2 cups mostaccioli
1 cup halved zucchini slices
1 container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1 jar (7 oz.) roasted red peppers, drained
1 pkg. (4 oz.) ATHENOS Crumbled Reduced Fat Feta Cheese
1/3 cup pitted black olive slices
1-1/2 tsp. dried oregano leaves

Steps:

  • Cook mostaccioli in large saucepan as directed on package, adding zucchini to the cooking water during the last 2 minutes of the pasta cooking time. Drain mostaccioli mixture; return to pan.
  • Add remaining ingredients; cook until heated through, stirring frequently.

3 tablespoons olive oil
1 pound skinless boneless chicken breasts, sliced diagonally
1 (8 1/2-ounc) jar sun-dried tomatoes, julienned (1 cup)
2 tablespoons garlic, minced
1 pound fresh angel hair pasta
1/4 cup fresh basil
1 (8 1/2-ounce) can artichoke hearts in water, quartered and drained (1 cup)
1/2 cup kalamata olives, pitted (1/4 pound)
6 ounces feta cheese, crumbled
1/4 cup heavy cream
2 teaspoons dried oregano
Salt and pepper, to taste

Steps:

  • Boil water for pasta in a pasta pot, fitted with a strainer. Heat oil in a skillet over medium heat. Brown chicken strips until no longer pink -- about 3 minutes each side. Add sun-dried tomatoes and garlic to skillet. Saute for 2 minutes. In the meantime, add the fresh pasta to boiling water, cook until al dente, about 5 minutes.
  • Now add the basil, artichoke hearts, olives and feta cheese to the skillet. Saute 1 minute then stir in the cream. Strain the pasta and transfer to a large pasta bowl. Add the chicken saute to the pasta and toss. Season with oregano, salt and pepper before serving.

1 pound uncooked mostaccioli
1-1/2 pounds bulk Italian sausage
1 jar (28 ounces) meatless spaghetti sauce
1 large egg, lightly beaten
1 carton (15 ounces) ricotta cheese
2 cups shredded part-skim mozzarella cheese
1/2 cup grated Romano cheese

Steps:

  • Cook pasta according to package directions; drain. Crumble sausage into a Dutch oven. Cook over medium heat until no longer pink; drain. Stir in spaghetti sauce and pasta. In a large bowl, combine the egg, ricotta cheese and mozzarella cheese. , Spoon half of the pasta mixture into a greased shallow 3-qt. baking dish; layer with cheese mixture and remaining pasta mixture. , Cover and bake at 375° for 40 minutes or until a thermometer reads 160°. Uncover; top with Romano cheese. Bake 5 minutes longer or until heated through.

1/2 medium eggplant, cubed (about 3 cups)
2 cups sliced zucchini
8 ounces lean ground beef
2 (14 1/2 ounce) cans diced tomatoes with basil oregano and garlic, undrained
1/2 cup raisins
1/4 cup snipped fresh basil
1/2 teaspoon ground cinnamon
2 tablespoons balsamic vinegar
crumbled feta cheese (optional)

Steps:

  • Cook pasta according to package directions, adding eggplant and zucchini the last 2 minutes of cooking; drain. Return to saucepan; cover and keep warm.
  • Meanwhile, for sauce: In a large skillet cook ground meat until brown. Drain off fat. Stir in tomatoes, raisins, basil, and cinnamon. Bring to a boil; reduce heat.
  • Cover and simmer for 5 minutes, stirring once or twice. Remove from heat; stir in vinegar.
  • Transfer pasta mixture to a warm serving platter. Spoon the sauce over pasta mixture. If desired, sprinkle with feta cheese.

This is my DH's favorite dish. He made it for me when we first dated about 15 years ago. It comes from his mother and is still a favorite for our family.

1/2 lb ground beef
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 garlic clove
16 ounces garden vegetable spaghetti sauce
1/2 teaspoon salt
1/4 teaspoon pepper
8 ounces mostaccioli noodles, cooked and drained
1/2 lb Velveeta reduced fat cheese product, thinly sliced
grated parmesan cheese

Steps:

  • Brown meat; add vegetables and cook until tender.
  • Stir in spaghetti sauce and garlic.
  • In casserole dish, layer half the cooked noodles, meat sauce, and Velveeta. Repeat the layers. Sprinkle the top with Parmesan.
  • Bake at 350 degrees for 30 minutes, until heated through and cheese begins to bubble and brown on top.

1 pound ground beef
1 (24 ounce) jar picante sauce
1 (15 ounce) can stewed tomatoes with juice
1 ½ cups shredded Mexican-style cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook mostaccioli at a boil until cooked through yet firm to the bite, about 11 minutes; drain.
  • Cook and stir ground beef in a large pot over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease.
  • Add picante sauce and stewed tomatoes to the ground beef; cook, stirring occasionally, until the tomatoes soften completely, about 10 minutes. Gently stir the cooked mostaccioli into the ground beef mixture. Add Mexican-style cheese; cook and stir until the cheese is melted, about 5 minutes.

2 teaspoons canola oil
½ cup chopped red onion
¼ cup red bell pepper, chopped
1 pound bulk pork sausage
4 (16 ounce) cans crushed tomatoes
1 teaspoon garlic powder
1 tablespoon Italian seasoning
1 teaspoon sugar
1 teaspoon salt
½ tablespoon ground black pepper
1 pound penne pasta
½ cup shredded Italian cheese blend

Steps:

  • Heat the canola oil in a large pot over medium heat. Stir in the onion and red pepper, and cook until the onion has softened and turned translucent, about 5 minutes. Add the pork sausage, cook and stir until the sausage is crumbly and browned, about 10 minutes. Drain off and discard any excess fat, then stir in the crushed tomatoes, garlic powder, Italian seasoning, sugar, salt, and pepper. Bring to a simmer over medium-high heat, then reduce the heat to medium-low, cover, and simmer 20 to 30 minutes until the sauce has reached your desired consistency.
  • Meanwhile, bring a large pot of lightly salted water to a boil over high heat. Add the penne pasta, and cook until al dente, 8 to 10 minutes. Drain the penne, then toss with the red sauce and Italian cheese blend. Stir until the cheese has melted. Season to taste with salt and pepper before serving.
