20 MINUTE SKILLET SAUSAGE & ZUCCHINI

- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add sliced sausage. Sautè, flipping sausage frequently, for 1 to 2 minutes or until sausage slices have some browning. Remove from pan and set aside.
- Reduce heat to medium. Add remaining 1 1/2 tablespoons of oil to skillet with the zucchini, onion, and bell pepper. Sprinkle with salt, oregano, basil, garlic powder, onion powder, and pepper. Stir. Let cook until the onion is translucent and peppers and zucchini are close to tender, about 5 to 10 minutes.
- Add sausage back to the skillet along with minced garlic. Stir. Cover so everything heats through for 1 to 2 minutes. Taste. Add extra salt if desired. Garnish with chopped fresh basil (optional).

One of my co-workers gave me this recipe years ago, and now it's a staple. We just don't feel like it's summer until we've eaten some. We usually eat it for dinner, but it's equally good for breakfast or brunch.

- Preheat oven to 375 degrees.
- Saute zucchini, onions and garlic in olive oil until soft. Stir in parsley, herbes de provence, salt and pepper. Remove from heat.
- Beat the eggs and then add the cheese to the beaten eggs. Pour into the veggie pot and combine.
- Spread dijon mustard on bottom of pie crust. Add zucchini mixture to crust. Bake for 35-40 minutes.

- Heat oil in a large frying pan over medium heat and sauté the zucchini and onion for 5 minutes or until soft. Put the zucchini and onion in a large bowl.
- Add the sausage to the pan. Break up the sausage and cook over medium heat until no longer pink. Drain the sausage and add to the bowl. Mix zucchini, onion and sausage. Then add the remaining ingredients.
- Mix well and pour into a 9x9 inch baking pan. Bake for 40 minutes at 400 degrees F. Cut into squares. Serve warm or cold.

- In a heavy skillet over medium heat, crumble the sausage with a fork.
- Sauté the sausage until completely cooked.
- Drain off the fat, remove the sausage, and set aside.
- Melt the butter in another skillet over medium heat.
- Sauté the onions in the butter until tender.
- Add the milk and heat until steam rises, but do not boil the milk.
- Cut the cream cheese into small pieces, add it to the onion mixture, and remove the pan from the heat.

- Mix thoroughly and pour this into the pie crust.
