Steps:
- Pour all ingredients in a large glass jar, and whisk or mix with a spoon until well combined or you can also blend in a processor or a blender.
- Adjust all seasonings to suit taste, including the sugar and salt.
- Let sit in fridge for a minimum of 2 hours.
- Shake very well before using.

Steps:
- Preheat oven to 400°F (200°C).
- Place chicken breast on a baking sheet lined with aluminum foil or parchment paper. Top with olive oil, lemon juice, garlic, dill, and salt and pepper to season.
- Bake for 35-40 minutes until internal temperature reaches 165°F (75°C) and the juices run clear.
- Add all dressing ingredients in a small bowl or cup and whisk until with a fork until combined.
- Slice thinly or cube chicken, cutting to your preference for topping the salad.
- Assemble your salad, starting with a base of romaine lettuce. Then top with chicken, cucumber, olives, red onion, tomatoes, feta, and the dressing. Toss to evenly incorporate ingredients

MEDITERRANEAN DRESSING
This is simple to make. Whisk it in a bowl, slowly adding the Extra Virgin Olive Oil and it be nice and thick and creamy. You may add herbs to it and drizzle it on anything from salads to being a bread dip to black bean salad to salmon, etc. It is good with Feta Cheese sprinkled on a salad with Greek olives. It is good drizzled on many vegetables and balsamic vinegar may be added, too.

Steps:
- Press garlic and let it sit for 5 minutes to get the goodness out of it.
- Put the lemon juice in a bowl and slowly add the olive oil, whisking all the time; the slower you add it and the faster you whisk it, the creamier and thicker it will get.

- Put in a glass jar and refrigerater.
