR MOUTH ROAST BEEF

Steps:
- Put garlic through press and rub into all sides of roast.
- Dredge meat in flour and brown on all sides in oil in frying pan.
- Do not let it scorch.
- Transfer meat to roasting pan and add the rest of ingredients.
- Cover and bake at 325 degrees for 4 hours, or until meat is tender, turning roast every half hour.
- (Don't skip this step... turning it every half hour ensures a juicy, melt-in-your-mouth roast) When done, remove from pan and cover with aluminum foil.
- Strain stock, pressing as much liquid as possible from vegetables.
- Pour stock into saucepan and bring to a boil.
- Stir in mixture of flour and water and cook until thickened.
SLOW COOKER BEEF STEW
This is quite possibly the best beef stew I have ever had. Flavorful, thick broth with perfectly done vegetables and melt in your mouth meat. This is from Cook's Illustrated Make Ahead Cookbook. I adapted the recipe slightly, and added a turnip. I used a large oval slow cooker, and it was filled to the brim at the start of cooking, so if using a round cooker I would decrease the veggies slightly.

Steps:
- Heat 1 TBSP oil in a nonstick skillet over medium heat until the oil is shimmering. Add the onion, tomato paste, garlic, and 1/4 tsp salt ad cook until the onions are soft & lightly browned (about 10-15 minutes).
- Stir in the chicken broth, scraping up any browned in bits.
- Pour the onion mixture into the slow cooker. Stir in the beef broth, meat, soy sauce, tapioca, and bay leaves.
- In a large mixing bowl, toss the potatoes, carrots, parsnips, turnips, 1 TBSP oil, and 1 tsp thyme. Season with salt & pepper.
- Wrap the vegetable mixture in a large piece of aluminum foil to make a pouch/packet that will fit in the top of the slow cooker (or use an aluminum oven bag).
- Set the vegetable packet in the slow cooker on top of the meat mixture.
- Cover and cook on low for 9-11 hours (or high for 5-7 hours).
- Transfer the veggie packet to a plate.
- Let the stew settle for 5 minutes or so, then skim any excess fat from the top with a large flat spoon, tilting the cooker insert if necessary. Remove & discard the bay leaves.
- Carefully open the veggie packet, watching for steam. Stir the veggies and any of their juices into the meat mixture.
- Stir in the peas and 1 tsp thyme. Let stand about 5 minutes for the peas to heat through.
- Season with salt & pepper to taste and serve.

- Place the beef into a 5-quart slow cooker. Add the brown sugar, garlic, thyme and flour and toss to coat. Pour the soup and ale over the beef mixture. Cover and cook on LOW for 8 to 9 hours or until the beef is fork-tender.
SLOW COOKER "MELT IN YOUR MOUTH" POT ROAST

This recipe has proven to produce the best pot roast I've ever made. Every component is pure perfection. The meat is juicy and fall-apart tender. The vegetables are cooked just right and are full of flavor. The seasonings are simply spot on and the broth yields a fabulous gravy-like sauce that is divine when poured over everything prior to serving.

- Combine seasoning mix ingredients together in a small bowl. Set aside.
- Coat both sides of meat with olive oil. Sprinkle a third of the seasoning mix onto each side.
- Sear both sides of the meat in a large skillet over medium-high heat. Transfer roast to slow cooker.
- Place the vegetables in a large bowl. Drizzle on a little olive oil to coat vegetables. Sprinkle on the remaining seasoning mix. Add the vegetables to the same skillet that was used to sear the meat. Sauté for about five minutes - stirring occasionally.
- Transfer the vegetables to the top of the roast in the slow cooker. Pour in the beef broth. Cover with lid.
- Cook on low for 9 hours or on high for 6 hours.
- Using a turkey baster, retrieve most of the cooking juices from the slow cooker. Transfer juices to a small sauce pan and bring to a simmer over medium heat on the stovetop. Whisk together the cornstarch with a little water. Blend into the pan juices while whisking. Bring back to a simmer until thickened. Taste and adjust seasoning as needed.
- Transfer the roast and vegetables to a large platter. Ladle the gravy over. Serve immediately.

- Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., Combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into a round loaf; place in center of strips in slow cooker. Cook, covered, on low 5-6 hours or until a thermometer reads at least 160°. , In a small bowl, whisk ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over meat loaf. MELT IN YOUR MOUTH BEEF BRISKET
This recipe produces the most wonderful tasting tender brisket with lots of flavor! Prep time is marinating time. Plan ahead, this brisket needs to marinate in the fridge overnight.

- In a large roaster, season brisket with salt and pepper.
- Cover bottom of roasting pan with sliced onions.
- Lay brisket on top of onions in roaster.
- In a bowl, mix the prepared BBQ sauce with minced garlic.
- In the roaster with the onions, pour the BBQ sauce all over brisket, making sure that brisket is coated well on all sides.
- Cover with foil; refrigerate for 24 hours.
- Remove from fridge.
- In a bowl, mix together wine, ketchup, brown sugar and soup.
- Pour over brisket; mix slightly to combine with BBQ sauce.
- Cover tightly with foil.
- Bake at 350 degrees for 4-1/2- 5 hours, or until brisket if fork-tender.
- Remove from oven; let stand 20 minutes before slicing.
- Slice thinly against the grain; serve with remaining sauce.
