Even people who don't like artichokes will enjoy slices of this delicious crusty bread. The soft interior is rich with sour cream, three kinds of cheese and other goodies.

Number Of Ingredients 14

1 loaf (20 inches) French bread, halved lengthwise
1/2 cup butter
6 garlic cloves, minced
2 tablespoons sesame seeds
1-1/2 cups sour cream
1/4 cup grated Parmesan cheese
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
2 teaspoons lemon-pepper seasoning
2 cups (8 ounces) cubed Monterey Jack cheese
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup shredded cheddar cheese
1 medium tomato, chopped
Additional parsley

Steps:

  • Carefully hollow out top and bottom of bread, leaving 1/4-in. shells; set aside. Cut removed bread into small cubes. , In a skillet, melt butter. Add the bread cubes, garlic and sesame seeds; cook and stir until butter is absorbed. Remove from the heat., In a bowl, combine sour cream, Parmesan, parsley, lemon-pepper, Monterey Jack cheese, artichokes, olives and bread mixture. Spoon into bread shells; sprinkle with cheddar cheese. Place on ungreased baking sheets. , Bake at 350° for 30 minutes or until heated through. Sprinkle with tomato and additional parsley. Refrigerate any leftovers.

1 tablespoon olive oil
1 yellow onion, halved and thinly sliced
2 tablespoons olive oil
3 carrots, shredded
1 (8 ounce) package cremini mushrooms, chopped
kosher salt and ground black pepper to taste
¼ cup drained and finely chopped artichoke hearts
2 cloves garlic, minced
½ (4 ounce) container crumbled feta cheese
1 cup dry bread crumbs, or more as needed
1 egg, beaten
¼ cup 2% milk
1 ½ teaspoons Worcestershire sauce
1 pound extra-lean ground turkey breast
3 tablespoons chopped fresh parsley
1 tablespoon chopped fresh thyme
1 pinch Italian seasoning, or to taste
1 pinch Creole seasoning (such as Tony Chachere's®), or to taste
¼ cup Italian herb-flavored tomato sauce
2 tablespoons balsamic vinegar, or more to taste
2 tablespoons honey

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Cook and stir onion in hot oil until onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low and continue cooking and stirring until the onion is crisp and dark brown, 15 to 20 minutes more. Remove from heat and set aside to cool; chop into small pieces and place into a large bowl.
  • Heat remaining 2 tablespoons olive oil in the same skillet over medium-high heat. Add carrots and mushrooms, season with kosher salt and ground black pepper to taste, and cook and stir until carrots start to soften, about 7 minutes. Stir in garlic and cook for another 3 minutes; remove from heat, add artichoke hearts, and set aside and let cool. Transfer vegetables to the bowl with onion.
  • Mix in feta cheese, bread crumbs, egg, milk, Worcestershire sauce, turkey, parsley, and thyme; season with Italian seasoning and Creole seasoning. Adjust salt and pepper if desired. Thoroughly mix turkey mixture with hands and form into a meatloaf; place loaf on a baking sheet.
  • Bake meatloaf in preheated oven until no longer pink inside and the juices run clear, 40 to 45 minutes. Combine tomato sauce, balsamic vinegar, and honey to make the glaze; remove meatloaf from the oven, coat with glaze, and bake until glaze has cooked onto the loaf, 5 to 10 more minutes.

1 (10 ounce) package frozen chopped spinach, thawed and drained well
1 ½ cups Italian seasoned bread crumbs
2 cups shredded mozzarella cheese, divided
2 eggs, lightly beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
  • In a bowl, mix the beef, spinach, bread crumbs, 1 1/2 cups cheese, and eggs. Transfer to the prepared loaf pan.
  • Bake 1 hour in the preheated oven, to a minimum internal temperature of 160 degrees F (70 degrees C). Top with remaining cheese to serve.

2 to 3 canned artichoke hearts, packaged in water, thinly sliced
2 small dill pickles, thinly sliced lengthwise
1/4 small red onion, thinly sliced into rings

Steps:

  • Place bread on work surface. Spread each slice with 1 tablespoon tapenade. Top one slice of bread with meatloaf, artichokes, pickles, and onions. Place remaining slice of bread tapenade-side down. Using a serrated knife, slice in half, and serve.
