CHICKEN WITH CHORIZO & OLIVES

Number Of Ingredients 1

4 skin-on, boneless chicken breastsSalt and pepper3 tbsp. olive oil¾ lb. Spanish chorizo, casings removed and meat sliced on an angle (I like Gaspar's)1 large Spanish onion, halved and thinly sliced1 scant cup good-quality pitted olives, green and black combined6 to 7 piquillo peppers in water, drained and thinly sliced (about 1/2 cup)4 cloves garlic, thinly sliced or chopped1 bay leaf2 tsp. orange zest and 1 half of an orange, juiced (about 1/4 cup)1 tsp. (about 1/3 palmful) fennel seeds1 tsp. (about 1/3 palmful) paprika½ tsp. hot paprika or crushed red pepper½ cup chicken stock or white Rioja (Spanish white wine)

Steps:

  • Step 1Heat a large cast-iron skillet over medium-high.Step 2Cut each chicken breast into 3 pieces, either 3 triangle-shaped pieces or 3 large slices cut on an angle. Season the chicken on both sides with salt and pepper. Add the olive oil to the skillet, about three turns of the pan. Add the chicken, skin-side down, and cook until browned on the bottom, 3 to 4 minutes. Turn the chicken over and cook until browned and cooked through, 2 to 3 minutes more. Transfer to a platter.Step 3Add the chorizo to the skillet and cook, stirring occasionally, until the fat begins to render, 1 to 2 minutes. Using a slotted spoon, transfer the chorizo to the platter with the chicken. Add the onion, olives, piquillo peppers, garlic, bay leaf, orange zest, fennel seeds, paprika, and hot paprika. Cook, tossing often, until the onion softens, 7 to 8 minutes. Add the orange juice and stock. Cook, stirring occasionally to deglaze the pan. Add the chicken and chorizo and cook until heated through, a minute or so more. Transfer to a platter.

1 pound whole-wheat or whole-grain spaghetti
1 1/2 pounds mixed mushrooms - shiitake, crimini, any that catch your eye at market
1/3 cup extra-virgin olive oil, eyeball it
2 leeks
3 to 4 cloves garlic, finely chopped
Freshly ground black pepper
2 tablespoons finely chopped fresh thyme leaves
1/2 cup dry white wine
1/2 cup cream
Grated Parmigiano-Reggiano or Romano, for topping

Steps:

  • Heat water to a boil for the pasta, salt water, drop in pasta and cook to al dente.
  • Wipe mushrooms clean with damp towel. Remove woody stems. Thinly slice the mushrooms.
  • Heat a large deep skillet with extra-virgin olive oil over medium-high heat. Add the mushrooms and cook until deeply golden and tender, 10 minutes.
  • While mushrooms cook, halve the leeks lengthwise. Cut off a couple of inches from tough tops. Trim off root end. Thinly slice the leek then vigorously wash in a large bowl of cold water, separating all the layers to free of grit. Let leeks sit a few minutes then lift out of the water and dry on kitchen towel.
  • Add leeks to mushrooms along with garlic and season with salt, pepper and fresh thyme. Cook 3 to 4 minutes more then add wine, reduce half a minute then stir in cream and heat through. Toss pasta with mushrooms and adjust seasoning. Top with grated cheese at the table.

Sautéed Cremini Mushrooms are cooked in a buttery herb mixture until tender and loaded with delicious savory flavor! This easy side dish recipe adds that extra special finishing touch to your main dish and take just 10 minutes to cook.

1 pound of Cremini (baby bella) mushrooms
2 tablespoons of butter (vegan as desired)
1 tablespoon of olive oil*
2 cloves of garlic, finely minced
Salt and pepper to taste
2 tablespoons of fresh thyme (other fresh herbs work well here as well!)
Optional squeeze of lemon juice as desired

Steps:

  • Start by thoroughly rinsing the mushrooms under water. Pat dry and then cut into thin slices (about ¼ inch thick). If you buy pre washed and sliced mushrooms, you can skip this step.
  • In a large skillet, combine the butter and olive oil over medium heat. Once the butter is fully melted, add in the sliced mushrooms with a good pinch of salt and freshly cracked black pepper. Cook for 5 minutes. Around this time, you'll end up with a decent bit of excess moisture in the pan from the mushrooms and this is okay.
  • Add in the garlic and herbs, stir, and cook for an additional 3-4 more minutes. Most of the moisture from the mushrooms should have evaporated but if not, you can drain it off. Garnish with additional herbs, a squeeze of lemon juice, and ENJOY!

1/2 pound mixed mushrooms (cremini, shiitake - whichever look good to you)
1 pound Swiss chard, stemmed and coarsely chopped
Salt and freshly ground black pepper
1/2 lemon, juiced
2 tablespoons butter
A drizzle honey

Steps:

  • Heat the olive oil, 3 turns of the pan, in large skillet over medium-high heat. Coarsely chop mushrooms and add to the pan, toss for 2 to 3 minutes then add the greens to wilt. Season with salt and pepper. Dress greens with lemon juice then toss with butter as it melts to form a sauce. Drizzle a little honey over the greens and serve.

2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat a large skillet over medium high heat. Add extra-virgin olive oil and butter. Add mushrooms and season with salt, pepper and thyme then cook 15 minutes until evenly browned and tender. Add wine and deglaze the pan. Add parsley and transfer mushrooms to a serving dish.

