CHEESY LAYERED GROUND BEEF AND PASTA CASSEROLE

This is a great casserole, it tastes similar to lasagna. You can also top with grated cheese the last 15 minutes of baking if desired, I also like to add in some green bell pepper and dried chili flakes for heat but that is optional.

2 1/2 lbs ground beef
1 medium onion, chopped
1 -2 jalapeno pepper (optional)
2 tablespoons minced fresh garlic (or to taste)
fresh sliced mushrooms, any amount (or use canned, drained)
1 cup grated parmesan cheese, divided (or to taste)
3 (8 ounce) cans tomato sauce
salt and pepper
2 cups grated mozzarella cheese (or to taste)
4 cups medium noodles (use any kind of pasta you desire, 4 cups measured after cooking)
1 cup cottage cheese or 1 cup ricotta cheese
1/2 cup sour cream
2 cups grated mozzarella cheese (optional or to taste) or 2 cups cheddar cheese (optional or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease a large lasagna dish.
  • Cook the pasta until only firm-tender; drain (it does not have to measure exactly 4 cups cooked, careful not to overcook the pasta as it will cook more in the oven) drain and transfer to a bowl, toss with a couple tablespoons oil to prevent sticking; set aside.
  • In a skillet, cook ground beef, onion, jalapenos (if using) mushrooms and minced garlic until meat is brown and cooked stir in 1/2 cup Parmesan cheese, tomato sauce salt and pepper, stir until heated through (you can the sauce for up to 45 minutes on low heat).
  • Spread 1/2 meat sauce on bottom of pan.
  • Spread 1/2 noodles on top of sauce.
  • Top noodles with 1 cup mozza cheese.
  • Mix 1 cup cottage cheese with 1/2 cup sour cream and 1/2 cup Parmesan cheese.
  • Spread over mozzeralla cheese.
  • Top with remaining tomato sauce, noodles,and remaining mozza cheese.
  • Sprinkle with remaining 1/2 cup Parmesan cheese.
  • Bake, covered for 20 mins, uncover casserole (at this point you can sprinkle with grated mozzeralla or cheddar cheese if desired).
  • Return to oven to bake for another 10-15 mins, or until bubbly.

2 tablespoons oil (I'm using olive oil)
2 pounds ground meat of your choice, such as beef, pork, turkey, chicken, lamb (I'm using beef)
1 onion, diced (I'm using yellow onion)
2 cloves garlic, minced
1/4 cup tomato paste
3/4 cup liquid of your choice, such as beef stock, chicken stock, water or wine (I'm using red wine)
One 28-ounce can tomato product (I'm using crushed tomatoes)
2 tablespoons oregano (if you have it)
Salt and pepper
1 pound dry pasta (I'm using rigatoni)
3 tablespoons grated hard cheese (I'm using Parmesan)

Steps:

  • Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
  • About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, brown the beef until no longer pink; drain off grease. Add spaghetti sauce, mushrooms, and tomatoes to beef and simmer for 10 minutes or until warmed through.

Easy Baked Penne - this easy pasta casserole is FULL of cheese! It's accidentally vegetarian and no one will know it's semi-homemade!

1 12-16 ounce box penne pasta
1 jar (24 ounce pasta sauce (and brand/flavor you like))
8 ounces cottage cheese (low fat is fine)
8 ounces sour cream (low fat is fine)
5 cloves garlic (pressed)
4 cups shredded mozzarella (divided)

Steps:

  • Preheat oven to 375°F.
  • Cook pasta according to package directions then drain well.
  • In a bowl or in the pasta pan, stir together pasta sauce, cottage cheese, sour cream, and garlic. Stir in pasta, then stir in 2 cups of shredded cheese.
  • Spread pasta in a 9x13" baking dish. Sprinkle the remaining 2 cups cheese on top.
  • Bake for 15-25 minutes or until the pasta is hot all the way through and cheese is melted. Serve hot. Store in an airtight container for up to 3 days.

2 pounds of ground beef
1 large onion, chopped
1/2 green bell pepper, chopped
3 cans of diced tomatoes
2 tsp. chili powder
1/2 tsp. sugar
2 cups uncooked elbow macaroni
1 cup mozzarella cheese, shredded
salt and pepper, to taste

Steps:

  • Saute bell pepper and onions in a little oil, then add ground beef. Cook until no longer pink and drain. Add tomatoes, chili powder, sugar, and salt and pepper. Bring to a boil, then reduce heat and simmer for 3-5 minutes. Stir in the macaroni noodles and cover, simmering until pasta is tender. Sprinkle with mozzarella cheese before serving. Enjoy!

3 to 4 Tbsp butter
1 medium onion, chopped
1 c celery, chopped fine
1 lb ground beef
1 can(s) tomato sauce
salt and pepper to taste

Steps:

  • 1. Cook macaroni according to package directions; drain.
  • 2. Place butter in a large skillet. Add onion and celery and cook slightly (5 minutes--do not brown) over medium-low heat. Add ground beef and fry until browned. Season with salt and pepper to taste. Stir in tomato sauce and simmer, covered, until heated through.

