PARMESAN PINWHEELS
Fresh herbs and Parmesan cheese are rolled up in puff pastry, sliced and baked until golden. This easy technique makes appetizers at a moment's noticeand sweet variations make this foolproof recipe into chocolate or cinnamon treats as well.

Steps:
- Heat the oven to 375°F.
- Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14 x 11-inch rectangle. Sprinkle with the cheese and herbs. Starting at a short side, roll up like a jelly roll. Wrap the pastry roll with plastic wrap and freeze for 45 minutes or until firm.
- Cut the pastry roll into 75 (1/8-inch) slices. Place the slices, cut-side down, onto baking sheets.
- Bake for 10 minutes or until the pastries are golden brown. Remove the pastries from the baking sheets and let cool on wire racks for 10 minutes.
- Chocolate Pinwheels: Substitute 4 ounces semi-sweet chocolate, melted, for the cheese and herbs.
- Cinnamon-Sugar Pinwheels: Substitute a mixture of 1/2 cup sugar and 2 teaspoons ground cinnamon for the cheese and herbs.
PROSCIUTTO AND PARMESAN PINWHEELS

- Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with nonstick oil spray.
- Roll the thawed pastry out onto a flat surface. Spread Dijon mustard to taste on the pastry sheets. Cover pastry with a layer of prosciutto, then cheese. Roll the sheets, beginning at the long side. Cut into 1 inch thick sections. Arrange the sections on the prepared baking sheet.
- Bake 10 to 12 minutes.

PROSCIUTTO COTTO PINWHEELS
Pinwheels are one of my favorite appetizers. These prosciutto pinwheels pack so much classic Italian flavor into one little bite!

- In a medium bowl, mix together the ricotta, rosemary, parmesan and olive oil with a rubber spatula. Set aside.
- Lay two pieces of ham on the board in front of you lengthwise, over lapping by half and patching holes where needed. Spread about 2 tablespoons of the cheese mixture evenly over the ham. Sprinkle the side closest to you with 2 tablespoons chopped giardiniera and press gently into the cheese. Roll the ham into a pinwheel starting with the edge closest to you and rolling away from you. Wrap each roll tightly in plastic wrap and store in the refrigerator for at least 4 hours to firm up. To serve, unwrap the rolls and using a sharp knife, slice into 3/4 inch pieces.

- Preheat oven to 375°F
- Do not separate dough into triangles. Gently press or roll seams to seal, but do not flatten.
- In small bowl, mix cream cheese, parmesan cheese, and rosemary.
- Spread mixture over dough.
- Roll up dough from the long side. Slice into 1/2 inch rolls.
- Please pinwheels flat onto cookie sheet or baking stone.
- Bake 12 - 15 minutes or until golden brown.
- Serve warm.

- In a small skillet set over medium heat, heat the olive oil. Add the mushrooms and rosemary; cook until mushrooms are soft, about 2 minutes. Add the cooking sherry, a pinch of salt, and a few shakes of pepper. Cook, stirring frequently until the liquid had cooked off, about 5 minutes. Let cool.
- Unroll crescent dough onto a baking sheet, pinching the seams together to seal them. Spread the mushrooms over the dough to within 1/4 inch of the long edges. - Working with one tube at a time, roll out dough and press seams together to form a sheet. Sprinkle with 1/2 of the Parmesan and 1/2 of the rosemary. Feel free use more cheese if you want it extra cheesy.
- Roll up the dough lengthwise and slice into approximately 1" pieces. Repeat with the second tube of dough and remaining cheese and rosemary.
- Remove the skillet from the oven and brush butter around the bottom and sides of the skillet. Arrange dough slices in the skillet (they will fit snugly). Melt the remaining 2 tablespoons of butter in the microwave and brush over the top of the rolls. Sprinkle with extra cheese, rosemary and a pinch of kosher salt if desired.
