Ingredients

1 tablespoon chile powder
1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
1/4 teaspoon cayenne
1/4 teaspoon ground coriander
1/4 teaspoon sugar
Zest of 1 lime

Steps:

Mix together the chile powder, salt, cumin, cayenne, coriander, sugar and lime zest in a bowl. This spice mix not only goes great with chicken and pork, but also to rim a spicy margarita.

1/4 cup ancho chile powder
2 tablespoons ground coriander
2 tablespoons dry mustard
2 tablespoons paprika
2 tablespoons freshly ground black pepper
2 tablespoons kosher salt
1 tablespoon chile de arbol or cayenne pepper
1 tablespoon ground cumin
1 tablespoon dried oregano

Steps:

Whisk together the ancho chile, coriander, mustard, paprika, black pepper, salt, chile de arbol, cumin and oregano in a bowl until combined. Store, tightly covered, in a cool, dark place for up to 6 months.

Combine all the ingredients for the rub in a small bowl and stir to mix. Rub onto the beef on all sides.

3 tsp dried chilli flakes
3 tbsp dried thyme
2 tbsp dried rosemary
4 bay leaves , crushed
1 tsp celery salt
2 tbsp peppercorns

Steps:

Mix all the ingredients together in a bowl, then carefully transfer to a pepper mill or an airtight jar. Simply grind over your favourite meat before cooking, or over veg before roasting, for extra flavour.
