1 tablespoon Worcestershire sauce
1 clove garlic, chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine beef, bread crumbs, Parmesan cheese, eggs, Worcestershire sauce, garlic, and Italian seasoning in a large bowl. Season with salt and black pepper. Transfer mixture to a 9x5-inch loaf pan.
  • Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 red pepper, seeded, small diced
1 onion, diced
2 teaspoons garlic (about 3 cloves)
1 lb ground beef
2 eggs
3/4 cup breadcrumbs
1 cup parmesan cheese, grated
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
2 tablespoons basil leaves, chopped
1 tablespoon fresh parsley leaves, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 cup marinara sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1 tablespoon of the olive oil in a medium saute pan over medium heat and add the peppers, onions and garlic. Saute until just soft, remove to a plate and cool.
  • When the peppers and onions are cool, combine all of the remaining ingredients together except for the marinara. Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
  • Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

1 large egg, beaten
1 teaspoon dried minced onion
3/4 teaspoon salt

Steps:

  • In large bowl, combine the crumbs, egg, onion, salt and oregano; crumble the meat over the top. Mix gently. Stir in 3/4 cup tomato sauce; set aside. Cut two pieces of waxed paper 15-in. long. 50g fresh white breadcrumbs
4 tbsp finely grated parmesan
500g pack lean minced beef
1 onion , finely chopped
100g pancetta , chopped
1 garlic clove , chopped
1 egg , beaten
1 tsp tomato purée

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line the long sides and base of a 2lb loaf tin with double thickness baking parchment. Mix 2 tbsp each of the breadcrumbs and Parmesan in a small bowl and set aside. Tip all the remaining ingredients into a large bowl with a good shake of salt and pepper and mix well - hands are the best for this job.
  • Press the mixture into the loaf tin and sprinkle with the reserved crumb mix. Bake for 40-45 mins until the top is golden and crunchy. If the top does not colour in the oven, pop the tin under the grill and brown the top for 5 mins. Cool in the tin for 5 mins, then lift out using the parchment and put on a board. Slice and serve with potatoes and green beans.

1 cup grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F.
  • For the meatloaf: Pour the milk over the bread and allow it to soak in for several minutes. Place the ground beef, milk-soaked bread, Parmesan, parsley, Italian seasoning, salt, seasoned salt and some pepper in a large mixing bowl. Add the eggs. With clean hands, mix the ingredients until well combined.
  • Form the mixture into a loaf shape on a foil-lined broiler pan, which will allow the fat from the meat to drain. Lay the pancetta slices over the top, tucking them underneath the meatloaf to give the meatloaf some support.
  • For the tomato sauce: Put the diced tomatoes into a bowl. Add the brown sugar, dry mustard and cayenne pepper and splash in the Worcestershire sauce. Stir the mixture until well combined. Pour one-third of the sauce over the top of the meatloaf.
  • Bake for 45 minutes, and then pour another third of the remaining tomato sauce over the meatloaf. Bake until no longer pink in the middle, for an additional 20 to 25 minutes. Allow to sit 10 minutes before serving.
  • Serve with the remaining tomato sauce on the side as a dipping sauce.

500g pack minced pork
1 onion, roughly chopped
1 garlic clove, roughly chopped
big handful of parsley
1 tbsp fresh chopped oregano or 1 tsp dried
4 tbsp freshly grated parmesan
1 egg, beaten
8 slices prosciutto

Steps:

  • Heat the oven to 190C/fan 170C/gas 5. Put bread in processor and blitz to make crumbs, then tip into a bowl with the pork.
  • Tip the onion, garlic and herbs into the food processor and process until finely chopped. Add to the bowl with the parmesan and egg. Finely chop 2 slices of the prosciutto and add to the mix with some salt and pepper. Mix well with a fork or your hands.
  • Use the rest of the prosciutto to line a 1.5 litre loaf tin. Spoon in the meatloaf mix and press down well. Flip the overhanging prosciutto over the top, then put the loaf tin into a roasting tray.
  • Pour hot water from the kettle into the roasting tray to come halfway up the loaf tin and bake for 1 hr until loaf shrinks from the sides of tin.
  • Cool in the tin for 10 mins, then drain off any excess liquid and turn out onto a board. Cut into thick slices and serve warm or cold with salad.