3/4 cup instant polenta
3 cups water
1 teaspoon salt
3 1/2 tablespoons butter
4 ounces portobello mushroom caps, coarsely chopped
1 bunch kale, stems trimmed and leaves chopped (about 12 ounces)
1 1/2 tablespoons flour
1 cup milk
3 ounces provolone cheese, shredded (about 3/4 cup)

Steps:

  • Grease an 8-inch square baking dish. In a heavy, medium saucepan, bring 3 cups water and 1 teaspoon salt to a boil over high heat (you may want to sub out water/salt for vegetable broth). Add the polenta in a thin stream, whisking constantly.
  • Lower the heat and simmer, stirring constantly, until thick, 5 minutes; season with salt and pepper. Spread evenly in the prepared baking dish.
  • In a large skillet, heat 2 tablespoons butter over medium-high heat. Add the mushrooms and cook, stirring frequently, until golden, about 5 minutes. Add 2 tablespoons water, then add the kale in batches, allowing each batch to wilt slightly before adding the next. Cook, stirring, until tender, about 8 minutes; season with salt and pepper.
  • In a small saucepan, melt the remaining 1 1/2 tablespoons butter over medium heat. Whisk in the flour and cook, stirring constantly, until golden, about 3 minutes. Slowly pour in the milk, whisking, and cook, stirring constantly, until the sauce thickens, about 10 minutes; season with salt and pepper.
  • Preheat the oven to 400°. Top the polenta with the kale mixture. Spoon the cream sauce evenly over the kale mixture and top with the provolone. Bake until warmed through, about 15 minutes. Increase the temperature to 450° and bake until golden, about 5 minutes.

36 medium mushroom caps (10 stems reserved)
2 tablespoons extra virgin olive oil
2 tablespoons extra virgin olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 cup Italian seasoned breadcrumbs
2 ounces fontina, shredded
1/4 cup grated parmesan cheese
4 ounces chopped pancetta, browned and drained
1 large egg, beaten
1/4 red bell pepper, finely diced

Steps:

  • Preheat oven to 350°.
  • Clean mushroom caps with damp paper towel.
  • Heat oil in a large skillet over medium-high heat.
  • Quickly saute mushrooms until caps begin to become dark and tender and have rendered their juices.
  • Remove from heat; transfer mushrooms to a small, flat baking pan, draining liquid from insides of caps as you remove from skillet.
  • Wipe out skillet and return to heat.
  • Heat olive oil in skillet; saute onion, garlic, and chopped reserved mushroom stems; saute until tender; remove from heat.
  • In a bowl, combine onion mixture with bread crumbs, fontina, parmesan, pancetta, and egg.
  • Using a melon baller or a fingertip, mound stuffing onto caps; place stuffed mushrooms on a baking sheet; bake 10-15 minutes or until golden.
  • Top each with a dot of chopped red bell pepper and serve.

Give it a try for your next party or movie night! A bit of a hint... save those stems and keep them in the freezer. They're great to toss into the pot when making stock or broth.

8 ounces cremini mushrooms, washed & stemmed
1 large jalapeno, minced
1 small onion, finely chopped
1/2 cup parmesan cheese, shredded (reserve 1/4 cup)
2 garlic cloves, finely chopped
1/4 cup Italian breadcrumbs
1/2 cup butter or 1/2 cup margarine
salt and pepper, to season caps

Steps:

  • Preheat oven to 400 degrees.
  • Mix jalapeno, onion, garlic, and 1/4 cup parm into butter.
  • Place caps on a bake sheet and season to taste w salt/pepper.
  • Fill caps with butter mixture.
  • Sprinkle remaining 1/4 parm over all the caps.
  • Sprinkle 1/4 of bread crumbs over the parm coated caps.
  • Bake for 15 minutes or until mushrooms give up juices.
  • Broil to crisp up topping if not to satisfaction.

3 large shallots
1/2 cup unsalted butter
4 scallions (green parts only)

5 tablespoons soy sauce

Steps:

  • Halve portabellas& cut both portabellas and creminis in 1/4" slices.
  • Chop shallots and cook half in half of the butter over moderate heat, stirring 1 min.
  • Add portabellas and salt& pepper to taste and cook, stirring occasionally, until liquid mushrooms give off is evaporated, about 15 mins.
  • Transfer to a bowl and keep warm, covered.
  • Cook remaining shallots in remaining butter and add cremini, salt and pepper until mushrooms give off is evaporated, about 10 mins.
  • Mix both mushrooms together and keep warm.
  • Diagonally cut scallions into thin slices.
  • In a bowl whisk together vinegar, soy sauce, and sugar.
  • Heat mushrooms over moderately high heat and add vinegar mixture.
  • Boil mixture 3 mins, or until liquid is reduced slightly, and stir in scallions.

3 tablespoons all-purpose flour
1/2 cup dry white wine
1 cup vegetable broth
1/2 cup half-and-half
8 slices bread, toasted
2 cups gruyere cheese, shredded

Steps:

  • Heat a large non-stick skillet over medium heat. Add the olive oil and butter.
  • Once butter melts, add the garlic and shallots, cook for 30 seconds and add mushrooms and combine.
  • Sprinkle thyme over mushrooms, stirring frequently until they brown; add salt and pepper to taste.
  • Sprinkle flour over the mushrooms and cook for 1-2 more minutes, stirring to evenly distribute.
  • Whisk the wine into the pan and cook it off for a minute, then whisk in the stock.
  • Thicken the stock for a minute, then add the half-and-half and simmer over low heat for 5 minutes.
  • Cut the toasted bread in triangle halves. Arrange 4 toast triangles on a dinner plate. Pour 1/4 of the mushrooms across each portion and top with Gruyere.
