MEXICAN TACO MEATLOAF
My Mexican grandmother would use leftover corn tortilla chips in our meatloaf and everyone loved it! They all wanted seconds along with the recipe. A delicious Mexican-American comfort food.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
- Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
- Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
- Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

OVEN NACHOS
This is my favorite way to make nachos--and my kids love it every time. I actually prefer to use recipe #2642 or recipe #76616 instead of the package taco seasoning.

Steps:
- In a large skillet cook the ground beef with onions; cook stirring until meat is no longer pink. Drain all fat well. Continue to cook until the meat is well browned, about 4-5 minutes longer. Pour contents of taco seasoning pack into meat and add water as directed on the package. Continue to cook according to package directions.
- Add in the refried beans and salsa. Cook, stirring occasionally, until heated through.
- Add in 3/4 cup grated cheddar cheese; stir until melted.
- Place the tortilla chips on a large serving platter.
- Top with ground beef mixture, then sprinkle the top of the HOT ground beef mixture with about 1-1/2 cups (or to taste) grated cheddar cheese.
- Top with sour cream, green onions, chopped tomatoes, shredded lettuce, and sliced black olives.
- Serve hot or warm.

MEATLOAF NACHOS
I had a last bit of leftover meatloaf and wanted something that was quick and easy. I also wanted to use up some salsa, so this is was what was created. If desired, top with your favorite nacho toppings. If you try this I hope you enjoy it. Submitted to "ZAAR" on November 1st, 2007.

Steps:
- On a dinner size plate, place tortilla chips, covering surface of plate.
- In a medium sized microwave proof bowl, add meatloaf with salsa, stirring well.
- Place meatloaf/salsa mixture in microwave, heat for 2 minutes, stirring occasionally.
- After heating mixture, spoon over chips and sprinkle with cheese.
- Eat and enjoy !
MEATLOAF TACOS RECIPE
Steps:
- In a large skillet, heat the olive oil over medium heat. Add the onion.
- Sauté and stir until tender, about 5 to 6 minutes.
- Stir in the refried beans and cook for 3 minutes.
- Add the crumbled meatloaf, chili powder, and tomato sauce; simmer for 10 minutes.
- Heat the taco shells as directed on the package until crisp and hot.
- Let the diners make tacos with the hot meatloaf mixture, cheese, lettuce, salsa, and sour cream. Serve immediately.

LEFTOVER MEATLOAF PARMESAN
I have meatloafs in the freezer. Nothing goes to waste. I have to either slice up the leftover meatloaf and place it back in the freezer as a meal or come up with something do with it. Here is one idea....I'm sure their are 100's

Steps:
- Place your slices of meatloaf flat on the bottom of a 9 X 13 cooking dish (smaller if you have less pieces), touching but not overlapping.
- Mix together tomato sauce, garlic, seasoning and pour over the meatloaf.
- Place a slice of cheese over each meatloaf slice (you can use shredded cheese if you want).
- Warm in a 350F over until the cheese is browned and the sauce is bubbly.
