This is light and fresh and accompanies fish (i.e. habanero-lime butter grilled salmon) and chicken well. It is a refreshing change to the rice or potato side dish, and everyone always loves it.

1 cup chicken broth
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
1 tablespoon butter
¼ teaspoon salt
⅔ cup couscous
1 (2 ounce) jar sliced pimento peppers, drained
2 tablespoons toasted pine nuts
2 tablespoons chopped fresh parsley

Steps:

  • Stir chicken broth, lemon juice, lemon zest, butter, and salt together in a saucepan; bring to a boil. Add couscous to the liquid and stir to coat completely. Place a cover on the saucepan, remove from heat, and let couscous soak in hot liquid until the moisture is mostly absorbed, about 5 minutes.
  • Fluff couscous with a fork. Stir pimento peppers, pine nuts, and parsley into the couscous.

1 cup canned red kidney beans (only if you want)
1 cup feta cheese
1/4 cup pine nuts

  • Cook couscous in 1 cup of water.
  • Cool to room temperature.
  • Whisk together lemon juice and olive oil.
  • Pour over other ingredients combining well.
  • Season with fresh pepper.

This delicious lemony couscous salad is very versatile, as you can use your favorite sausage and/or cheese rather than those suggested. I sometimes add sliced Spanish olives and pinenuts as well, and intend trying cilantro or mint rather than parsley. Be inventive! Adapted from a recipe by Sarah Edmonds.

1 1/2 cups instant couscous
2 cups chicken stock or 2 cups vegetable stock, approximately (your preference)
1/4 cup butter
2 medium yellow onions, roughly chopped (weighing about 12 ounces in total)
1/4 cup sun-dried tomato, finely chopped
2 tablespoons chopped fresh chives
3 tablespoons chopped fresh parsley
3/4 lb spicy sausage, sliced (such as chorizo)
1 medium red bell pepper, seeded and roughly chopped
1 medium yellow bell pepper, seeded and roughly chopped
6 ounces feta cheese, cubed
1 (14 ounce) can artichoke hearts, drained and sliced vertically into thirds
1 lemon juice, and zest grated
1/4 cup cold-pressed virgin olive oil
1 teaspoon superfine sugar
salt and pepper

Steps:

  • Cook the couscous in the hot chicken or vegetable stock, following the packet instructions as to the ratio of couscous to stock (as different brands vary).
  • Once the liquid has been absorbed (about 5 minutes), fluff the couscous with a fork to separate the grains.
  • Heat the butter in a fry pan and cook the onions over medium heat, for about 5 minutes, until softened and golden.
  • Stir frequently as they cook to prevent burning or sticking.
  • Remove half the onions and reserve.
  • Add the sliced chorizo and bell peppers to the onions remaining in the fry pan, and continue sautéing over medium heat for a further 10 – 12 minutes, until the peppers have softened and the chorizo is starting to brown.
  • Remove from the heat.
  • While this mixture is cooling slightly, combine the chopped chives and parsley and then add 3 tablespoons of these herbs to the couscous, along with the reserved, sautéed onions and the semi-dried tomatoes.
  • Mix well and season to taste with salt and pepper.
  • Next toss the feta and artichokes into the chorizo mixture that has been cooling in the fry pan.
  • Mix well, and sparingly season with salt and pepper to taste.
  • Place the couscous into an attractive serving bowl, and pile the chorizo mixture on top.
  • It can be served immediately, warm, or later, cold.
  • When ready to serve, combine the lemon zest, 3 tablespoons lemon juice, the olive oil, sugar and remaining parsley and chives in a small jar.
  • Shake jar well, and season the dressing to taste.
  • Drizzle the dressing over the warm or cold salad to serve.

4 chicken breast fillets, butterflied
200 g aubergines or 200 g eggplants, sliced
4 tomatoes, ripe, cut into halves
1 white onion, quartered
1 courgettes or 1 zucchini, cut in half lengthwise
30 ml olive oil
2 sprigs rosemary
3 tarragon leaves
2 garlic cloves, chopped
400 g couscous
500 ml chicken stock
1 lemon, juice and zest
1 pinch salt, to taste
1 pinch pepper, to taste

Steps:

  • In a baking pan, lay chicken breasts, eggplant, tomato, onions, zucchini, chopped garlic, and rosemary. Toss with olive oil, and season with salt and pepper.
  • Roast in a pre-heated oven at 180°C/360F for about 12 minutes or until juices run clear.
  • Remove out of the oven, tent with aluminum foil and allow to rest for 10 minutes.
  • In a small stockpot, bring chicken stock to a boil.
  • Add in couscous, give it a quick stir, and cover. Turn off the heat and let stand to cook for 5 minutes.
  • While the couscous is cooking, chop chicken and all roasted vegetables into bite-sized pieces.
  • Fluff the cooked couscous with a meat fork and toss in the chopped chicken and vegetables together with the cooking juices.
  • Fold in the lemon juice, zest, and chopped herbs.
  • Season with salt and pepper if needed.

1 cup couscous
1 cup hot vegetable stock or 1 cup chicken stock
12 kalamata olives, sliced
1/2 large red capsicum, diced small
2 tomatoes, seeded and diced small
1 small head of broccoli
2 tablespoons chopped mint
2 tablespoons chopped coriander or 2 tablespoons parsley
3 shallots, sliced fine
60 ml balsamic vinegar
30 ml lemon juice
2 large garlic cloves, minced

Steps:

  • Mix couscous and stock in a bowl which has a lid, let stand uncovered.
  • Meanwhile, mix olives, capsicum, tomatoes herbs and shallots together in a bowl.
  • Mix balsamic, lemon juice and garlic.
  • Pour 1/3 of dressing over vegetables, mix well.
  • Chop the broccoli into small florets about 1/2 inch wide. Cut the stalk into small pieces (about the size of a corn kernel. You want most things to be the same size in this salad.).
  • By now the couscous should be almost ready.
  • Add the broccoli to the couscous and put the lid on loosely.
  • Microwave for 1 minute.
  • Add to the salad mix and toss.
  • Pour over 1/2 the remaining dressing, toss, add the remaining dressing, toss well.
  • Serve whilst still warm.

2 cups uncooked couscous
1 teaspoon salt
3 cups boiling water
6 green onions, chopped
1 cucumber, peeled and diced
2 large ripe tomatoes, peeled and diced
1 1/2 cups cooked garbanzo beans
1/2 cup crumbled feta cheese
1 cup chopped fresh parsley
1/4 cup chopped of fresh mint or 1 tablespoon dried mint
3 tablespoons extra virgin olive oil
2 lemons, juice of
salt & fresh ground pepper

Steps:

  • Add the couscous, salt, and boiling water to a large mixing bowl.
  • Cover bowl and set aside for 10 minutes.
  • Fluff couscous with a fork; all liquid should be asborbed; let cool to room temperature (I put the couscous in the frig to chill a little).
  • Once the couscous is at room temperature, add the chopped green onion, cucumber, tomatoes, garbanzo beans, feta cheese, parsley, mint, olive oil, lemon juice, and salt and pepper to taste.
  • Toss salad gently.
  • It is recommended that if you make this salad ahead of time, add the olive oil and lemon juice right before ready to serve.
