GRAPEFRUIT TEA
This is a recipe from Body & Soul Magazine. My Mom made it for me when I wasn't feeling well. At first sip, I didn't care for it, but by the end of the glass I loved it! Others who have tried it have said the same, at first you wonder; but then it's great. The article said that red/pink grapefruits are high in lycopene and vitamins A and C. They also offer potassium and folate.

Steps:
- In an medium pot, combine juice, honey cinnamon, allspice and water.
- Bring to a boil over high heat; strain and discard solids.
- Note - When I strained it, I tried to get as much as pulp pushed through the strainer as possible.

CRISPER CRASH FRITTATA

- Preheat the oven to 375 degrees F.
- For the vegetables: In a large, ovenproof nonstick skillet set over medium-high heat, add the butter and oil. When the butter melts, add the mushrooms, scallions, asparagus, beans, celery, red pepper and zucchini and cook, stirring frequently, until softened, about 5 minutes.
- For the egg mix: Meanwhile, add the eggs to a bowl along with some salt and pepper. Do not overbeat; just mix until the eggs mostly come together. Then add the Monterey Jack, Cheddar, Parmesan and hot sauce and stir through gently.
- Return to the vegetable mixture, add the pasta, olives and a sprinkle of salt and pepper and stir. Add the more tender vegetables--the kale and spinach--and cook, stirring, until they have wilted and everything is hot.
- Make sure all the ingredients are evenly distributed across the bottom of the skillet and the lengths of beans and asparagus are spread out, then pour in the egg mixture so that it evenly coats everything. Let it sit on the burner for 30 to 45 seconds to set the edges, then put the skillet in the oven. Cook, watching it carefully, until the eggs are set but not very brown on top, 10 to 12 minutes.
- For the crisper crash salad and simple dressing: Add the oil, lemon juice, mustard and some salt and pepper to a mason jar with a lid and shake well.
- Add the tomatoes, parsley, basil, greens and cucumber to a bowl, drizzle over a little dressing and toss.
- Slide the frittata out of the skillet and onto a cutting board. Slice into wedges with a long serrated knife and serve with the salad.
PINEAPPLE REFRESHER
Steps:
- Combine all ingredients in a blender. Blend for 30 to 40 seconds, until frothy. Pour into serving glasses. Garnish with a pineapple wedge or lime wheel.
BLUSHING GRAPEFRUIT SORBET

- In a large saucepan, combine the first eight ingredients. Bring to a boil; cook until liquid is reduced by half, about 20 minutes. Strain and set aside to cool., In a large bowl, combine the grapefruit and lemon juices and sugar syrup. Fill cylinder of ice cream freezer; freeze according to manufacturer's directions. Transfer to a freezer container and freeze for 4 hours or until firm.

- Place the 4 1/2 cups of water and tea bags into a clean pan or pot; bring it to a boil. Remove from heat and allow tea to steep for about 5 minutes and remove tea bags. Longer will result in bitter tea. Allow to cool to room temperature.
- In a large pitcher combine tea, orange juice and grapefruit juice. Stir in desired amount of sugar to taste. Pour over a ice filled glass.

CITRUS-HONEY GREEN TEA
Hubby and I try to drink green tea on a daily basis. I came up with this recipe to make it more interesting. You can use freshly squeezed orange juice instead of grapefruit juice.
