PEANUT BUTTER BUCKEYE BARS RECIPE

Made with creamy peanut butter, chocolate chips, and love, these Buckeye Bar desserts are perfect for gift giving, get togethers, or just as a snack.

½ cup unsalted butter (113 grams, room temperature (1 stick))
1 cup creamy peanut butter (270 grams)
1 teaspoon pure vanilla extract (4 grams)
2½ cups powdered sugar (283 grams)
2 cups chocolate chips (340 grams)
2 tablespoons coconut oil (28 grams, optional)

Steps:

  • Line a square 8x8-inch baking dish with parchment paper. Set aside.
  • To the bowl of a stand mixer fitted with the paddle attachment, beat the butter and peanut butter together on medium speed until well combined. Scrape down the sides of the bowl as needed.
  • With the mixer on low speed, add the vanilla extract, then slowly add the powdered sugar.
  • Once all of the powdered sugar has been added, allow the mixer to run on low speed until the mixture all comes together in a ball.
  • Transfer the peanut butter mixture to the prepared baking pan and pack it down, making sure to press it all the way to the edges. Set aside.
  • Add the chocolate chips and coconut oil to a small, microwave-safe bowl and microwave until melted.
  • Pour the chocolate mixture over the peanut butter layer and use a spoon or offset spatula to push the chocolate into an even layer.
  • Transfer the bars to the fridge and allow them to sit until the chocolate has fully hardened, about 2 hours.
  • Slice the bars and top with flakey sea salt, if desired.

2 cups creamy peanut butter
½ cup melted margarine
½ cup brown sugar
½ teaspoon vanilla extract
1 (12 ounce) bag chocolate chips

Steps:

  • Grease a 10x15-inch jelly roll pan.
  • Mix confectioners' sugar, peanut butter, margarine, brown sugar, and vanilla together in a bowl. Press peanut butter mixture into the prepared pan.
  • Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Pour melted chocolate evenly over the peanut butter layer. Let buckeye bars cool completely before cutting into squares.

⅔ cup vegetable oil
2 eggs
¼ cup water
2 cups confectioners' sugar
1 cup creamy peanut butter
½ cup butter, softened
1 (6 ounce) package chocolate chips
6 tablespoons butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine brownie mix, oil, eggs, and water together in a bowl until batter is smooth; pour into the prepared baking dish.
  • Bake in the preheated oven until edges of brownies begin to pull away from the sides of pan, 28 to 31 minutes. Remove dish from oven and cool brownies.