  • Before mixing, top with Worcestershire sauce, lightly beaten egg, dry bread crumbs, Parmesan cheese, 1/2 cup shredded mozzarella and 1/4 cup marinara sauce.
  • Blend until just mixed, either using your fingers to toss or putting the stand mixer on low. Too much mixing will make your meatloaf tough, so only mix until barely blended.
  • Transfer meat mixture to cooking vessel of your choice, forming into a loaf as you go. You can make it free-form on a rimmed baking sheet, but I prefer using a meatloaf or bread loaf pan. Top with 1/2 cup marinara sauce.
  • Bake, uncovered, for 40 minutes. Remove and top with remaining shredded mozzarella cheese and another shake of Italian seasoning (if desired).
  • Cook for an additional 5 minutes. Allow to sit for 5-10 minutes before cutting and serving. Serve with additional marinara sauce, if desired.

2 lbs 85/15 ground beef
2 fresh garlic cloves, minced
.7 oz packet of Italian Dressing Mix (I use Good Seasonings brand)
1 cup panko bread crumbs
1/3 cup milk
2 eggs, lightly beaten
1/2 cup fresh grated parmesan cheese
24 oz jarred marinara
1 cup shredded mozzarella

Steps:

  • Preheat the oven to 400°
  • In a large bowl, with clean hands, lightly mix together the 2 lbs ground beef, 2 minced garlic cloves, .7 oz packet of Italian Dressing Mix, 1 cup panko bread crumbs, 1/3 cup milk, 2 lightly beaten eggs, 1/2 cup parmesan cheese. Do not overmix the meatloaf mixture or it will have a tough texture.
  • In a 9x13 glass casserole pan pour about 1/2 cup marinara sauce onto the bottom of the pan. Dump the Italian meatloaf mixture out into the pan and shape into a meatloaf, about 2 1/2 inch tall, 6 inches wide and about 11 inches long (roughly)
  • Pour the rest of the jarred marinara over the meatloaf. Cover the pan with foil and bake for 1 hour 15 minutes.
  • Remove the foil and sprinkle with mozzarella cheese, bake uncovered for another 10 minutes. The center of the meatloaf should read 165 degrees with an instant thermometer.
  • Let cool for about 5 minutes and then slice and serve!

2 cans Diced Tomatoes (drained)

  • Preheat the oven to 350 degrees.Place the ground beef, milk-soaked bread, Parmesan, eggs, parsley, Italian seasoning, salt, and pepper into a large bowl and smush/knead it around with your hands until everything is completely mixed.Meanwhile, make the sauce: In a separate bowl, combine the diced tomatoes, brown sugar, mustard, cayenne, and Worcestershire and stir it together. Place the meat mixture on a drip pan (a pan with a slotted tray on top) and form it into a big honkin' loaf shape. This is an old Campbell's Soup Recipe, but they quit making the Zesty Italian Tomato soup it called for. I found that jarred Spaghetti sauce was a good substitute. My entire family loves meatloaf, but thinks this is the tastiest, so far! I used to buy the Italian sausage in casings, remove the casings and crumble it up, but now you can buy it bulk. It calls for a sauce, but I have never made it - we didn't think it needed the addition.