8 oz Pasta ((penne or similar) )
2 tbsp Olive oil
½ Onion (finely chopped)
1 Garlic clove (finely chopped)
15 oz Crushed tomatoes (canned)
½ cup Tomato paste
2 tbsp Mustard paste
2 tbsp Ketchup
1 tbsp Oregano (dried )
1 tsp Salt
1 tsp Pepper
1 cup Chicken broth
1 cup Water (or broth)
2 cup Cheese (grated - cheddar, )
¼ cup Parmesan
½ cup Mozarella (grated)
2 tbsp Parsley (finely chopped )

Steps:

  • In a saute pan, over medium heat, add the oil and saute onions until translucent. Pro tip - For making this casserole, use a large skillet that will accommodate the finished dish with a fitted lid.
  • Then, add the ground beef and saute until the meat is no longer pink making sure to break the meat into smaller pieces. Next, add the garlic, followed by the canned crushed tomatoes and tomato paste. Combine well. Pro tip - Browning adds a nice caramelization and flavor but do not overcook as it will dry the meat making it chewy.
  • Next, add the mustard, ketchup, dried oregano, salt, and pepper. Followed by the chicken broth and water. Bring to a boil. Pro tip - This may look like a lot of liquid but it will be absorbed by the dry uncooked pasta.
  • Add the dry uncooked pasta and combine well. Make sure the pasta is all tucked under the liquid so it cooks evenly. Bring to a boil.
  • Cover the pot and reduce heat to medium-low. Cook for 13 to 15 minutes or until the pasta is almost al dante. Stirring in between as necessary. Pro tip - We want the pasta slightly undercooked at this point because it will continue to cook further with the cheese.
  • Open the pan, add the parsley. Stir well. Sprinkle the three different cheesees on top of the pasta. Pro tip - Make sure the pasta is moist, not dry. If necessary add a few tablespoons of water over the pasta and combine well.
  • Cover again and cook on low until the cheese has melted about 5 minutes. Enjoy!

2 tablespoons olive oil, optional
1 pound lean ground beef (I used 93% lean)
1 medium sweet Vidalia onion, diced small
1 medium/large red bell pepper, diced small
3 to 5 cloves garlic, finely minced or pressed
1 teaspoon ground oregano
1 teaspoon salt
1 teaspoon freshly ground black pepper
one 26-ounce jar marinara or pasta sauce
3 cups shredded mozzarella cheese, divided
fresh basil or parsley, optional for garnishing

Steps:

  • Preheat oven to 375F and spray a 9×13-inch casserole dish with cooking spray; set aside.
  • Cook pasta according to package directions and drain.
  • While the pasta is cooking, to a large Dutch oven, optionally add the olive oil (my beef was very lean and the oil was necessary), beef, onion, red pepper, and cook over medium-high heat until beef is cooked through and vegetables have softened; stir frequently and crumble the beef while it cooks; do not drain.
  • Add the garlic, oregano, salt, pepper, and stir to combine. Cook for about 1 minute, or until garlic is fragrant.
  • Add the cooked pasta to the beef mixture, add the marinara, and stir to combine and coat evenly.
  • Add 1 1/2 cups cheese and stir to combine until the cheese has melted.

1 14 1/2 oz can petite diced tomatoes
1 10 oz can diced tomatoes and green chilies (I used Rotel)
1 6 oz can tomato paste
1 1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon dried Italian seasoning
1 bag uncooked medium egg noodles
5-6 green onions (chopped)
1 8 oz sour cream
1 3 oz cream cheese, softened
1 cup shredded cheddar cheese
1 cup shredded Parmesan cheese
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F.
  • In a large skillet, cook ground beef over medium heat. Break the meat up in to crumbles and cook until browned.
  • Stir in petite diced tomatoes, tomatoes with green chilies, tomato paste, salt, pepper and Italian seasoning.
  • Bring to a boil, reduce heat and simmer for 5 minutes.
  • Take off heat.
  • Cook egg noodles according to package, drain.
  • Mix together cooked noodles, green onions, sour cream and cream cheese.
  • Lightly grease 13x9 baking dish with non stick cooking spray. Place egg noodle mixture in baking dish.
  • Top with beef mixture.
  • Top with cheddar cheese, Parmesan cheese, then mozzarella cheese.
  • Cover and back for 30 minutes. Uncover and bake 5 -10 more minutes.
  • Let stand 10 minutes before serving.

  • Prep Some Mix-Ins. While the water boils and your pasta cooks, use that time to prep whatever you want to bake with the pasta and cheese sauce. Around 3 cups of mix-ins per one pound of pasta is a good rule of thumb, but what those 3 cups consist of is totally up to you.
  • Make a Cheese Sauce. Make note of whatever weight of pasta you cooked, and then use an equal weight of cheese and one and a half of that weight in fluid ounces of half and half to make your cheese sauce.
  • Toss it All Together and Bake. Once your pasta, your mix-ins, and your sauce are all ready to go, toss them all together in an ovenproof casserole dish or skillet, cover it with foil, and bake it in your 325°F oven until it's just beginning to bubble, 15 to 20 minutes.
  • Add a Little More Cheese on Top. Remember how you set aside 1/4 of the shredded cheese? Now's the time to add it to the top of your hot casserole. It can be the same kind of cheese you used for the sauce, or it can be a different kind.
  • And Finally, Broil the Top. Turn your broiler on and pop your freshly cheese-topped casserole underneath its flame. Stay close by! (Let's just say I have good reasons for never walking away from something that's in the broiler.)
