These pretty parfaits layer two shimmering colors of fruit-flavored gelatin cubes with creamy whipped topping.

2 cups boiling water, divided
1 pkg. (4-serving size) JELL-O Cherry Flavor Gelatin
1 pkg. (4-serving size) JELL-O Lemon Flavor Gelatin
2 cups cold water, divided
2 cups thawed COOL WHIP Whipped Topping

Steps:

  • Stir 1 cup of the boiling water into each flavor gelatin in separate bowls at least 2 min. until completely dissolved. Stir 1 cup of the cold water into each bowl. Pour into separate 9-inch square pans.
  • Refrigerate 4 hours or until firm. Cut gelatin in each pan into 1/2-inch cubes.
  • Layer alternating gelatin flavors and whipped topping in 8 dessert glasses.

1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
2 cups ice cubes
1 cup fresh strawberries
3/4 cup thawed COOL WHIP Whipped Topping

Steps:

  • Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Add ice; stir until gelatin is slightly thickened. Remove any unmelted ice.
  • Lean 4 parfait glasses, at an angle, against sides of muffin pan cups. Reserve 4 strawberries for garnish. Slice remaining berries; stir into gelatin. Spoon into tilted glasses. Refrigerate 2 hours or until gelatin is firm.
  • Top with COOL WHIP and reserved berries before serving.

1-1/2 cups boiling water
1 pkg. (8-serving size) or 2 pkg. (4-serving size each) JELL-O Strawberry or Raspberry Flavor Gelatin
2 cups cold water
1-1/4 cups mixed raspberries and sliced strawberries, divided
1-1/2 cups thawed COOL WHIP Whipped Topping, divided

Steps:

  • Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in cold water. Reserve 1 cup of the gelatin; set aside at room temperature. Refrigerate remaining gelatin 1-1/4 hours or until thickened.
  • Reserve 1/4 cup of the berries for garnish. Stir remaining berries into thickened gelatin; pour evenly into 8 dessert glasses. Add 1 cup of the whipped topping to reserved 1 cup gelatin; stir with wire whisk until well blended. Spoon over gelatin in glasses.
  • Refrigerate 4 hours or until firm. Top with remaining 1/2 cup whipped topping and reserved berries just before serving. Garnish with fresh mint leaves, if desired. Store leftover desserts in refrigerator.

  • Mix the contents of one of the gelatin boxes with one cup of boiling water and stir to dissolve. Add one cup of cold water and stir. Divide the gelatin evenly among the dessert dishes, about 3-3.5 ounces per dish. Place in the refrigerator for 2-2.5 hours, enough time for the gelatin to solidify as you will be adding another layer on top.
  • For the second box of gelatin, add powder to one cup of boiling water and stir to dissolve. Combine the gelatin mixture and the cream cheese in a blender or food processor and pulse to combine. Add 1/2 cup of cold water, pulse to combine, then add half of the whipping topping. Pulse everything together until smooth and pour on top of the gelatin in the 6 dessert dishes.
  • Chill in the refrigerator until firm then top off with remaining whipped topping. You can serve as is or garnish with a few sprinkles or even some fresh raspberries!