1 cup milk
1 cup bread cubes (3 or 4 slices Italian country bread, crusts removed)
1/2 cup finely grated pecorino Romano
2 tablespoons minced garlic
1 onion, cut into small dice
2 eggs
2 tablespoons dried oregano
1/2 cup chopped flatleaf parsley
Fine sea salt and freshly ground black pepper
Olive oil, for greasing
1 cup canned plum tomatoes, crushed
2 tablespoons tomato paste
1 medium carrot, diced
1 stalk celery, diced

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Put the beef, veal, and pork into a bowl and kneed them together.
  • 3. Pour the milk into a bowl and soak the bread in it, squeezing it into a paste. Add the soaked bread to the bowl with the meat and work them together as though you were kneading dough. Add the cheese, garlic, onion, eggs, oregano, and parsley. Season with salt and pepper and knead again until well incorporated.
  • 4. Oil a large roasting pan with the olive oil. Form the meat mixture into a large loaf in the center of a roasting pan.
  • 5. Stir in the plum tomatoes, tomato paste, and 1 cup water together in a bowl and pour the mixture evenly over the meatloaf. Scatter the carrots and celery in the pan around the loaf.
  • 6. Put the pan in the oven and bake until a skewer inserted in the center of the loaf comes out warm, about 1 1/2 hours. If the loaf begins to look dry while cooking, tent it with aluminum foil. Remove the pan from the oven and let it cool slightly.
  • 7. Slice the meatloaf into servings, put 1 serving on each plate and spoon pan gravy and vegetables over and around the meatloaf.

  • Lay some raw bacon strips over the loaf before baking. (This was one way my mother made her meatloaf extra special.)

  • For the meatloaf: Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Heat the olive oil in a medium skillet over medium heat. Add the garlic, onion, bell pepper and crushed red pepper if using and saute until the vegetables are tender, about 5 minutes. Set aside to cool.
  • In a large bowl, combine the beef, Parmesan, breadcrumbs, parsley, Worcestershire sauce, garlic salt, kosher salt, pepper, basil, eggs, 1/2 cup of the marinara and the cooled vegetables. Use your hands to mix everything together. Transfer the mixture to the center of the prepared baking sheet and form into a loaf. Coat the meat loaf with the remaining 1/2 cup marinara.
  • Bake until the meat loaf is firm, 45 minutes to 1 hour (depending on the shape of your loaf). Let set for about 5 minutes before slicing.
  • For the sandwiches: Butter the rolls and then sprinkle with garlic salt. Transfer to a baking sheet and bake until light golden and toasted, about 5 minutes.
  • Add a slice of meatloaf to each toasted roll and top with some of the marinara and 3 slices mozzarella. Return to the oven and bake until the cheese is melted, 8 to 10 minutes.

1 tablespoon Montreal Steak Seasoning
1 tablespoon garlic, minced
1/4 cup minced onions
2 eggs
3/4 cup milk
3/4 cup old fashioned rolled oats (regular or gluten free oats)
1 tablespoon Worcestershire sauce
2 tablespoon ketchup
1 15-ounce can tomato soup, divided

Steps:

  • Preheat oven to 350F, rack in the middle. Line a rimmed baking sheet with parchment paper and lightly spray. In a large bowl add the oats and milk and gently mix. Set aside for 15 minutes to allow the oats to soak in the milk.
  • After 15 minutes strain out the milk into a separate container but do not discard. *If there is no milk left, it's OK. Some brands of oats suck up all the milk while others do not.
  • In the bowl the oats are in, add the ground beef, eggs, Worcestershire sauce, steak seasoning, garlic, onions, ketchup, and 3 tablespoon of tomato soup.
  • Just combine but try not to overwork it as it will get tough. If the mixture is too wet, add in 1-2 more tablespoon of oats (don't worry if they aren't soaked). You want the mixture to be pretty moist but firm enough to hold a shape.
  • In the bowl gently press together.
  • Transfer the mixture to the baking sheet and using your hands, form a loaf that is about 12 inches long, 6 inches wide, and about 2 1/2 inches tall. The loaf should be smooth and have rounded edges. This will help the loaf stay together when serving.
  • Bake for 30 minutes, remove from the oven, and spread the remaining tomato soup on top of the meatloaf.
  • Continue baking for another 30 minutes.
  • Remove from the oven and allow to rest for 10-15 minutes before serving.
