¼ cup extra-virgin olive oil
lemon, juiced
2 tablespoons balsamic vinegar
1 teaspoon dried tarragon
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
4 chicken thighs with skin
1 small red onion, sliced into petals
8 mini bell peppers, halved lengthwise and seeded
1 pound baby potatoes, halved
1 lemon, sliced
¼ cup crumbled feta cheese
¼ cup fresh parsley, chopped
8 pitted kalamata olives

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a large rimmed baking sheet with aluminum foil.
  • Whisk olive oil, juice of 1 lemon, vinegar, tarragon, oregano, paprika, salt, and pepper together in a large bowl. Add chicken thighs, onion, baby bell peppers, and potatoes. Stir until everything is evenly coated.
  • Transfer vegetable-chicken mixture to the prepared baking sheet and spread in an even layer. Scatter lemon slices over the vegetables, making sure to leave the chicken uncovered so that the skin will brown.
  • Bake in preheated oven for about 40 minutes. Remove from oven and top with feta, parsley, and olives.

1/4 cup vegetable oil
1/4 teaspoon salt
1 lb small new potatoes, quartered
1 box (3.9 oz) Betty Crocker™ Mediterranean Style Balsamic Sheet Pan Dinner Starter
4 boneless skinless chicken breasts (6 to 8 oz each)
1 cup halved cherry tomatoes
1/2 cup mini (1/2-inch) mozzarella balls (4 oz)
1/4 cup thinly sliced red onion
2 tablespoons sliced fresh basil leaves, if desired

Steps:

  • Heat oven to 400°F. Line 18x13-inch rimmed sheet pan with cooking parchment paper. In large bowl, mix 1 tablespoon of the oil and the salt. Add potatoes to bowl; toss to coat and place skin-sides down in single layer in pan. Set bowl aside. Roast 15 minutes. Remove from oven; stir.
  • Meanwhile, combine remaining 3 tablespoons oil and the seasoning mix (from box) in same large bowl. Add chicken; turn to coat. Place chicken in pan with potatoes. Roast 22 to 27 minutes longer or until juice of chicken is clear when center of thickest part is cut (at least 165°F) and potatoes are very tender and browned.
  • Drizzle with sauce (from box). Top with tomatoes, cheese, onions and basil.
