SIX LAYER MEDITERRANEAN DIP

Number Of Ingredients 13

2/3 cup dried garbanzo beans (chick-peas), soaked at least 6 hours
juice of 1/2 lemon, plus extra lemon juice to taste
1/4 cup tahini
2 tablespoons olive oil
3 cloves garlic
1/4 teaspoon ground cumin
3/4 teaspoon- 1 teaspoon sea salt
1/2 cup diced English cucumber
1 roma tomato, diced
10 pitted kalamata olives, sliced
2 tablespoons finely chopped red onion
1/4 cup crumbled feta
whole wheat pita wedges for serving

Steps:

  • Drain the garbanzo beans and place in a saucepan with enough water to cover the garbanzo beans by 2 inches. Bring to a boil over high heat, then lower heat and simmer until tender, about 1 hour. Remove from heat and drain, reserving the cooking liquid for later use.
  • In a blender or food processor, add the garbanzo beans, lemon juice, tahini, olive oil, garlic, cumin, salt, and 1/2 cup plus 1 tablespoon cooking liquid. Blend or process on high speed until hummus is smooth and creamy. Season to taste with additional salt and lemon juice.
  • Spread the hummus in the bottom of a shallow bowl. Next layer the cucumbers, tomatoes, olives, onion, and feta. Serve with pita wedges.

One 16-ounce jar roasted red bell peppers, drained and diced
2 cups store-bought tzatziki
2 English cucumbers, seeded and diced
1 1/2 cups sliced mixed Kalamata and Castelvetrano olives
1 1/2 cups crumbled feta
1 pint yellow cherry tomatoes, quartered
Juice of 1 lemon
1/4 cup chopped fresh parsley
8 pitas, cut into wedges

Steps:

  • In a shallow glass bowl or baking dish, begin layering in the ingredients in the following order: hummus, roasted red bell peppers, tzatziki, diced cucumbers, olives, feta and cherry tomatoes.
  • Squeeze over the lemon juice and garnish with the parsley.
  • Serve with the pita wedges.

  • Spread hummus onto a 12-in. round serving platter; top with roasted peppers., In a small bowl, combine the spinach, lemon juice, oil, basil and mint. Using a slotted spoon, spoon spinach mixture over peppers. Top with cheese, olives and onion. Serve with vegetables or pita chips.

1 1/4 cups feta cheese, crumbled and DIVIDED
2 tablespoons milk
1 tablespoon dried basil
10 ounces frozen spinach, thawed and well-drained
1 large tomatoes, chopped
3 green onions, chopped
1/4 cup sliced black olives

Steps:

  • In a mixing bowl, beat cream cheese, 1 cup of feta, milk and basil until well-blended. Spread in bottom of 9" pie plate.
  • Top with drained spinach, then tomato, then green onion, then black olives, then remaining feta cheese.
  • Cover and refrigerate about 1 hour before serving.

Remember the layered taco dip everybody loves? Well, here's a Mediterranean version for you! Very, very tasty! Prep time includes chilling. This dip took a bit of work... I first posted it at Gail's way back in the 90s, I think.

8 ounces prepared hummus
1 1/4 cups plain yogurt, divided
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon salt
1 teaspoon lemons or 1 teaspoon lime juice
1 cup seeded and chopped tomato
1 ripe avocado, seeded and chopped
1/2 cup peeled and chopped cucumber
salt & fresh ground pepper, to taste
4 -6 ounces crumbled feta cheese
2 tablespoons minced kalamata olives

Steps:

  • First, strain the yogurt by putting cheesecloth or a paper coffee filter in the bottom of a strainer and pour in all the yogurt but 1/4 cup (reserve for later); let it strain for a couple of hours to thicken it up, or overnight (in the fridge) to make thicker "yogurt cheese" (I prefer it just for a couple of hours; you could also substitute sour cream for the yogurt, if you like).
  • Combine the reserved 1/4 cup of un-strained yogurt with the prepared hummus, then spread mixture on the bottom of a 9 inch pie dish.
  • Combine remaining strained yogurt and cumin and spread over the hummus layer.
  • Toss together the garlic powder, salt, lemon/lime juice, chopped tomatoes, and avocado, then spread over the yogurt layer.
  • Add a layer of the cucumbers and sprinkle with a bit of salt and pepper.
  • Add a layer of feta, then finish it all off with olives.
  • Let chill for an hour before serving with pita chips (artichoke hearts are a good addition to this recipe, as well.).

1 cup plain Greek yogurt
1 medium seedless cucumber, chopped
1 teaspoon white wine vinegar
2 teaspoons minced fresh mint or 1 teaspoon dried mint
1 carton (10 ounces) hummus
1 medium red onion, chopped
1 cup chopped roasted sweet red peppers, drained
2 packages (4 ounces each) crumbled feta cheese
1/2 cup pitted Greek olives, sliced
2 plum tomatoes, chopped
Optional: Minced fresh parsley and additional minced fresh mint
PITA CHIPS:
20 pita pocket halves
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Line a strainer with 4 layers of cheesecloth or 1 coffee filter and place over a bowl. Place yogurt in prepared strainer and cover with edges of cheesecloth. Refrigerate for 8 hours or overnight. In a small bowl, combine the strained yogurt, cucumber, vinegar and mint., Spread hummus in the bottom of a 9-in. deep dish pie plate. Layer with onion, peppers, feta cheese, olives, tomatoes and yogurt mixture. Top with parsley and additional mint if desired. Chill until serving., Cut each pita half into 3 wedges; separate each wedge into 2 pieces. Place in a single layer on ungreased baking sheets. Brush both sides with olive oil; sprinkle with salt and pepper., Bake at 400° for 8-10 minutes or until crisp, turning once. Serve with dip.
