Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

½ cup panko breadcrumbs
¼ cup + 2 tablespoons finely chopped scallions
3 tablespoons chopped fresh flat-leaf parsley
½ cup grated Parmesan cheese
¼ cup salsa
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
½ teaspoon pepper
1 egg, lightly beaten
¾ cup pesto, divided
1 ½ pounds lean ground beef
¼ cup ketchup

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Grease a 9x5-inch loaf pan, or line a baking dish with parchment paper.
  • In a large bowl, combine the breadcrumbs, scallions, parsley, Parmesan cheese, salsa, Worcestershire sauce, garlic powder, onion powder, sea salt, black pepper, egg, ½ cup of pesto, and the ground beef. Mix well but do not overmix.
  • Add the meat mixture to the greased loaf pan, or form the meat into a tight loaf on the lined baking dish.
  • Mix together the ketchup with the remaining ¼ cup pesto. Spread the pesto-ketchup mixture on top of the loaf.
  • Bake at 350 degrees for 45 minutes or until a thermometer reads 160 degrees Fahrenheit. Let stand in pan for 10 minutes before slicing.
  • Serve and enjoy.

Ina Garten's meatloaf with a twist has a secret ingredient that makes this dish especially tasty.

1 tablespoon olive oil
12-ounce bag frozen chopped onions (3 cups)
2 teaspoons kosher salt
1 teaspoon dried thyme
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck
2 cups pork rinds
2 large eggs
1/2 cup ketchup

Steps:

  • Preheat the oven to 325 degrees Fahrenheit.
  • Heat 1 tablespoon of olive oil in a medium sauté pan, then add the chopped onions, 1 teaspoon of dried thyme, 2 teaspoons of salt, and 1 teaspoon of freshly ground black pepper and cook over medium-low heat, stirring occasionally, for eight to ten minutes, until the onions are translucent but not brown.
  • Remove from the heat, add 3 tablespoons of Worcestershire sauce, 1/3 cup of chicken stock, and 1 tablespoon of tomato paste, and allow to cool slightly while you prepare the other ingredients.
  • Place 2 cups of pork rinds in a plastic bag, then crush to the coarseness of breadcrumbs. Measure ½ cup of the crushed pork rinds for the recipe.
  • Beat 2 eggs with a fork in a small bowl.
  • In a large bowl, combine 2 1/2 pounds of ground chuck, the onion mixture, crushed pork rinds, and eggs, and mix lightly with your hands. Don't overwork the meat.
  • Line a rimmed baking sheet with parchment paper or aluminum foil (if you use foil, spray with non-stick spray).
  • Shape the mixture into a rectangular loaf, measuring about the height and width of a loaf of bread (4 or 5 inches wide and about 3 inches high) on sheet pan.
  • Spread the ketchup evenly on top of meatloaf.
  • Bake for 1 hour to an hour and 15 minutes, until the internal temperature is 160 degrees Fahrenheit and the meatloaf is cooked through.
  • Rest ten minutes before slicing and serving.

This adds a upbeat taste to a traditional dinner. Goes great with mashed potatoes and green beans. Nice for a weekend dinner! Great tip: Freeze or refrigerate leftovers to make meat loaf sandwiches for lunch or a snack. They are great!

1 lb ground round (may substitute with hamburger, ground chuck, ground sirloin)
barbecue sauce (a bottle)
1 large onion
1 large green pepper
1/2 cup breadcrumbs
1 egg (may use 2 egg whites instead of whole egg)
1 teaspoon salt
1 teaspoon pepper
1 (1 1/4 ounce) packet French onion soup mix

Steps:

  • Start out with a large mixing bowl.
  • Preheat oven to 350°F.
  • Chop 1/2 onion and place in mixing bowl.
  • Chop 1/2 green pepper and place in mixing bowl.
  • Add ground round, bread crumbs, salt, pepper, French Onion Soup mix, egg into the mixing bowl.
  • Mix well.
  • Add 1/2 bottle of barbecue sauce to the mixture and mix well.
  • Form the mixture into a square or loaf. (I usually form it to the pan I am using).
  • Slice the remaining onion and green peppers and arrange on top of loaf.
  • Pour 1/4 of the remaining barbecue sauce on the top of the loaf. (I usually make a letter "M" with the sauce--it makes it look pretty).
  • Place in oven.
  • Take it out of oven in 1/2 hour and pour the remainder of the barbecue sauce on top.
  • Let cook for another 1/2 hour.
  • Check for doneness.
  • I like mine well done.
  • Adjust cooking time to your liking.
  • Serve immediately.
  • Great with mashed potatoes and green beans.

1 1/2 lbs ground beef
1 cup spicy tomato juice
3/4 cup uncooked oatmeal
1 egg
1/2 cup onion
1/2 teaspoon salt
1/4 black pepper
1/4 lb sliced deli ham
1/4 lb sliced swiss cheese

Steps:

  • Pre-heat oven to 350 degrees.
  • Mix together all ingredients listed under"main loaf".
  • Press out into a rectangle shape that is no wider than the loaf pan you will be using.
  • Do this on a piece of wax paper.
  • Lay ham slices and then swiss cheese on top of ground beef mixture.
  • Roll meat loaf like a jelly roll (the ham and cheese will look like a swirl in center of the loaf- thus the name"with a twist").
  • Place meat loaf in bread pan and cook for 1 hour or 165 degrees internal temperature.
  • Let stand 10 minutes, slice and serve.
