MARINATED MELON WITH MINT AND LIME ZEST
Steps:
- Combine honey, mint sprigs, and 1/2 cup water in a small saucepan. Bring to a simmer; stir until honey is dissolved. Cool to room temperature; discard mint.
- Combine watermelon, cantaloupe, honey syrup, lime zest, and chopped mint in a bowl. Let stand 10 minutes. Serve with a slotted spoon.

Steps:
- In 1-quart saucepan, heat sugar, water, mint and lime peel to boiling; reduce heat. Simmer uncovered about 5 minutes or until sugar is dissolved.
- In heatproof medium bowl, place honeydew and cantaloupe balls; pour hot syrup through strainer over melon, removing lime peel and mint. Cover; refrigerate at least 1 hour or until chilled.
- To serve, divide melon balls and syrup among 4 parfait glasses or dessert dishes. Top with club soda.
