BUTTER CRESCENT ROLLS

A great recipe I got from my amazing Sister In-Law. She's a fantastic cook and should have her own cooking show! We make these every year for Thanksgiving! On a side not, I have a Kitchenaid stand mixer but not a dough hook, so I just used the paddle attachment and it worked fine when making the dough. The dough hook would probably be best to use though if you have it.Also, she has bread flour listed, but I just had all-purpose flour and it was also fine with it.

1/2 cup milk
1/2 cup butter, cut into cubes
1/3 cup sugar
3/4 teaspoon salt
1 tablespoon yeast
1/2 cup warm water
1 teaspoon sugar
1 egg
4 cups flour

Steps:

  • Using the microwave, heat the milk to scald it. Add the butter cubes to a stand mixer and add the milk. Allow to cool for about 3-5 minutes.
  • While that's cooling, soften the yeast in the warm water with the teaspoon of sugar and stir.
  • Stir the milk and butter and the 1/3 cup of sugar and salt. Add the egg and yeast mixture and mix well.
  • Add 2 cups of flour until well mixed and add the rest of the flour 1/4 cup at a time until the the dough is formed and leaves the side of the bowl.
  • Remove the dough and knead for about 3 minutes. Spray a medium sized bowl with pan spray and lay the dough inside rolling it the greased bowl. Cover with saran wrap and allow the dough to rise until almost doubled in size, about an hour.
  • Remove the dough from the bowl and cut in half. Allow the dough to rest for about 10 minutes. Heat the oven to 365*.
  • Roll out into a 12-inch circle. Using a pizza cutter, slice into 12 even wedges.
  • Roll each wedge wide side first. Repeat with remaining dough.
  • Place on a greased baking sheet and bake for about 15-17 minutes until golden brown. Remove from the oven and brush on melted butter on the hot rolls.
  • Place any remaining rolls in a ziploc bag. These will stay fresh for bout 3 days or so.

These are so yummy and so amazingly easy to prepare. They are very similar to those delicious Greek Spinach and Feta pies. They are always a hit at my parties!

Number Of Ingredients 6

1 large onion
1/2 cup chicken stock
1 tablespoon dried dill
1 (400 g) package frozen chopped spinach, drained
3/4 cup feta cheese, crumbled
3 (8 ounce) cans refrigerated crescent dinner rolls (Pillsbury)

Steps:

  • Dice Onion into small pieces.
  • Place Onion and Chicken Stock in a saute pan and cook on medium until Onions become translucent.
  • Add Dill and Spinach, continue to cook until all liquid is evaporated.
  • Remove Spinach and Onion mixture from heat and allow to cool.
  • Once cooled, stir in Feta Cheese into filling mixture.
  • Open packages of Crescent Rolls and unroll onto cutting board.
  • Using a pizza cutter or a knife, cut each Crescent into 2
  • Place 1 tsp of the filling at the widest end of the Crescent and roll up dough "jelly roll style" around filling.
  • Place Cresents 3 inches apart on an ungreased cookie sheet.
  • Bake at 425 for 12 - 14 minutes until golden brown.
  • *filling may be prepared and refrigerated up to 2 days in advance.
  • ** Cresents may be baked earlier in the day and then reheated before serving.

1 (8 ounce) can crescent rolls
1/3 cup olive tapenade
2 tablespoons cream cheese
1/4 cup feta cheese, crumbled
1 egg (beaten)

Steps:

  • Crescent Rolls -- Roll out and separate just like you normally would. Spread each with cream cheese and then some tapenade. A few crumbles of the feta and roll up.
  • Bake -- Place the crescent rolls on a baking sheet lined with parchment paper, brush with the egg wash, and bake at 375 or according to directions until golden brown. About 12-15 minutes.
